Fenolni potencijal uljanih pogača / Polyphenol potential of oil cakes

<p>U okviru disertacije ispitana je mogućnost eksploatacije nusproizvoda (nastalih tokom procesa hladnog presovanja ulja) kao izvora prirodnih fenolnih kiselina. Odabir je obuhvatio uzorke uljane tikve, crnog kima, lana i nara. Radi oslobađanja vezanih fenolnih kiselina i u cilju procene njihovog ukupnog sadržaja i distribucije (u čvrstim uzorcima), primenjena je alkalna hidroliza sa dodatkom L-askorbinske kiseline i EDTA. Dobijeni rezultati pokazuju da se sve analizirane pogače mogu se koristiti za dobijanje vrednih fenolnih kiselina, pri čemu raspodela fenolnih kiselina zavisi od vrste uljane pogače. Koncentracija slobodnih fenolnih kiselina se pokazala značajnom za pogaču uljane tikve, estarski vezanih za pogače nara i lana, a nerastvornih-vezanih za pogače crnog kima i nara. Od svih analiziranih uzoraka kora nara je sadržala najvi&scaron;e estarski vezanih fenolnih kiselina zahvaljujući veoma visokom sadržaju galne kiseline. Nakon određivanja fenolnih kiselina u nusproizvodima, analiza glavnih komponenti (PCA) je omogućila razdvajanje biljnih uzoraka u grupe prema poreklu i smanjila broj fenolnih kiselina neophodnih za njihovu karakterizaciju, &scaron;to može imati potencijalnu primenu u skriningu fenolnih kiselina i određivanju kvaliteta/autentičnosti uljarica i njihovih nusproizvoda.</p> / <p>Within the thesis, the possibility of by-products (formed during the process of cold oil pressing) exploitation as a source of natural phenolic acids was examined. Selection of the samples included pumpkin, black cumin, flax and pomegranate. For the purpose of bonded phenolic acids release and for the total phenolic acids content and distribution (in the solid samples) assessment, the alkaline hydrolysis with the addition of L-ascorbic acid and EDTA was employed. The results show that all analyzed cakes can be used to obtain valuable phenolic acids, while the distribution of phenolic acids depends on the type of oil cakes. The concentration of free phenolic acids proved to be significant for a pumpkin oil cake, ester for pomegranate and flax oil cakes, and insoluble-bound for black cumin and pomegranate oil cakes. Of all analyzed samples, pomegranate hull contains the highest content of ester-linked phenolic acids, due to a very high content of gallic acid. After phenolic acids determination in the by-products, principal components analysis (PCA) allowed the separation of plant samples in groups according to origin and reduced the number of phenolic acids necessary for their characterization, which may have potential application in the screening of phenolic acids and determining the quality/authenticity oilseeds and their by-products.</p>

Novelty of the research. The investigation focused on five oil pumpkin varieties. Biochemical composition, sensory characteristics and nutritious value of oil pumpkin seeds as well as of oil, seed cake and fruit cake were established and compared in in the course of this investigation. This work established differencies among the genotype of varieties and correlative dependencies between chemical composition indices of pulp, seeds and oil of some pumpkins and meteorological conditions (duration of sunshine, precipitation, temperature). Chemical composition of oil pumpkin fruit pulp and oil depends on the variety genotipe. Meteorological conditions had stronger influence on chemical composition of oil pumpkin seeds than on that of their pulp: amounts of raw, NDF and MADF cellular tissues, raw proteins and crude fats were influenced by duration of sunshine and sum of active temperatures. Amount of precipitation stimulated accumulation of raw and NDF cellular tissue only. Practical value of the work. Big amount of valuable proteins, fats and mineral materials makes pulp, seeds, oil and cake of oil pumpkin fruits an alternative plant raw material for food and/or additive for development of innovative products. / Darbo mokslinis naujumas. Buvo tirtos penkios aliejinių moliūgų veislės. Eksperimento metu nustatyta ir palyginta ne tik aliejinių moliūgų sėklų, bet ir aliejaus, sėklų išspaudų, vaisiaus minkštimo biocheminė sudėtis, juslinės savybės ir maistinė vertė. Nustatyti skirtumai tarp veislių genotipo, koreliaciniai priklausomumai tarp kai kurių moliūgų minkštimo, sėklų, aliejaus cheminės sudėties rodiklių ir meteorologinių sąlygų (saulės spindėjimo trukmės, kritulių, temperatūros). Aliejinių moliūgų vaisių minkštimo bei aliejaus cheminė sudėtis prikluso nuo veislės genotipo. Meteorologinės sąlygos daugiau įtakos turėjo aliejinių moliūgų sėklų nei jų minkštimo cheminei sudėčiai: žalios, NDF ir MADF ląstelienų, žalių baltymų ir žalių riebalų kiekiams - saulės spindėjimo trukmė ir aktyvių temperatūrų suma. Iškritusių kritulių kiekis skatino tik žalios ir NDF ląstelienos kaupimąsi. Darbo praktinė vertė. Aliejinių moliūgų vaisiaus minkštimas, sėklos, aliejus ir išspaudos dėl juose esančio didelio kiekio vertingų baltymų, riebalų ir mineralinių medžiagų gali būti alternatyvi augalinė maisto žaliava ir/ar priedas inovatyviems produktams kurti.

Evaluation of oil cakes from Amarula (Sclerocarya birrea), Macadamia (Integrifolia) and Baobab (Adansonia digitate L.) as protein supplements for ruminant diets

The current research was done to evaluate the nutritive values and the ruminal degradation of dry matter (DM) and crude protein (CP) from three non-conventional oil cakes, viz: amarula (Sclerocarya birrea) (AOC), macadamia (Integrifolia) (MOC) and baobab (Adansonia digitate L.) (BOC). The oil cakes were collected from biodiesel producers in Limpopo Province, transported to the ARC-Animal Production campus, where proximate and ruminal nutrient degradation analysis were conducted. Triplicates samples from each oil cake were analyzed for the nutritive values, mineral and amino acids contents. Three rumen cannulated mid-lactating (days in milk; DIM: 180±5) Holstein cows weighing 667±43 kg body weight were allocated to determine the in situ ruminal dry matter (DM) and crude protein (CP) degradation. The cows were offered a totally mixed ration (TMR) (60 concentrate: 40 forage ratio) that was compounded according to their daily nutrient requirements, and were milking was done twice per day at 12 hrs intervals. The three oil cake samples were ground using a 2-mm screen after which sub-samples (6.5 g) were put in 10 x 20 cm; 50 μm pore size polyester bags to achieve 15 mg/cm² (ratio of the sample size to surface area). The bags were then fistulated in each cow’s rumen in triplicate for a period of 2, 4, 8, 16, 24, or 48 hrs. After being incubated, the bags were removed from the rumen and washed with cold (4°C) water in 20-L buckets. Following immersing in cold water, the bags were machine washed until clean water was obtained. The bags were then dried at 60 °C in an oven for 48 hrs. The dried bags were individually weighed, and the content of each bag were removed and stored into glass vial until analysis. The remaining two duplicate sets of each sample were rinsed using cold water in order to determine solubility at 0 hrs. The AOC had higher (P<0.05) ether extract (EE) and CP content than both BOC and MOC. Macadamia oilcake (MOC) and BOC had higher (P<0.05) fractions of fibre (NDF, ADF and ADL) compared to the AOC. The AOC had greater (P<0.05) content of essential amino acids than in the BOC and MOC. Additionally, AOC had a high (P<0.05) phosphorus, but low calcium and potassium concentration. While AOC had high effective degradability of DM, it also had high water soluble as well as DM and CP rapidly degradable fractions. Effective degradation of CP was higher in AOC and BOC than in MOC. However, BOC had a high insoluble but degradable fraction of CP.
