The diploma thesis identifies the attitude of the Czech public on the issue of fresh breads and pastries prepared from frozen semi-finished product based on consumer research. It is focused on the supply side, specifically on analysis of sales of fresh bread and bakery products prepared from frozen semi-finished products within the selected retail units. Further to the survey among Czech producers of bread, and also monitored supply of bread from frozen semi-finished products in selected retail chains.

El presente trabajo de investigación, aborda las tendencias mundiales hacia una alimentación saludable, en conjunción con los hábitos de consumo de los peruanos, combinando el placer y la salud. Nuestra propuesta es brindar una solución como una pastelería de la sociedad y en la industria alimentaria, como es la pastelería saludable. Existiendo una tendencia hacia los hábitos de consumo de productos saludables por parte de la población con creciente interés en alimentación consciente, demanda de nuevos productos que no contengan insumos nocivos para la salud, entre los que se encuentran personas que padecen enfermedades relacionadas al sobrepeso, diabetes, hipertensión, entre otras que hacen necesario contar con alternativas que ofrezcan productos bajos en azúcar, grasas trans, gluten, lactosas, otros. Se realizó una encuesta al target identificado como, personas que pertenecen al nivel socioeconómico A, B y C+ que residen en los distritos tradicionales de la ciudad de Arequipa, cuya edad fluctúa entre 20 y 60 años, que padecen de alguna enfermedad tales como diabetes, hipertensión, sobrepeso y aquellos que son saludables, pero cuyo estilo de vida considera la alimentación como un elemento importante, para mantener la salud y un buen estado físico. El resultado de esta encuesta mostró que el 97 % se encuentra interesado en consumir productos de características saludables. Dentro del análisis financiero, se tiene una estructura de financiamiento, donde el 44% de capital es de aporte propio y el 56% será financiado. En cuanto a los indicadores se ha obtenido un valor actual neto (VANE) de S/ 189,359 calculado con una tasa de descuento de 14.75% (WACC) y una Tasa de retorno (TIRE) de 51.94% con un período de recuperación de inversión (PAY BACK) de tres años, lo cual hace viable financieramente el plan de negocios. / This research work addresses global trends towards healthy eating, in conjunction with Peruvians' consumption habits, combining pleasure and health. Our proposal is to provide a solution to society and the food industry, through a healthy bakery shop. There is a trend of habits of consumption of healthy products by the population with increasing interest in mindful eating, demand for new products that do not contain harmful ingredients to health, among which are people with diseases related to overweight, diabetes, hypertension among others, which make it necessary to have alternatives that offer sugar-free products, also free or low in: trans fats, gluten, lactose, among others. A target survey was conducted identified as people belonging to socioeconomic level A, B and C+ residing in the traditional districts of the city of Arequipa, whose age fluctuates between 20 and 60 years, who suffer from some disease such as diabetes, hypertension, overweight and those who are healthy, but whose lifestyle considers food as an important element, to maintain health and fitness. The result of this survey showed that 97% are interested in consuming products from a healthy food. Within the financial analysis there is a financing structure where 44% of capital is its own contribution and 56% will be financed. In terms of indicators, a net present value (VANE) of S/ 189,359 has been obtained calculated at a discount rate of 14.75% (WACC) and a return rate (TIRE) of 51.94% with a three-year investment recovery period (PAY BACK), which makes the business plan financially viable. / Trabajo de investigación

El objetivo del presente trabajo es demostrar qué tan viable y escalable es la idea de negocio de la empresa DeliYummy, la cual fue creada con el propósito de ofrecer postres veganos saludables a los consumidores peruanos. Esta idea nació, debido a que se observó la gran necesidad que hay, actualmente, por parte de muchos consumidores que llevan una alimentación saludable y que se les dificulta encontrar postres que se adapten al estilo de alimentación que tienen. Como parte de la investigación para conocer con mayor profundidad a este público y al sector de los alimentos saludables, se descubrió que muchos tienen el pensamiento erróneo de que los postres veganos son saludables, en su totalidad. Sin embargo, es importante aclarar que, también, se identificó que gran cantidad de los postres veganos que se comercializan en Lima, son elaborados con insumos que no aportan ningún tipo de beneficio nutricional como vitaminas, minerales, fibra, entre otros. Por tal motivo, DeliYummy vio una gran oportunidad de negocio, pero, sobre todo, se detectó la gran posibilidad de poder contribuir con aquellas personas que buscan mantener su de alimentación saludable a un largo plazo sin necesidad de privarse de consumir postres exquisitos. De este modo, es que nace la idea de introducir al mercado limeño donuts veganas hechas a base de harina de legumbres como garbanzos y quinua, los cuales aportan una gran cantidad de proteína vegetal, vitaminas y minerales. Además, estarán bañadas con chocolate belga y decorada toppings saludables, los cuales podrán ser seleccionados por los propios clientes. Con esta idea deseamos aportar con este segmento de clientes que día a día está en busca de nuevas opciones para complementar y disfrutar a plenitud su estilo de alimentación. / The objective of this work is evidence how viable and scalable DeliYummy’s business idea is, which was created with the purpose of offering healthy vegan desserts to public from Lima. This idea was born because it was observed that there is currently a great need on the part of many consumers who eat a healthy diet and who find it difficult to find desserts that adapt to the style of eating they have. As part of the research to gain a deeper understanding of this target and the health food sector, it was discovered that many have the misconception that vegan desserts are healthy. However, it’s important to clarify that it was also identified that the most of vegan desserts marketed in Lima are made with ingredients that don’t provide any nutritional benefits such as vitamins, minerals, fibre, among others. For this reason, DeliYummy identified a great business opportunity, but, above all, the company detected the great possibility of being able to contribute to those people who seek to maintain their healthy eating habits in the long term without having to deprive themselves of delicious desserts. In this way, it’s how was born the idea of introducing vegan donuts to the Lima market, made from legume flour such as chickpeas and quinoa, which provide a large amount of vegetable protein, vitamins and minerals.In addition to this, our donuts will be covered with Belgian chocolate and decorated with healthy toppings, which can be selected by the customers themselves. Influence of Fenugreek gum on bread and in vitro physiological effects

Graham This thesis examined the effect of fenugreek gum, from Canadian grown fenugreek on bread quality, when substituted for wheat flour at 5 % and 10 %, and the in vitro physiological effects of these breads, based on models of acute and long - term feeding. Study I determined bread could be produced with 10 % fenugreek gum, while maintaining quality parameters of volume and texture, comparable to a control. This was accomplished through the development of a novel bread production method, using the lamination procedure for puff pastry production. The behavior of fenugreek gum and starch (wheat flour) was determined by rapid visco analysis (RVA), farinograph and dynamic rheological measurement, while scanning electron microscopy of bread found fenugreek gum could be identified within the bread matrix. Study 2 in vitro starch digestion found fenugreek gum at 5 % and 10 % reduced glucose liberated from bread, with 10 % fenugreek gum causing a reduction of over 30 %. RVA of fenugreek breads highlighted differences in viscosity between breads and wheat flour substituted with the gum. This was substantial as viscosity measurements by RVA are conducted on raw ingredients and not the food as consumed, which reflects the possible reduction in viscosity with food processing. This study also determined extruding fenugreek gum may have caused morphological changes to the gum, which may possibly contribute to attenuation of glucose liberated in vitro. Study 3 evaluated the accumulation of short chain fatty acids (SCFA) from the fermentation of three substrates: Extruded fenugreek gum, bread with 10 % extruded gum and control bread, based on fecal microbiota from three donors. SCFA profiles varied with substrates and donors, with fenugreek gum having the highest accumulation of SCFA after 12 hours. Donors were a caucuasian Canadian, a black Jamaican and a black Trinidadian who was the only donor culturally exposed to fenugreek. This Trinidadian’s SCFA profiles were consistently higher for fenugreek gum than the other donors. These studies collectively showed fenugreek gum, though viscous could be successfully incorporated into bread and have potential as a functional food and nutraceutical.

Systém HACCP pro výrobu jemného pečiva / HACCP system for the production of short pastry

The aim of this work is to assess the current state of risk analysis and of the critical points system HACCP (Hazard Analysis and Critical Control Point) in a food processing business of the PETA Bohemia limited company. On the basis of the latest findings the new optimal HACCP system, which is based on scientific data, systematically identifies specific risks and measures for their control so as to ensure food safety. A food business operator is obliged to create a critical points system by Regulation (EC) No 852/2004 of the European Parliament and of the Council of 29 April 2004 on the hygiene of foodstuffs, Article 5 ``Hazard analysis and critical control points``, paragraph 1: ``Food business operators shall put in place, implement and maintain a permanent procedure or procedures based on the HACCP principles.`` The introductory part contains a short literature retrieval on the development of management methods and on the control of food products by means of the HACCP system. These systems are generally considered as a useful tool for food business operators serving to control risks which can occur in food. They are science-based and systematic, they identify specific risks and measures for control in order to ensure food safety. They are a tool for risk assessment and setting up of control systems which do not depend on testing of the final product but focus mainly on prevention. All HACCP systems can be accomodated to changes such as progress in external adaptation of equipment, process of manufacturing or technological development. The practical part describes in detail the technological process of producing pastry products, especially short pastry. The production is applied into a small bakery of the PETA Bohemia limited company which was founded in Soběslav in 1991. On the base of interviews and provided background information it was possible to view the food business in a complex manner and to get an insight into the current , as well as the past situation of the company and its goals. The risk analysis of the technological process of short pastry production enabled to determine a critical control point, its attributes and values of critical limits, to define the system of managed state monitoring and to determine corrective measures. A manual of the HACCP elaborated in this manner fulfills all legislative requirements. By its implentation the Peta BOHEMIA company gains a risk management system of high quality leading in its final effect towards production of high quality healthy food. The system focused mainly on practical and expert knowledge of the staff connected with sensoric knowledge of final pastry products puts emphasis on encreasing their personal responsibility and understanding of the problem.
