Suplementação da dieta de novilhos de três grupos genéticos em pastagem de Brachiaria brizantha cv. Marandu

O manejo da pastagem foi em sistema rotacionado e as seguintes quantidades de suplementos foram utilizadas: 0,6% do PV (19/06/02 a 21/11/02); 0,2 %; 0,6 % e 1,0 % do PV (20/12/02 a 17/05/03) e 0,4 %; 0,8 % e 1,2% (18/05/03 a 18/08/03). O delineamento utilizado para o desempenho animal foi em blocos casualizados, em esquema fatorial (3x3), com seis repetições. Para a avaliação de carcaça utilizou-se o delineamento inteiramente casualizado em arranjo fatorial 3x3 (3 grupos genéticos (GG) e 3 planos nutricionais, (PN)). Os valores de ganho de peso vivo (GPV), no primeiro período, foram de 0,79; 0,73 e 0,61 kg/dia, para os animais NRed, ML e N, respectivamente, com diferença entre os GG (P<0,05). O maior GPV permitiu aos animais NRed menor tempo (P<0,05) até o abate (310 dias), comparados aos animais N e ML com 402 e 389 dias, respectivamente. Os animais submetidos ao PN1 apresentaram menor (P<0,05) peso de abate (450,5 kg) em comparação ao PN2 e PN3, que foram iguais (465,0 e 463,1 kg). Para tecido comestível (TC), ossos e relação TC:Ossos não houve diferença entre os PN avaliados. O rendimento de carcaça dos animais ML foi inferior (P<0,05) ao dos N e NRed, com valores de 53,0; 56,6 e 55,5 %, respectivamente. Apesar do menor rendimento de carcaça, os animais ML proporcionaram o maior retorno financeiro/animal (R$/boi). O diferencial entre o preço da @ de entrada e saída determinou o resultado. O componente individual de maior importância nos custos foi a aquisição do animal, representando 59,9 % nos NRed, 50,7 nos N e 40,1% nos ML. / Eighteen steers from three genetic groups (Nellore-N, Nellore x Red Angus-NRed or dairy crossbreed-DC) were evaluated in pasture managed in a rotational system. In the first period, the three genetic groups were different (P<0.05) in terms of daily live weight gain (LWG), being the means of 0.79, 0.73 and 0.61 kg for NRed, ML and N groups, respectively. The higher LWG of NRed steers permitted them to be slaughtered earlier (P<0.05) (310 days) than N and ML steers (402 and 389 days, respectively). Steers submitted to NP1 were lighter (P<0.05) at slaughter (450.5 kg) than those from NP2 and NP3, which showed similar weights (465.0 and 463.1 kg, respectively). The three NP evaluated were similar in relation to comestible tissue (CT), bones and CT:Bone ratio. Carcass yield of DC steers was smaller (P<0.05) than those of N and NRed steers, being the means 53.0; 56.6 and 55.5%, respectively. Instead of the smaller carcass yield, the DC steers proportioned the better financial recovering per animal (R$/steer). The difference between the prices of entered and exited @ determined the result. The main individual component of costs is the animal purchase price, which was represented by 59.9%, 50.7% and 40.1% in NRed, N and ML groups, respectively.

El presente trabajo de investigación tiene como objetivo evaluar la deseabilidad, factibilidad comercial y la viabilidad financiera de crear e implementar un restaurante especializado en comida saludable para personas que necesiten cuidar su alimentación para controlar enfermedades no trasmisibles (diabetes, hipertensión, obesidad y otros). El plan de negocio contiene el análisis de mercado teniendo en cuenta las tendencias mundiales que muestran un crecimiento sostenido por el interés de mantener una vida saludable a través de una alimentación sana. El restaurante va dirigido a personas con enfermedades no transmisibles con NSE A y B, mayores de 18 años con poder adquisitivo, modernas, progresistas y sofisticadas que priorizan su alimentación con cuidados nutricionales. Adicionalmente, se realizó un sondeo de mercado a fin de poder identificar información necesaria que valida y ayuda definir el modelo de negocio. El restaurante estará ubicado en Miraflores, el cual funcionará brindando almuerzos y cenas. La carta será diseñada y supervisada por un Chef altamente calificado y un nutricionista especializado. Para el inicio de las operaciones se necesitará una inversión de s/ 541,073 dicho monto se utilizará en la compra de equipos y capital de trabajo. La estructura de capital estará distribuida con 60% de deuda y 40% de capital propio teniendo una relación D/E de 1.5. Finalmente, luego de realizar el análisis financiero se obtiene un VAN de s/ 271,680 y una TIR de 32% considerando una tasa de descuento del 13.65%, por lo que se concluye que el proyecto es rentable, viable y genera valor. / The present research work aims to evaluate the desirability, commercial feasibility and financial viability of creating and implementing a restaurant specialized in healthy food with special attention to people who want to take care of their diet to control non-communicable diseases (diabetes, hypertension, obesity and others). The proposed business contains the market analysis considering world trends that show sustained growth in the interest of maintaining a healthy life through healthy eating. The restaurant is aimed at people with non-communicable diseases with NSE A and B, over 18 years of age with purchasing power, modern, progressive and sophisticated who prioritize their diet with nutritional care. In addition, a market survey was carried out in order to identify necessary information that validates and helps define the business model. The restaurant will be in Miraflores, which will operate providing lunch and dinner. The menu will be designed and supervised by a highly qualified Chef and a specialized nutritionist.
