Os relatos interessantes ao paladar em questão foram selecionados na obra
O Brasil dos Viajantes de Ana Maria de Moraes Belluzzo. Foram saboreados indícios escritos e pictóricos de espaços que seriam o
passado remoto das cozinhas brasileiras, degustando hábitos de culturas descritas,
citações relacionadas à arquitetura, descrições do universo feminino e dos locais
descritos como cozinhas. No intuito de intensificar o paladar, as informações colhidas foram organizadas por matrizes étnicas, no caso, as três formadoras da identidade brasileira: a indígena, a africana e a européia, ou, a índia, a negra e a branca. _________________________________________________________________________________ ABSTRACT / This dissertation BATUQUE IN THE KITCHEN – Study of the cooking space in Brazil colony, through the reports of travelers – has in the drumming the aim of designing and characterizing space to cook in Brazil colony, from reading the reports of travelers and chroniclers attentive to the landscapes, peoples and customs of the
country. These interesting reports to the palate were selected in the literary work of O Brasil dos Viajantes of Ana Maria de Moraes Belluzzo. Was enjoyed written and pictorial evidence of space that would be the remote past of Brazilian cuisine, tasting habits of cultures described, quotes related to architecture, descriptions of the feminine universe and the places described as
kitchens. In order to enhance the taste, the information collected were organized by
ethnic matrices, in the case, the three forming of the Brazilian identity: the
indigenous, African and European, or, the Indian, the black and the white.
