Previous issue date: 2016-09-30 / CAPES - Coordenação de Aperfeiçoamento de Pessoal de Nível Superior / Esta Dissertação avalia as transformações na cultura do processo de trabalho com o fruto do açaizeiro (Euterpe Oleracea mart.). Analisa as formas de produção e preparo da bebida, nas ilhas e na cidade de Belém - PA, entre os anos de 1984-2015. Dessa maneira, tem como objetivo visualizar e compreender as permanências e rupturas provocadas pelo crescimento do mercado trabalho, na relação homem/natureza, e as interpretações que os diversos sujeitos fazem da presença dos novos indivíduos e da inserção das fábricas, nesse universo de trabalho. Percebe-se que as mudanças ocorridas na forma de extração e comercialização sofreram interferências da expansão do consumo e do conhecimento sobre a "bebida amazônica" ou "petróleo negro", os quais fomentaram uma reconfiguração do meio ambiente, nas relações entre os sujeitos e os espaços de trabalho e, consequentemente, interferiram nas vidas dos indivíduos que se relacionam e sobrevivem do trabalho de "apanhar", "vender", "amassar", "bater" e, atualmente, "processar o fruto para exportação". É importante destacar que, para o amadurecimento desta pesquisa, as reflexões e os trabalhos de E. P. Thompson foram importantes e norteadoras, a fim de analisar as experiências coletivas e individuais dos trabalhadores do açaí, as quais permitiram a compreensão e a reconstrução da história de vida desses sujeitos. Dessa forma, ao considerar a história de vida das pessoas sobre seu passado, tentou-se construir uma história social que não tratasse dos acontecimentos importantes, isoladamente, mas da interação desses acontecimentos com a vida cotidiana, a partir das memórias, atentando para o processo de trabalho concernente à cultura de produção e comercialização do açaí. / This dissertation evaluates the transformations about organizational culture of acai work (Euterpe Oleracea mart.). It analyzes the ways of production and preparation of acai vine, in islands and in Belém – PA City, between 1984 to 2015. In such case, this academic research objectifies comprehend the stays and the ruptures caused by the growth of labour market, through the relation between man/nature. The modifications occurred in the extraction and marketing were interfered by the consumption growth and the popularization of the “Amazon drink” or “petróleo negro”, which promoted the reconfiguration of the environment, in the face of relations between subjects and the workspace that resulted in the interference in the lives of individuals who were linked and survived from the work of manufacturing acai fruit and nowadays, “process the fruit for exportation”. It is important highlights that the maturity of this research, the reflections and the works by E.P. Thompson were crucial in order to analyzes collective and individual experiences of acai processors, which allowed the comprehension and the construction life history of individuals. Therefore, considering the life history of people about their past, this academic research constructed a social history which does not analyzes the important events, separately, however through the interaction these events with daily life from the memories, observing working process associated to the production system and marketing of acai.
