As estimativas de tamanho da parcela foram obtidas em dois ensaios de uniformidade, usando-se as variedades Platinão e Cramuquém. Foram empregados os métodos da máxima curvatura, da máxima curvatura modificado, da comparação de variâncias e de Hatheway. Estimou-se, ainda, a diferença entre médias de tratamentos a ser detectada e o índice de heterogeneidade, que variou de 0,2991 a 0,8529. A estimativa do tamanho da parcela variou com a variedade, com a metodologia empregada e com a característica analisada. O método da máxima curvatura modificado, especialmente em associação com a diferença entre médias a ser detectada, foi aquele que permitiu a obtenção de estimativas mais adequadas. Por essa metodologia, e considerando-se que a parcela ideal deve possibilitar a eficiente avaliação de todas as características analisadas neste experimento, o tamanho adequado de parcela encontrado foi de15,02 m2 (26 plantas), para a variedade Platinão; e de 26,59 m2 (44 plantas) para a variedade Cramuquém. As características do material de plantio foram avaliadas em dois outros ensaios. No Experimento I – Efeito do comprimento e de incisões no córtex, foi avaliado o plantio de manivas com 5, 10, 15, 20, 25 e 30 cm de comprimento, com e sem incisões no córtex. Observou-se efeito quadrático do comprimento da maniva sobre produtividade de raízes tuberosas, índice de colheita e produção de amido. O valor máximo estimado para índice de colheita foi de 0,64, alcançado com o plantio de manivas de 19,19 cm. As produções máximas estimadas de produtividade de raízes tuberosas e produção de amido foram de 31.900,69 kg/ha e 8.594,79 kg/ha, sendo atingidas com manivas de 21,19 e 21,37 cm de comprimento, respectivamente. Houve efeito linear do comprimento da maniva sobre peso da parte aérea, número de brotações por planta e estande final. As incisões feitas no córtex das manivas não influenciaram as características avaliadas no experimento. No Experimento II – Efeito do tipo de corte e do apoio, estudaram-se oito tratamentos, formados pela combinação de quatro tipos de corte de maniva (reto, bisel, cruzado e rachado), na presença e ausência de apoio. Os tipos de cortes não influenciaram as características avaliadas, e o uso de apoio mostrou efeito apenas sobre o comprimento de raízes tuberosas. / Aiming to estimate the plot size and evaluate the characteristics of the planting material in experiments with cassava, four assays were conducted at the campus of the “Universidade Estadual do Sudoeste da Bahia” in Vitória da Conquista, Bahia. The estimates of the plot sizes were obtained from two uniformity assays by using the varieties “Platinão” and “Cramuquém”. The maximum curvature method, the modified method for maximum curvature, the method for comparison among variances, as well as the Hatheway’s were used. The difference to be detected among the treatment averages was also estimated as well as the heterogeneity index which varied from 0.2991 to 0.8529. The estimate of the plot size changed with variety, the applied methodology and the analyzed characteristic. The modified method for maximum curvature specially in association with the difference to be detected among averages was the one which allowed for the obtainment of more adequate estimates. By applying this methodology and considering that the ideal plot would make possible an efficient evaluation of all analyzed characteristics, the adequate size of the plot was found to be 15.02 m (26 plants) for variety “Platinão”, and 26.59 m2 (44 plants) for variety “Cramuquém.” The characteristics of the planting material were evaluated in two other assays. In Experiment I - Effects of length and incisions on the cortex – the planting of the maniocs with 5, 10, 15, 20, 25 and 30 cm length, with and without incisions in the cortex, were evaluated. A quadratic effect of the manioc length was observed upon the productivity of the tuberous roots, yield index and amide. The maximum value estimated for yield index was 0.64 which was attained from plantings of the 19.9 cm-length maniocs. The maximum productivities of tuberous roots and amide were 31.900,69 kg/ha and 8.594,74kg/ha, which were reached with m aniocs of 21.19 and 21.37 cm length respectively. There was a linear effect from manioc length upon the weight of the aerial part, number of sprouts per plant and the final stand. Incisions made in manioc cortex did not affect the characteristics evaluated in this experiment. In Experiment II - Effect of the cutting type and support – eight treatments formed by combination of four manioc cutting types (plain, chamfer, crossed and split) were studied in both the presence and absence of support. The cutting types did not influence the evaluated characteristics and the use of support only showed effect upon the tuberous root lengths.

Based on the characterization of the recent gastronomization phenomenon of organic family farming, this research examined the creation and the work developed by Ecochefs of the Maniva Institute in the Carioca Circuit of Organic Fairs (Circuito Carioca de Feiras Org?nicas ? CCFO). In addition, this research located and analyzed the place of the producers that supply ingredients for the Institute and also sought to understand how organic pink tapioca is perceived and consumed by the visitors of these fairs. The methodological strategy used to achieve these objectives consisted in a qualitative approach to data collection and analysis, based on participant observation at the fairs and semi-structured interviews with producers, chefs and consumers. In conclusion, the research points out that the work developed by Ecocofs of the Maniva Institute goes beyond the construction of a differentiated product of gastronomic quality, prioritizing the figure of the small organic producer, seeking, in this way, to strengthen organic family agriculture in Rio de Janeiro. / A presente pesquisa buscou compreender a emerg?ncia e atua??o do chef de cozinha como mediador na rela??o entre pequenos produtores e consumidores. Partindo da caracteriza??o do fen?meno recente de gastronomiza??o da agricultura familiar org?nica, esta pesquisa examinou a cria??o e o trabalho desenvolvido pelos Ecochefs do Instituto Maniva no Circuito Carioca de Feiras Org?nicas ? CCFO. Al?m disso, situou e analisou o lugar dos produtores que fornecem ingredientes para o Instituto e, ainda, buscou entender como a tapioca pink org?nica ? percebida e consumida pelos frequentadores destas feiras. A estrat?gia metodol?gica utilizada para atingir esses objetivos consistiu na ado??o de uma abordagem qualitativa de coleta e an?lise de dados, a partir da observa??o participante nas feiras e entrevistas semiestruturadas com produtores, chefs e consumidores. Como conclus?o, a pesquisa aponta que o trabalho desenvolvido pelos Ecochefs do Instituto Maniva vai al?m da constru??o de um produto diferenciado e de qualidade gastron?mica, priorizando a figura do pequeno produtor org?nico, buscando, dessa forma, fortalecer a agricultura familiar org?nica do estado do Rio de Janeiro.
