This thesis on Biologically active substances selected assortment of edible flowers is deal with describe a group of plants used for edible flowers, with a focus on the current range of cultivated species in the experimental garden ZF MENDELU. It focuses on content substances with antioxidant activity and determination of total flavonoids, total phenol content and total antioxidant capacity. By organizing tasting edible flowers, and evaluation of the results obtained with using the protocol. For the determination of the ingredients with antioxidant activity , total phenolic content , vitamin C , total antioxidant activity and total flavonoids were select edible flowers: Allium ledchorianum, Allium moly, Allium schoenoprasum, Antirrhinum majus, Begonia semperflorens, Begonia tuberhybrida, Bellis perennis, Borago officinalis,Brassica oleracea convarieta capitata varieta sabauda,Calendula officinalis, Centaurea cyanus, Cosmos bipinnatus, Cucurbita maxima ´Red Worty Thing´, Dendrobium nobile, Dianthus caryophyllus, Fuchsia hybrida, Helianthus annuus, Helianthus tuberosus, Hemerocallis hybrida ´American Revolution´, Hemerocallis hybrida ´Double Dancer´, Hemerocallis hybrida ´Ginger Whip´, Hemerocallis hybrida ´Leuchteuer´, Hemerocallis hybrida ´Picture Hat´, Hemerocallis hybrida ´Rwanso´, Hemerocallis hybrida ´Stephero´, Hibiscus rosa sinensis, Ipomoea purpurea.
