Možnosti výroby vybraných nápojů se zvýšeným obsahem vlákniny

Diploma thesis is bearing title Options of production of selected beverages with increased fiber content. Firstly the thesis is processing characteristics of dietary fiber, it also describes individual components of fiber, its effects on human health and its potential utilization in the food industry all is included in the literary research section. Secondly the thesis continues with the experimental part which comprises possibilities of production of fermented and non-fermented beverages with higher content of fiber. Single samples of beverages were analyzed and the total and insoluble fiber content was determined followed up with calculating the soluble fiber content. Then determination of nutrients was supplemented by determinating the sugar using HPLC method. Finally, the produced beverages were subjected to sensory analysis. According to sensor analysis the overall best-rated beverages were those made of oat caramel malt and oat flakes contrary to beverages made of chia seeds and linseeds, which were evaluated as the worst. Furthermore oat-based beverages contains the highest amount of total fiber in comparison with oat beer and rice beverage in which the lowest content of fiber was determined. Complete overview of results of individual determination of fiber in beverages, nutritional parameters and sensory analyzes including ilustrations are presented in practical part of the thesis.

In this diploma thesis is elaborated the overview of organic farming in the Vysočina region, focusing primarily on the current state of the organic crop production and analysis of areas that are in operation organic crop production inputs in terms of the most problematic. The first part presents information about number of subjects, area of agricultural land and most often cultivated crops in organic farming in the region of Vysočina from registers of environmental entrepreneurs on the site of the Ministry of Agriculture. These data are then compared with data from other regions in the country. The second part is focused on the evaluation of areas that are in terms of the operation of the organic plant production the most problematic. Data for this part of the thesis were determined by questionnaire.

This thesis describes the issues related to proteins in human nutrition. It deals with their specific functions in the human body, their structure and the recommended daily intake, and the consequences of either a deficiency or an excess of protein in human nutrition. For this thesis, the work focused on various food sources and their nutritional value, any positive or negative effects on human health, and their availability to consumers. Two different sources were used to determine the preferences and consumption of proteins from either animal or vegetable origins. Information was gathered from public sources, as well as a questionnaire that was given to randomly selected individuals.

This diploma thesis deals with testing of antifungal activity of packaging materials with plant extracts. First part is a literature review, consisting of three chapters. First chapter contains basic characteristics of filamentous fungi and their metabolic products. Second chapter describes properties of packaging materials used in the food industry with a focus on active packaging. Last chapter of the literature review discusses the essential oils of plants. There are described the properties of essential oils, chemical composition and samples of plants from which the essential oils are most often obtained. The practical part of this thesis deals with the microbiological analysis of selected food stored in the packaging with active foil. This foil was enriched by spray with a mixture of plant extracts. The aim of this experimental determination was to find out if the active foil has an antifungal impact. Tested microorganism was Penicillium chrysogenum.

This dissertation deals with evaluation and testing of food packiging materials antimicrobial aktivity that contain plant extracts and help in the fight against Eschericia coli and other coliform bacteria. This dissertation is divided into several parts. The first half of the work contains a literature review publishing about packaging materials containing plant extracts. It is also focused on literature review on the coliform bacteria, especially Escherichia coli genus, describes these microorganisms and their metabolic products, the effects of metabolic products which may negatively affect human health. Another part deals with measures to prevent undesirable microorganisms. The second half of the work has been engaged in actual testing of packaging materials containing plant extracts on relevant model organisms or directly on food. Data, acquired by testing are processed, compared with the figures in the available literatures and are listed at the end of work.

Flavonoids are natural compounds widely distributed in plant kingdom. They are inseparable from human diet because they showed a protective effect against cancer, stroke and coronary heart diseases related to their antioxidant properties. Therefore, rapid and efficient extraction procedure prior to chromatographic analysis is required. The liquid extraction at elevated temperature and pressure – Pressurized fluid extraction (PFE) and Pressurized hot water extraction (PHWE), present fast, effective and environmentally friendly extraction methods for the determination of flavonoids in plant materials. PFE and PHWE followed by reversed phase high-performance liquid chromatography with UV-visible detection have been utilized for the determination of a group of flavonoids (rutin, myricetin, quercetin, luteolin, apigenin and kaempferol) in the leaves and berries of less common plants. The matrices were extracted by methanol, ethanol and water at higher temperature 40-120 oC and pressure 15 MPa during 15 minutes. The obtained results were compared with conventional Soxhlet extraction and ultrasound-assisted extraction, the same solvents were used. The most effective extraction of selected flavonoids was achieved by PHWE. PFE showed the extraction yields comparable to those of the Soxhlet extraction, and the lowest extraction power was displayed by ultrasound-assisted extraction.
