AvaliaÃÃo do Potencial LipÃdico, ProtÃico e Antioxidante de ResÃduos de IndÃstrias de Processamento de Frutas e Emprego de CO2 SupercrÃtico no Estudo de MetabÃlitos SecundÃrios / Evaluation of Potential Lipid, Protein and Antioxidant Waste Fruit Processing Industries and Employment of Supercritical CO2 in the Study of Secondary Metabolites

Esta dissertaÃÃo relata os resultados obtidos na avaliaÃÃo do potencial protÃico, lipÃdico e antioxidante das sementes de acerola (Malphigia glabra), graviola (Annona muricata), maracujà (Passiflora edulis), oiti (Moquilea tomentosa), manga (Mangifera indica), sapoti (Achras sapota), goiaba (Psidium guajava), ameixa (Prunus domestica), mamÃo (Carica papaya), ciriguela (Spondias purpÃrea), morango (Fragaria vesca), murici (Byrsonyma crassifolia), abacaxi (Ananas comosus) e tamarindo (Tamarindus indica) e estudo de metabÃlitos secundÃrios das sementes de maracujà empregando CO2 supercrÃtico como processo de extraÃÃo seletiva. O teor protÃico foi avaliado pelo mÃtodo de bradford, trata-se de um mÃtodo espectrofotomÃtrico que consiste em avaliar a variaÃÃo da absorbÃncia do corante comassie brilliant blue. O potencial antioxidante foi determinado pelas tÃcnicas de DHBA (baseado na inibiÃÃo da formaÃÃo do Ãcido di-hidrÃxibenzÃico) e DPPH (consiste na captura do radical livre DPPH). O teor lipÃdico foi avaliado pela anÃlise em CG/EM e CG/DIC dos Ãsteres dos Ãcidos graxos obtidos por extraÃÃo hexÃnica e em CO2 supercrÃtico. As amostras apresentaram considerÃvel teor protÃico e lipÃdico, bem como, atividade antioxidante em ambos os mÃtodos. Estudaram-se os metabÃlitos secundÃrios das sementes de maracujà que foram extraÃdos seletivamente por CO2 em estado supercrÃtico, alterando-se condiÃÃes de temperatura, pressÃo e teor de co-solvente para selecionar classes de compostos na extraÃÃo. / This work presents the results obtained in the evaluation of the purport of protein, lipid and antioxidant potential of the acerola seeds (Malphigia glabra), graviola (Annona muricata), passion fruit (Passiflora edulis), oiti (Moquilea tomentosa), mango (Mangifera indica), sapoti (Achras sapota), guava (Psidium guajava), plum (Prunus domestica), papaya (Carica papaya), ciriguela (Spondias purpurea), strawberry (Fragaria vesca), murici (Byrsonyma crassifolia), pineapple (Ananas comosus) and tamarind (Tamarindus indica) and study of secondary metabolites of the passion fruit seed using supercritical CO2 as process of selective extraction. The tenor of protein was evaluated by the bradford method, it is treated of a spectrofotometric method that consists of evaluating the variation of the absorbance of the comassie brilliant blue color. The antioxidant potential was certain by the techniques of DHBA (based on the inhibition of the formation of the acid di-hidrÃxibenzÃico) and DPPH (it consists of the capture of the free radical DPPH). The tenor of lipid was evaluated by the analysis in GC/MS and GC/FID of the fatty acids obtained by extraction in hexane and in supercritical CO2. The samples presented considerable tenor of protein and lipid, as well as, antioxidant activity in both methods. Was studied the secondary metabolites of the passion fruit seed that they were extracted selectivity for CO2 in supercritical state, changing conditions of temperature, pressure and co-solvent content to select classes of compositions in the extraction.
