Využití bakterií mléčného kysání s protektivními účinky ve výrobě čerstvých sýrů

The thesis is focused on lactic acid bacteria with protective effects. The work deals with the effects of protective cultures on fresh cheeses and their effect on the sensory properties of fresh cheeses. The thesis also includes a chapter on bacteriocins, their properties and effect of the action on cells. The thesis also provides informations about applications of protective cultures and their methods of uses in the production of fresh cheese. In the practical part of the thesis is observed effect of protective culture on the sensory properties. There are sensory evaluated cheese with protective cultures and cheeses without these cultures. Also is observed the acidification of cheeses, with the protective cultures and the status of their durability compared to cheese without these cultures.

The aim of this thesis is to investigate the topic of protective cultures. The work deals with the effects of protective cultures on semi-hard ripened cheeses, and their impact on a process of ageing on given types of cheese. An important part of this thesis represented in a chapter that deals with bacteriocins, their properties and effect in food processing. The effect of protective cultures on the chemical properties is observed in the practical part of the thesis. This part monitors mainly acidity of cheeses, pH, dry matter, and content of salt in cheeses. Given indicators are compared with and without addition of protective cultures on cheeses. In conclusion, this thesis observes if the protective cultures affect quality and shelf-life of semi-hard ripened cheeses.

This thesis on a Method for extending the shelf-life of dairy products in its theoretical part with milk and milk products, in special chapters separately with fresh cheese - their general process of production and possible defects. Furthermore, the theoretical part deals with the reasons for spoilage of dairy products, due to the external environment on microorganisms. These include in particular the temperature, pH and water activity. The other chapters are focused on different basic methods for extending shelf-life, which are often used in dairying. These include antimicrobial agents, lactic acid bacteria. Lactic acid bacteria is devoted to a separate subhead with protective lactic acid bacteria. The last part of the theoretical thesis is focused on hygiene, which to make cheese inseparable. The practical part of this study looked at the effects of protective cultures added to fresh cheeses. In dairy pilot plant were produced four kinds of cheese - three different types of protective cultures, one with classic cream culture. Samples were always salted and unsalted. All samples were then evaluated by chemical and microbiological analysis to determine the effect on shelf life.

Vliv protektivních mikrobiálních kultur na senzorickou kvalitu sýrů

The thesis is aimed at lactic acid bacteria with protective effects. In the theoretical part of the thesis, the selected species of protective cultures are characterised. Next, the thesis deals with the antimicrobial and antifungal activity of protective cultures. It also provides information about specific metabolites which are produced by these cultures. Emphasis is put on the effect of protective cultures on the sensory properties of cheeses. The thesis also includes a chapter on the production of semi-hard cheeses. In the practical part of the thesis, the effect of protective cultures on the sensory quality of semi-hard cheeses is observed. The sensory analysis is performed on cheeses with protective cultures and without these cultures. Differences are observed in appearance, colour, odour, texture and taste. The sensory quality of the cheeses was monitored four months. According to the results, there were no negative effects on the sensory properties of the cheeses at the end of the monitored period.

This diploma thesis deals with the psychological construct of resilience and spirituality. These are phenomena with overlaps in practice (psychotherapy, prevention), which have recently been widely researched not only in psychology. In the theoretical part we present spirituality and resilience from the point of view of psychology and we also deal with their connection in psychological research. The main goal of the empirical part is the research verification of the relationship between spirituality and resilience. We also dealt with the structure of this relationship, looking for possible negative correlations within these two phenomena. Our sample consisted of 407 respondents aged from 18 to 30 years. Resilience data were obtained on-line using the Connor-Davidson Resilience Scale method, spirituality data using the Czech method of the Prague Spirituality Questionnaire. The diploma thesis makes use of qualitative analytical methods of the Grounded Theory to explore the theme of "reflection of experience with school of boys from Diagnostic Institute for Youth". It sets a goal to understand the context of subjective meanings of adolescent boys. The result of the analysis is a description of the dynamic metamorphosis in relation to the school, using the description of internal and external factors affecting this phenomenon. Among the main discovered themes belong the role of the authority of educator and the usage of supervisory tools and the evaluation of their effectiveness by their addressee. Furthermore, the thesis devotes to description of the transformation of internal motivational dispositions of the individual (needs, interests, attitudes and values). The two main themes synthesize to the concept of transformation of the relationship to school. The thesis is a qualitative probe into the inner world of the adolescent subjects who, at the threshold of adulthood, are teetering on the edge of a risky behavior and a socially acceptable experimentation which naturally belongs to this developmental period. This work deals with finding out the opinions and experiences of children from the asylum house to addictive substances and mapping the occurrence of other risky forms of behavior. Another aim of this work was to investigate and describe the risk and protective factors involved in risk behavior. The starting point for this work is that many researches point to the occurrence of risk behaviors among children and adolescents, and to the growing number of single-parent children,often ending in shelters. The theoretical part deals with the description of the use of addictive substances and the occurrence of risk behavior in the school population, as well as explanation of terms such as risk behavior and risk and protective factors. In addition, the individual chapters in the Theory are dedicated to family, school, peers, social exclusion and asylum homes. The practical part describes the process of the survey itself. The research group consisted of three children aged between 9 and 11 in one asylum house, a case study. The research set was chosen by the method of deliberate institutional selection. Thanks to the latest achievements in diagnostics, surgery and oncology, the overall perspective of colorectal cancer has changed significantly. There are no doubts that we deal with a complex disease, requiring multidisciplinary approach and assessment. Only this approach can enable patients to survive longer and maintain acceptable quality of there lives. Taking a long view over several decades, the steep rise in incidence of this malignancy was strongly alarming. It is partly a penalty for a prolongation of life expectance, since one of the risk factors is age. Knowing the way of life and dietary customs of our ancestors, one cannot deny that the change of lifestyle including dietary habits, as well as decrease of physical activity, obesity, stress, unsuitable thermal processing of food produced in bulk, consumption of immoderate amount of red meat, limited intake of raw vegetable and fruits, excessive intake of xenobiotics, such as medication or cosmetic products, excessive alcohol consumption, particularly beer, nicotinism, environmental pollutants, etc. contribute to the increase of this cancer incidence. (in English): The topic of the thesis is Leisure time and its influence on risk behavior of adolescents. The aim of the study was to characterize the relation between manners of leisure time spending and risk behavior in adolescent age. The first part is dedicated to a theoretical basis for research. There are definitions of the terms leisure time and its specifics of adolescent, particular attention is paid to leisure activities. Following is characterized the period of adolescence. The conclusion of theoretical part deals with risk behavior, its various forms and factors that affects it. The second part is dedicated to research, which took place on the Semily district. Based on the analysis of scientific literature and researches was prepared a research tool - the questionnaire. By obtained data analyze I was able to fill the objective of the work and thus characterize the relation between manners of leisure time spending and risk behavior in adolescent age. The effect of the regular participation in leisure activities was proofed as one of the protective factors in risk behavior.
