Vyhodnocení kvalitativních ukazatelů vepřového masa u sledovaných jatečných prasat

This thesis deals with the evaluation of qualitative indicators of pork in hybrid combinations (LW x L) x D and (LW x L) x PIC 337. Introduction of the thesis is focused on the importance of pig farming, the importance meat as food, its nutritional value and consumption of pork. A review of literature thesis describes the quality of the meat, the factors acting on it, carcass value and evaluation by the SEUROP system. To experiment was ranked boar breed Duroc and final boar PIC 337. The experiment was conducted in a commercial pig breeding ZOD Žichlínek on the farm Sázava, and evaluated indicators of carcass value and meat quality. Evaluation of the results showed that barrows have more growth ability than gilts. Gilts contrary showed better conformation and were placed in better grades.

This Ph.D. thesis deals with problem of changes in commodity chain pigs -- pork meat in the current environment of changing conditions and contracts in global network of agribusiness. An attention is paid as well as assessing the economic consequences of globalization and liberalization in the current environment of agribusiness in general with a focus on the formation of agrarian markets, motives of consolidation in the primary and subsequent stages of processing and finishing materials in pork meat commodity chains and networks of agribusiness. There are also characterized an economic relations in the design and development of contractual relationships and effectiveness in general and in the environment of agribusiness. Researched commodity is analysed in a global, European and national context, both in terms of typical developmental characteristics and in terms of cost and price relations of production and processing of pig meat in the world's major production canters. There are evaluated also influences on the formation of commodity verticals and market structure on the price level in the primary stage and related subsequent stages of processing in terms of the Czech Republic.

The diploma thesis focused on the formation of price levels in the commodity bverticals related to pigs breeding in the Czech Republic. The thesis focused on the quantitative review of the sensitivity of the price development on the consumer, processor and agricultura markets in the Czech Republic. Monthly prices of selected products are used for the analysis. The results based on analysis of price transmission, verify the occurrence and influence of market power in the commodity verticals. All the obtained outcomes were interpreted in the context of the real situation in the Czech Republic in the analysed period.

The thesis is focused on the nature of market environment of selected commodity – pork meat, especially on the impact on developmental trends in the Czech Republic. It describes the development on domestic market with pork meat as well as the development on foreign market of European Union countries, in terms of demand and supply. The thesis is focused also on price formation in pork meat commodity vertical and competitiveness of Czech producers of pork meat on common market. The thesis analyses the business sphere and market concentration of meat-processing plants and slaughterhouses in the Czech Republic, when it refers to the largest domestic market players. The conclusion of the thesis is devoted to the analysis of price transmission in terms of the position of agricultural primary producers, industrial processors and final chains on the Czech market based on monthly prices of pork roast with bone and boneless pork leg.

There are also defined most important world production centres in connection with changes of demand and supply in dynamics of globalizing market. The evolution on the global market of pigs and pork meat are analysed, together with detailed identification of changes on the common market of the EU. Concretely, there is analysed the evolution of price levels of the investigated commodities, throughout comparison of chosen production centres. The development of balance of the EU's international trade with relevant world producer/consumer centres was analysed thoroughly.

Kvalita masa finálních hybridů prasat / Meat quality of final pig hybrids

The aim of this thesis was to inform about pig genotypes and sex influencing selected traits of meat quality. Several combinations of the final pig hybrids (CLxCLW)xCLW-sire line, (CLxCLW)x(CLW-sire line x Pn), (CLxCLW)x(DxPn) and (CLxCLW)x(CLW-sire line x D)with balanced sex ratio (barrows : gilts). The highest intramuscular fat content (2,15 %) has been detected in the (CLxCLW)x(CLW-sire line x D) hybrid combination; the barrows (1,78 %) reached a higher ratio compared to gilts (1,42 %). There were detected only small differences in traits pH45 and pH24, there was not even found any difference between the two sexes. The lightest meat (% remission) has been proven by the (CLxCLW)xCLW-sire line combination with no significant difference between sexes. There have been quite similar values between the sexes and even hybrid combinations, concerning the meat lightness (L*). The drip loss was highest in the (CLxCLW)x(DxPn) combination with only fractional difference between sexes. In the shear force has been detected the lowest value in the (CLxCLW)x(CLW-sire line x Pn) combination with a small difference between barrows and gilts. From the genotype aspect were confirmed statistically important differences in the following traits: intramuscular fat content, meat lightness (% remission), drip loss and shear force. From sex aspect, only differences in intramuscular fat content were found.
