Para a avaliação conduziram-se testes de centrifugação com a centrífuga I, utilizando café cereja desmucilado e seis diferentes rotações (300, 400, 500, 600, 700 e 800 rpm). Os parâmetros observados foram teor de umidade, massa específica, porcentagem de grãos danificados (PGD) e capacidade da centrífuga. Para os testes com a centrífuga II, utilizou-se café cereja desmucilado, café bóia e café seco posteriormente molhado durante 1, 2 e 3 horas com rotações de 300, 400 e 500 rpm e tempos de centrifugação de 30, 45 e 60 segundos. Com base nos resultados obtidos nos testes, pode-se concluir que: o processo de centrifugação contribui para a remoção da água superficial do café; as melhores rotações considerando a maior perda de água do produto, a menor PGD e a maior capacidade da centrífuga foram as de 500 e 600 rpm (centrífuga I) e; para a centrífuga II a melhor rotação para remoção da água superficial do café foi a de 500 rpm. / Aiming at the evaluation of the centrifugation process in removing the superficial water from coffee, as well as to establish the best rotation for this process, two different centrifuges, which were developed at the UFV Agricultural Engineering Department, were tested. For this evaluation, some centrifugation tests were conducted with the centrifuge I, using pulped coffee cherries and six different rotations (300, 400, 500, 600, 700 and 800 rpm). The following parameters were observed: moisture content, specific mass, damaged beans percentage (PGD) and the centrifuge capacity. To carry out the tests with centrifuge II, the pulped coffee cherries, “bóia” coffee, and the dry coffee that was latter soaked into water for 1, 2 and 3 hours at the rotations of 300, 400 and 500 rpm and centrifugation times of 30, 45 and 60 seconds were used. According to the results, the following conclusions were drawn: the centrifugation process contributes to the removal of the superficial water in the coffee berries; the best rotations concerning to the highest water loss of the product, the lowest percentage of the damaged coffee beans; and the highest centrifuge capacity were 500 and 600 rpm for centrifuge I, whereas for centrifuge II the best rotation for removal of the superficial water in the coffee beans was 500 rpm. / Tese importada do Alexandria
