La presente investigación se realiza con la finalidad de poder diseñar una planta productora de vinagre a partir de la uva de descarte, por lo cual se consideraron tres objetivos principales, en el primero se determinó la demanda del producto a través de un estudio de mercado teniendo en cuenta la producción nacional e importación del vinagre y considerando un porcentaje del 35% de la demanda proyectada, así mismo se estableció el precio del producto el cual será de $/1,07/litro, siendo aproximadamente S/4,12/litro, el segundo objetivo consistió en realizar un estudio técnicotecnológico, para ello se realizó
el análisis de manera macro y micro, dando como resultado que la planta estará ubicada en la región de
