Orientador: Ricardo Velludo Gomes de Soutello / Resumo: Infecções parasitárias são extremamente importantes em equinos, devido aos prejuízos causados, e tendem a acometê-los durante toda a vida do animal. No entanto, a prevalência de helmintos pode aumentar ou diminuir, nas dependências de fatores climáticos ou susceptibilidade do hospedeiro. Diante disso, avaliou-se a dinâmica sazonal da infecção helmíntica em equinos mantidos a pasto, a influência das diferentes características climáticas das estações do ano sobre o grau de verminose, a susceptibilidade individual e por categoria e identificar as épocas e as categorias de equinos com maior incidência de helmintoses. Foi utilizado um rebanho com 104 equinos, mestiços, classificados em diferentes categorias. Foram realizadas coletas individuais de fezes a cada 28 dias para a contagem de ovos por grama de fezes (OPG) e coproculturas para identificação de larvas. Também foram realizadas coletas de sangue para analisar possíveis alterações no hemograma dos animais associados à infecção helmíntica. Todos os animais foram pesados individualmente a cada coleta, e avaliado o escore de condição corporal, juntamente com uma avaliação clínica dos animais. Diariamente foram aferidas as temperaturas média, umidade do ar e precipitação na propriedade. Foram calculadas e apresentadas estatísticas descritivas das variáveis observadas e sua variação sequencial no tempo visando avaliar a dinâmica populacional de helmintos em equinos a pasto. However, the prevalence of helminths may increase or decrease, in the premises of climatic factors and host susceptibility. Therefore, we evaluated the seasonal dynamics of helminth infection in horses kept at pasture. a herd was used with 104 crossbred horses, classified into different categories according to age and sex. Individual fecal samples were taken every 28 days for the eggs per gram of feces (OPG) and stool cultures for identification of larvae. Also blood samples were taken to analyze possible changes in the blood count of the animals associated with helminth infection. All animals were weighed individually every collection, and rated the body condition score, along with a clinical evaluation of the animals. Daily average temperatures were measured the, humidity and rainfall on the property. Descriptive statistics of the observed variables were calculated and presented and their sequential variation in time to evaluate the population dynamics of helminths in horses grazing. The categories that were most affected by helminths were foals and elderly, with averages of OPG 1271.9 and 1186.5, respectively. Sensory profiles and seasonal variation of black walnut cultivars and the relationship between sensory characteristics and consumer acceptance of black walnut gelato

Master of Science / Food Science Institute / Kadri Koppel / Black walnut (Juglans nigra L.) is a Juglans species native to the United States. Nuts are collected each fall from black walnut trees and the kernels are consumed in many food products like ice cream, candies, and baked goods. Flavor profiles of black walnut cultivars have been examined, but no studies have looked at the effect of growing season on flavor profile, and few studies have determined consumer acceptance of black walnut food products. The sensory profiles of 10 black walnut cultivars (Football, Vandersloot, Brown Nugget, Pounds, Sparks 127, Davidson, Sparrow, Neel, Emma K, and Tomboy) were evaluated using descriptive sensory analysis. A trained panel scored the intensity of 3 appearance, 7 aroma, 23 flavor, and 6 texture attributes. Results showed that the cultivars differed significantly (P≤0.05) on 11 of these attributes. The results from this study were also compared to results collected in 2011 of 7 black walnut cultivars. Two flavor attributes (black walnut ID and overall nutty) had an interaction effect of year and cultivar, while 7 attributes showed a main effect of year (brown, caramelized, floral/fruity, fruity,-dark piney, musty/dusty, and oily). In general, flavor attributes had higher intensities in 2011 than in 2013. Six of the black walnut cultivars were also incorporated into a gelato base and evaluated by both a trained panel and consumer panel. Trained panelists developed a lexicon for the gelato samples and scored the intensity of 18 flavor attributes. The gelato samples differed on 3 main flavor attributes: black walnut ID, overall nutty, and sour (P≤0.05). Based on consumer liking, there were 3 distinct clusters of consumers. One cluster preferred samples with a milder black walnut flavor, another preferred a more intense black walnut and overall nutty flavor, and the third cluster liked all of the samples. Results from this study indicate that growing season should be considered when determining flavor profile of agricultural products. These results can also help guide growers in selecting cultivars that may produce a more consistent crop year after year, and cultivars that consumers find acceptable in food products.

Developing propagation methodology and determining seasonal variation and antibacterial activity for a cosmeceutical species, Leucosidea sericea

The aim of this study was to determine propagation methodology of L. sericea taking into consideration the effect of season and storage. The response of tip and basal cuttings of L. sericea to three hormonal treatments and three growth media was investigated. Seed germination response to five constant temperatures and four pre-sowing treatments was also investigated. Using NMR spectroscopy, the effects of season and storage on metabolites in leaves of L. sericea were investigated. All treatments did not initiate or improve rooting of L sericea cuttings. Seed germination percentage was significantly affected by temperature and pre-sowing treatment compared to control. The optimum seed germination percentage was obtained at 15°C (53%) when treated with smoke water. Seasonal variation affected leaf metabolite profiles. Storage did not affect the antibacterial activity of L. sericea leaves and those harvested in winter showed an MIC value of ≤3.90μg/mL when tested on Propionibacterium acnes / Agriculture, Animal Health and Human Ecology / M.
