The possible contribution of Moringa Oleifera Lam. Leaves to dietary quality in two Bapedi communities in Mokopane, Limpopo Province

A high rate of micronutrient deficiencies persists in Africa with the most vulnerable groups being women and children. The Moringa oleifera tree has been identified to help alleviate malnutrition at household level because of its rich content of vitamin A in its plant form - beta-carotene, iron and vitamin C. The objectives of this study was to identify households that consumed Moringa, to identify households that required diet diversification through the use of a Household Dietary Diversity Score (HDDS) and to determine the acceptability of various dishes prepared from Moringa leaves as a possible contribution to the alleviation of malnutrition in resource poor communities. The dietary diversity score of the traditional Bapedi community is 4.7 and the results of the acceptability test of dishes prepared with Moringa indicated that Moringa could be recommended as an additional food ingredient to add micronutrient to the diet of Bapedi communities. / Agriculture and Environmental Sciences / M.A. (Human Ecology)

An exploration of the school nutrition programme's potential to catalyse community-based environmental learning : a case study of a rural Eastern Cape school

The purpose of this study was to explore the extent to which a School Nutrition Programme can catalyse community-based environmental learning and promote food security in the school and the community. This is an interpretive case study of a junior secondary school in the rural Eastern Cape province of South Africa. The school is located in an area characterised by high levels of poverty and under-nutrition. The school’s food garden, a central focus of this study, contributes to the School Nutrition Programme, which falls under the National School Nutrition Programme (NSNP). The aim of the NSNP is to alleviate poverty in public schools. This case study was conducted by means of questionnaires, semi-structured interviews, and document analysis and field observations. The data set was analysed, firstly, to ascertain if the School Nutrition Programme functions as a community of practise (Wenger, 1998). Thereafter, the data set was analysed to identify the knowledge related to food security and environmental sustainability that is learned and shared in the School Nutrition Programme, and also how such learning took place. The study found that the School’s Nutrition Programme was indeed operating as a community of practice and that it created a platform for sharing explicit and tacit knowledge and skills related to food security and environmental sustainability. The case study also revealed the contextual and experience-based nature of knowledge related to food cultivation.

The life history and fishery assessment of largespot pompano, Trachinotus botla, in northern KwaZulu-Natal, South Africa

Largespot pompano, Trachinotus botla, is a surf zone carangid with a cosmopolitan distribution in subtropical and tropical waters. Within South Africa, the species occurs along the KwaZulu-Natal coastline where it is a popular recreational fishing target. Recreational fishing in southern Africa has developed significantly in recent years, and is now regarded as an industry with huge economic potential. The long-term contribution of South African recreational fisheries to local economies is reliant upon sustainable exploitation through effective management. Trachinotus botla was found to grow rapidly with maximum observed age of six years. Otolith growth zone deposition was validated using edge analysis. Growth was similar between males and females until ~350 mm FL after which females continued to grow while growth in males slowed. The resulting overall sex ratio was slightly female-biased (1 male: 1.3 females). Trachinotus botla matures early with all fish considered to be mature at 290 mm FL, which corresponds to an age of three years. A protracted spawning season was observed ranging from November to February and there was evidence to suggest that T. botla is a serial spawner. Dietary analysis indicates that T. botla is an opportunistic predator with a catholic diet. The opportunistic utilization of “superabundant” prey items is a fundamental characteristic of the species feeding habits. An ontogenetic dietary shift was observed at approximately 300 mm FL that was linked to a shift in habitat preference. This thesis provided the first evidence that infection by the tongue-replacing isopod, Cymothoa borbonica, reduces the growth rate of wild host fish populations despite not affecting the diet, feeding habits and feeding frequency of their hosts. These results also highlighted the inadequacy of condition factor as a proxy for quantifying the effects of cymothoids on their hosts, and identified the need to incorporate host age when assessing the effects of parasite infection. Information on the life-cycle of C. borbonica, including estimates of the hypothesized “infectious” period and its longevity were obtained through analysis of parasite infection patterns as a function of host age and length. An assessment of the T. botla shore fishery of KwaZulu-Natal using historical catch data revealed that the fishery is stable. Productivity of the T. botla fishery increased towards the north of KwaZulu-Natal. Distinct seasonal variations in the T. botla fishery were also noted with catches peaking in summer months and lowest during winter. A per-recruit assessment revealed that the species is currently underexploited (SBR = 62% of pristine levels), and fishing mortality rate could be doubled before reaching the spawner biomass-per recruit target reference point of FSB₄₀. A combination of the life history characteristics of species, the nature of the recreational shore fishery together with the current management regulation of 5 fish person⁻¹ day⁻¹ has ensured the sustainable utilization of the T. botla resource in KwaZulu-Natal.

Feeding dynamics of suspension-feeders in the nearshore marine environment adjacent to two contrasting estuaries in the Eastern Cape, South Africa

Coastal transition zones form important interlinking regions where marine ecosystems, rivers and estuarine environments significantly influence each other. Coastal rocky shores are key habitats that sustain a variety of primary producers and invertebrates and due to the dynamic nature of coastal ecosystems, suspension-feeders on rocky shores can be influenced by an array of autochthonous and allochthonous food sources. Fatty acid and stable isotope trophic markers were employed to distinguish between regional and temporal changes in the potential food sources to rocky shore suspension-feeders in the Eastern Cape Province of South Africa. The primary aim was to assess the spatial and temporal influences of contrasting river flows on the available food sources to three indigenous coastal suspensionfeeders, namely the volcano barnacle Tetraclita serrata, brown mussel Perna perna and tubebuilding polychaete Gunnarea capensis. This was done by examining the intra- and interspecific changes in the fatty acid and stable isotope signatures of the barnacles, mussels and polychaetes in the adjacent marine environment of a freshwater-restricted (Kariega) and freshwater-dominated (Great Fish) estuary during austral summer and winter. Multivariate and Kruskal-Wallis analyses of variance on the fatty acid and isotopic signatures, respectively, identified significant regional changes in the barnacles and mussels, while only stable isotopes distinguished between the Kariega and Great Fish polychaetes (P < 0.05). In addition, significant temporal changes were observed in consumer fatty acids and isotope values in both regions (P < 0.05). Bacterial sources, detritus and phytoplankton assemblages, which are influenced by hydrology and vegetation, differed between regions and were mainly responsible for the regional and temporal separations. Principal component analyses on the consumer fatty acid signatures distinguished between animals situated upstream (i.e. north) and downstream (i.e. south) of the Kariega Estuary mouth in summer. The north/south separation was mainly due to greater contributions of diatoms to northernlocated animals and dinoflagellates and detritus to southern-located consumers. In addition, the south-flowing Agulhas Current on the eastern shores of southern Africa appeared to influence the north/south separation in the Kariega region, as water leaving the estuary was probably entrained into the south-easterly flowing currents, thereby depositing estuarinederived detritus to southern populations. In general, diatoms and detritus were essential food sources to the filter-feeders in summer, and flagellates, diatoms, zooplankton and detritus were important in winter. Coastal macroalgae was a key food source in the Kariega and Great Fish regions during both seasons. Consistently large levels of diatom markers (16:1n-7 and 20:5n-3) and dinoflagellate markers (22:6n-3) in consumer tissues in the Kariega and Great Fish regions identified that phytoplankton was their dominant food source. The barnacles, mussels and polychaetes had similar fatty acid markers and a fairly narrow δ¹³C range (-16.5 to -14.4 ‰), suggesting that they probably consumed similar food. Carbon isotope analyses, however, separated the suspension-feeders into slightly depleted (barnacles; -16.5 to -16.1 ‰), intermediate (mussels; -15.8 to -15.0 ‰) and enriched (polychaetes; -15.0 to -14.4 ‰) consumers, but did not provide conclusive evidence of their preferences for specific phytoplankton. Conversely, fatty acid analyses highlighted that barnacles and mussels had greater proportions of dinoflagellate markers (22:6n-3; 7.0-15.3 % TFA), while polychaetes had larger diatom levels (20:5n-3; 15.1-22.2 % TFA). In addition, all three species had consistently large contributions from bacterial fatty acids (15:0, i-16:0, 17:0 and i-18:0; 4.2-13.6 % TFA) in summer and winter, and large proportions of saturated fatty acids (33.3-53.1 % TFA) including those with 14 to 18 carbons, indicating that bacterial and detritus food sources played an important role in their diets. Barnacles had small levels of terrestrial markers (18:2n-6 and 18:3n-3; <2.5 % TFA) and demonstrated increased omnivorous feeding compared with the other suspension-feeders [increased levels of 20:1n-11 and 20:1n-9, higher 18:1n-9/18:1n-7 ratios at ~2.1, enriched δ¹⁵N values at ~10.6 ‰; zooplankton (potentially including microzooplankton, larvae and protists) contribution of up to 61 % of the diet]. Mussels contained significant proportions of the terrestrial markers (18:2n-6 and 18:3n-3; >2.5 % TFA) and exhibited intermediate omnivory (intermediate levels of 20:1n-11 and 20:1n-9, intermediate 18:1n-9/18:1n-7 ratios at ~1.3, less enriched δ¹⁵N values at ~7.9 ‰; zooplankton contribution of 10-15 % of the diet). The more depleted nitrogen signatures in the mussels relative to the barnacles and polychaetes possibly illustrated a stronger preference for autotrophic food. Polychaetes mainly consumed plant food sources (i.e. microalgae, macroalgae and detritus; high levels of i-18:0, 18:1n-9, 18:4n-3 and 20:5n-3) and displayed little omnivory (low levels of 20:1n-11 and 20:1n-9, low 18:1n-9/18:1n-7 ratios at ~0.4, intermediate δ¹⁵N values at ~9.1 ‰; zooplankton contribution of <10 % of the diet). The barnacles, mussels and polychaetes are all suspension-feeders, originally presumed to consume the same food sources. The variations observed among the species, therefore, may result from differences in the proportional contributions of the various food sources to their diets as well as distinctions in metabolism. The distinct changes in the fatty acid and stable isotope signatures in all three filter-feeders in the Kariega and Great Fish regions are likely influenced by the diversity in regional vegetation and hydrology in the different systems, combined with interspecific differences in resource partitioning among the species.

Prevalence of endocrine disrupting phthalate esters in selected foods and food wrappers from some supermarkets around Pretoria, South Africa

Food is one of the main routes by which xenobiotic (synthetic) chemicals enter the body of man and wildlife. The routes could be from wrappers in which the foods are presented with possible transfer of the compounds to consumers, hence need for regular screening. The research work is aimed at investigating possible prevalence of phthalate esters in selected foods (cheese, polony and vienna) and their plastic wrappers from commercial stores in Tshwane metropolis. Food samples were purchased from selected stores, taken to the laboratory and stored at 4oC until analysed. Analysis was done by soxhlet extraction while determination and quantification of phthalates was carried out using Gas Chromatography-Flame Ionization Detection (GC-FID). Quality assurance of the process was by standard addition of the phthalate ester standards. Results obtained revealed good chromatographic separation of the analysed esters which ranged from 5.55 min for Dimethyl phthalate (DMP) to 8.96 min for Benzylbutyl phthalate (BBP). Instrumental detection limit of the esters varied from 0.03 - 0.05 μg/kg. The percentage recovery of the phthalate esters ranged from 75 – 90% from spiked cheese samples; 33 – 66% from spiked polony samples and 69 – 99% from spiked vienna samples. These recoveries are quite acceptable and applicable to the analysis and quantification of the compounds in the samples with the exception of Dibutyl phthalate (DBP) (33%); DMP (34%) and BBP (46 %) in polony samples. Results from chromatographic quantification revealed the absence of or non-detection of most of the analysed phthalate esters in the selected food samples. However, level of 0.031 μg/kg of BBP - 0.816 μg/kg of DMP were obtained in some of the analysed samples. / Environmental Sciences / M. Sc. (Environmental Science)

An assessment of food consumption patterns of selected households of Mbilwi and Matavhela Villages in Thulamela Municipality, Limpopo Province of South Africa

This research discusses food consumption patterns of selected households of Mbilwi and Matavhela villages in Thulamela Municipality, Limpopo Province of South Africa. The study identified types of food consumed and the nutritional knowledge of households living in the study area. In addition, the study assessed the knowledge of households on how food choices affect their health. Lastly an analysis of socio-economic factors that influence food consumption patterns in households living in Mbilwi and Matavhela villages was investigated. Using purposive sampling, qualitative and quantitative inquiry were used to explore the research objectives. A sample size of 50 and 47 households from each village were selected respectively and the heads of each household were interviewed. Thematic content analysis was used to categorise data into themes, to address and interpret qualitative data. Themes were generated as the units for analysis based on the objectives of the study to enable interpretation of qualitative information. The quantitative data was analysed using Statistical Packages for Social Sciences (SPSS) version 23.0. The findings indicated that there was no variety in foods consumed by households in both the weekly food consumption pattern and 24-hour food recall. There was also limited nutrition knowledge of the foods consumed in households of both villages. Households usually consumed energy giving foods such as carbohydrates and body building foods such as proteins. There was low consumption of milk and milk products, fruit and vegetable food groups. Various socio-economic factors such as income, living conditions, health, nutrition knowledge, culture, religion and lack of time to prepare food, affected eating habits. Some foods were recommended or condoned based on religious and cultural factors. Most households were unemployed and relied on government grants and remittances from family members working in the metropolitan centres. The findings in this study provide a better understanding of food access, availability and consumption in rural areas which can also assist in the formulation of policies that would improve quality of food consumption in rural areas. This study presented an opportunity that can be filled by institutions working in rural areas to support and strengthen their activities. Information sharing with households on the benefits of balanced diets can contribute to the health and the well-being of the society. The emphasis must be on strengthening backyard vegetable/fruit gardens and community food gardening programmes for household consumption v and sale, to generate income. These programmes can also offer fruit/vegetable preservation skills to households in order to help improve the shelf life of the produce. Policy makers must encourage provision of nutritional knowledge to households through different media and channels such as television, clinics, hospitals, schools, and newspapers.

Towards a framework for enhancing school feeding programmes for rural development in Blouberg Local Municipality, South Africa

This is designed to alleviate short-term hunger and encourage learners to attend school. Many children in South Africa attend school hungry and lack general knowledge of nutrition, which negatively affects their learning abilities. Not much research attention has been paid to the potential of SFPs to improve learners‟ knowledge of nutrition. Nor has there been significant effort to stimulate local production of food involving community members, which might contribute to the development of rural areas. In the current study, the degree to which SFPs have alleviated hunger, promoted nutrition education, and enhanced the development of rural communities in Blouberg Local Municipality (BLM) was investigated. Data were collected from 11 primary schools in BLM where the South African Department of Basic Education implemented SFPs. At each school, quantitative data were collected from learners aged from 10 to 15 years using a structured, pre-tested and validated questionnaire. Qualitative data were collected through individual in-depth interviews and focus group discussions with learners, teaching staff, community members and government officials involved in the implementation of SFPs. Document analysis, direct observation, and taking notes, photographs, Venn and seasonal -diagraming were used to collect data. Descriptive statistics, crosstabulation and binary logistic regression were used to analyse quantitative data. Qualitative data obtained in the form of interview transcripts and field notes were analysed using thematic content analysis. An inductive approach was followed. This entails coding the data and observing emerging patterns, culminating in organising the results into common themes. A composite index was used as a measure of the quality of SFPs. Perceived benefits of SFPs were assessed based on a validated and standardised 5-point ordinal scale. It was observed that 80 % school children who participated in the study were satisfied with the quality of the SFPs provided to them. The results confirmed those obtained through focus group discussions and individual interviews. Overall satisfaction with the quality of the SFP in BLM significantly and positively depended on the following knowledge, in descending order of importance: fewer sugary foods should be consumed; fewer fatty foods should be consumed and eating various foods helps in proper growth and development. Four predictor variables significantly influenced satisfaction with SFPs. These were: knowledge that a variety of food types is helpful for growth and development [OR = 3.72; P < 0.001; 95% C.I. = 1.77, 7.83]; knowledge that eating too much fatty food is harmful [OR = 2.93; P < 0.001; 95% C.I. = 1.83, 4.68]; knowledge that eating too much sugary food is harmful [OR = 2.18; P < 0.001; 95% C.I. = 1.45, 3.29]; and knowledge that eating too much sweet food is harmful because it can make people fat [OR = 1.58; P < 0.05; 95% C.I. = 1.01, 2.50]. All participants agreed that SFPs alleviated hunger and benefited the learners and their families. Although the participants cited numerous other benefits accrued through SFPs, there were challenges that should be addressed. The involvement of community members in the SFPs was reported to be minimal such as cooking and serving food and working in the school gardens. This could be maximised because SFPs presented an opportunity for local food production and rural community development. Non-delivery of food by suppliers and the negative impact it had on learners was the major challenge. This observation implied that the SFPs constituted a readily available market, which the rural communities could exploit to improve their income, create jobs and enhance the rural economy. Therefore, SFPs and school gardens should be integrated with nutrition education to improve the learners‟ level of nutrition knowledge and reinforce the consumption of healthy foods. Although initially, the SFP had a community development component, this seemed to be overlooked. A framework that underscores strong partnerships among government departments, NGOs and the private sector in implementing community and/or rural development initiatives was developed. The framework is based on strong partnerships between key stakeholders, policy support, investments in resources and infrastructure for rural development and capacity building. / NRF

The association between levels of fish consumption early in pregnancy and birth outcomes of pregnant women in Johannesburg, South Africa

Background: Neonates born with low birth weight or preterm are at an increased risk of long-term adverse health outcomes. Research studies on the association of fish consumption during pregnancy and birth outcomes, have led to inconsistent conclusions. Maternal dietary intakes during pregnancy have a significant impact on foetal development and growth. The aim of this project is to determine levels of maternal fish intake at <18 weeks during pregnancy and to determine the association with birth outcomes in pregnant women from Johannesburg, South Africa. Methods: This Master‘s study is nested in a larger study with a longitudinal observational research design was conducted on 250 pregnant women in Johannesburg, South Africa. For this Master‘s study, data from the first 102 participants were used. Data for this study were collected early in pregnancy (<18 week‘s gestation) and at birth. The birth data were collected by the study mid-wife. Maternal fish consumption during early pregnancy was measured using a Quantitative Food Frequency Questionnaire (QFFQ). Correlation analysis was used to examine the association between maternal fish consumption during early pregnancy and neonatal anthropometry (birth weight, crown heel length and head circumference) and gestational age at birth. Results: Majority (88.1%) of the mothers were black South Africans between the ages of 18 and 39 with a mean age of 28 ± 5 years. At enrolment, the mean BMI of the women was 27.8±5.8kg/m2 having a mean height of 158.8±6.7cm and a mean weight of 70.4±15.2kg. Most of them were unmarried (45.4%), living in households of 2 – 5 members (86.3%), wage-earning (44.6%) and had Grade 11 or 12 schooling (58.4%). Most (76.5%) of the pregnant women consumed fish rarely (once a month) and the overall median fish intake was 4.8g/day (0; 25). In the study sample 12.5% of new-borns had a low birth weight (<2500g), the percentages of preterm births were 1.0% - extremely preterm (<28 weeks), 2.0% - very preterm (28 – <32 weeks) and 10.0% - moderate to late preterm (32 – 37 weeks). The mean birth weight was 2999.2±624.4g with boys having a mean birth weight of 3157.3±571g and girls at 2819±671g. The new-borns‘ mean gestational age at birth was 38.8±2.4weeks (271.6days). The percentage of new-born head circumference ≤ 31.49cm was 9.2% and the mean head circumference was 34.3±3.6cm with the boys having a mean head circumference of 34.5±2.4cm and the girls 34.1±4.3cm. In this study sample, 3.7% of new-borns were born with crown heel length of 31 – 40cm and the mean crown heel length mean was 49.5±4.6cm with the boys having a mean crown heel length of 49.8±4.9cm and the girls having mean crown heel length of 49.3±4.3cm. In this study, there were no statistically significant associations between fish consumption at early pregnancy and birth outcomes such as gestational age at birth (r=0.051; p=0.625), birth weight (r=-0.043; p=0.695) and crown heel length (r=0.008; p=0.943). There was a positive association between maternal fish consumption in early pregnancy and head circumference of the new-born which tended towards statistical significance (r=0.193; p=0.079). Conclusions: In this study of pregnant women living in Johannesburg, a few women consumed fish at early pregnancy compared with women who did not consume fish during pregnancy. Food safety and quality assurance measures of the National School Nutrition Programme in Mpumalanga Province, South Africa

Foodborne diseases are a major challenge to school feeding programmes because inadequate food safety knowledge and skills of staff can result in unsafe food handling practices and cross-contamination, thus causing foodborne disease outbreaks. The aim of this study was to investigate the food safety and quality assurance measures of the National School Nutrition Programme (NSNP) in Mpumalanga Province, South Africa. The research design was cross-sectional quantitative in nature. A total of 300 NSNP food service managers/coordinators and 440 food handlers were selected to participate in the study. Data collection was by means of a selfadministered structured questionnaire and 192 food contact surface swap samples from 32 primary and secondary public schools.The majority of schools offering NSNP meals were located in informal settlements and most were found to lack basic resources such as electricity and potable tap water in their kitchens. 93% of food handlers did not know about Hazard Analysis Critical Control Point (HACCP). The NSNP food service managers in some schools, especially in schools located in rural settlements, were found to have little knowledge or awareness of HACCP. No school was found to have implemented the HACCP, and only a few staff had received food safety training. Inadequate food safety knowledge was worst in schools located in informal settlements due to a lack of training. Up to 60% of food handlers did not know the correct procedure for washing a cutting board after it had been used. In addition, just over 95% of the food handlers did not know how to sanitise utensils and cutting surfaces after cutting up raw meat. The lack of hygiene was confirmed by the presence of Listeria monocytogenes, Staphylococcus aureus, E.coli 015:H7, Salmonella and Shigella species on food contact surfaces. A total of 22 different bacteria genera were identified. It is essential to monitor NSNP kitchen hygiene practice to ensure the minimal contamination of food products and newly recruited food handlers should be trained on food handling practice and principles to ensure the safety of prepared food for school children. / Health Studies / D.
