Impact of ingredient selection on rheological properties of a semi-liquid syrup model for use in pulp/paste candyStangl, Kimberly January 1900 (has links)
Master of Science / Food Science / Sajid Alavi / Pulp/paste candy is popular in Mexico and is gaining popularity around the world. Pulp/paste candy is characterized as a soft, semi-fluid candy with particles in a colloidal suspension, typically squeezed out of the package for consumption. It is made by hydrating gums in water and mixing them with corn syrup, acid, powdered/pulverized sugar, and other minor ingredients yielding a product around 80°Brix and pH between 2-3. Over time the sucrose in the candy tends to invert, causing two types of failure: package leakage and solidification in package. Based on the findings of previous work from Molina-Rubio et al. (2010), a modified semi-liquid syrup model system was created with corn syrup, sugar, gums, and water. The model system was used to identify the influence these ingredients had on viscosity and texture since these factors are linked to the typical modes of failure in pulp/paste candy. An oscillatory sweep was used on a controlled force rheometer to identify the linear viscoelastic range. Oneway ANOVA with Tukey HSD was used to compare % total solids levels with complex viscosity at 0.1 rad/sec (there was a significant difference between all levels) and minimum tan (delta) (mid and high level were similar). Using a stepwise method, ANOVA models were generated that showed statistically significant effects on complex viscosity for gum level and sugar level as well as interactions (p < 0.05) between invert syrup-water, gum-water, and sugar type-water. The type of gum and the amount of corn syrup used didn’t significantly impact on the viscosity of the system. Using probe tests helped to analyze samples that were too thick for the rheometer. Analysis showed an inflection point for exponentially increased hardness (85-93%TS) that should be further investigated. The stepwise regression model generated for stickiness showed that the invert syrup-water interaction was significant along with gum type. These results are applicable to the confectionery industry and can help companies test and create a candy that meets the packaging and shelf life constraints that they desire. Targeting invert syrup-water levels and the hydration of the gum will have the most impact on the final product’s viscosity and stickiness, which are important for primary package filling and storage. To create an easy to eat candy, no invert syrup should be used in formulation and gellan gum would be better to use than xanthan. Higher solids (> 85%) should also be avoided since it would create a candy that is harder to squeeze out of the package due to higher viscosity and textural hardness.

This thesis examines the extent to which sugar bush management in Eastern Ontario might contribute to biodiversity maintenance and conservation and therefore be promoted as a form of rural sustainable development. Ontario government policy seeks to actively promote actions that strengthen the province’s rural communities and protect biodiversity. Therefore sustainable development is an important concept to encourage in rural areas. The production of maple syrup on sugar bushes has already been demonstrated to be economically, socially, and in some aspects ecologically sustainable. This study seeks to determine how the operation of sugar bushes might also contribute to ecological sustainability through the maintenance and conservation of forest biodiversity.
I identified three documents published by the Eastern Ontario Model Forest (EOMF): a set of management principles for conserving biodiversity on private woodlots, a list of biodiversity indicators, and a manual for monitoring them. I monitored three of the biodiversity indicators (spring ephemerals, birds, and frogs) on three of the larger sugar bushes in the Eastern Ontario and established that the EOMF biodiversity monitoring practices and guidelines were suitable for working sugar bushes. Using the management principles for biodiversity conservation developed by the EOMF, I interviewed 22 sugar bush operators in Eastern Ontario. With these interviews I addressed two objectives:
1. To generate empirical information regarding the management practices of maple sugar bush operators in Eastern Ontario and to compare these with established management principles for forest biodiversity conservation in the region
2. To generate suggestions for woodlot operators and government policymakers alike about future opportunities for research and management decision-making.
The results of the study show that although most operators do not have a formal management plan for their sugar bush, many of their management practices are consistent with prescribed biodiversity conservation principles. Sugar bush operators are receptive to conserving biodiversity on their properties. The findings suggest that through sound management and planning, small-scale commercial sugar bush operations generally can be made environmentally sustainable, and become important components in broader rural development strategies.
This study provides new insights into how small-scale sugar bush management, when practiced well, is consistent with conservation principles and with sustainable development principles more generally. It shows how sugar bush operators in Eastern Ontario can help the province reach its goals of biodiversity conservation and rural development set out in Ontario’s Biodiversity Strategy (2005) and Ontario’s Rural Plan (2004).

Evaluation of a Maltodextrin Gel as a Partial Replacement for Fat in a High-Ratio White-Layer Cake FormulationArchilla, Leslie Lumari 13 August 1999 (has links)
The performance of a maltodextrin gel as a replacement (25, 50, 75, and 100%) for shortening along with high-fructose corn syrup-90 (HFCS-90), adjusted for sweetness in each treatment, were evaluated in a high-ratio white-layer cake formulation. Two controls were used to compare to fat-replaced cakes: control A (100% fat with 100% sucrose) and control B (100% fat with 50% sucrose/50% HFCS-90), which closely matched the sugar system of the fat-replaced cakes. Objective tests indicated that treatments D (50%), E (75%), and F (100%) had significantly higher (P<0.05) batter specific gravity values compared to both controls. Batter specific gravity, however, only significantly decreased (P<0.05) the volume of treatment F. Crust and crumb L and b values, indicated that control B produced a dark crust (P<0.05) with a light crumb (P<0.05), while treatment E produced a light crust (P<0.05) and treatment F a darker crumb (P<0.05). Treatment F produced a firm cake (P<0.05) with significantly (P<0.05) high percent moisture. Overall, no significant differences (Pâ⠰¥0.05) in water activity were found among treatments over time; in contrast, degree of staling significantly increased (P<0.05) over time for all treatments. Sensory results indicated that treatment F produced a significantly (P<0.05) moister, shorter, less adhesive and cohesive cake. Tenderness and sweetness scores indicated that treatments E and F were significantly (P<0.05) tougher and less sweet, respectively, when compared to the other treatments. Results from physical and sensory tests indicated that the combination of a maltodextrin gel and HFCS-90, up to 75% shortening replacement, resulted in satisfactory cakes. / Master of Science

Maple Syrup in Appalachia: A Sustainable Economic Development OpportunityGrizzard, Daniel Howell 22 May 2023 (has links)
Many parts of Appalachia, including areas of Virginia, West Virginia, and Maryland, lag behind much of the country in key socioeconomic indicators. There is a need for economic development opportunities that leverage the region's natural resources in a sustainable manner. This study investigates the feasibility of using maple syrup production as an economic development strategy. This study is broken into three sections, the first is a survey of current maple syrup producers to investigate how syrup is produced and sold in this region. This survey is followed by a pricing analysis that was conducted to ascertain the feasibility of small-scale producers competing with often larger and well-established Northeastern maple syrup producers. The final chapter is an economic impact analysis of the Highland County Maple Festival. This analysis was conducted to learn about the current impacts of maple syrup agritourism for producers and the communities they operate in. Findings from this study indicate that the maple syrup industry in Maryland, Virginia, and West Virginia is smaller and more localized than the industry in the Northeastern United States and Canada. However, the difference in how maple syrup is sold can provide many potential benefits for Appalachian communities. A localized approach to selling maple syrup that relies on attracting visitors to farms has the potential to create an economic stimulus for not only maple syrup producers, but also the communities in which they operate. / Master of Science / The Appalachian region of the United States has higher rates of poverty than the rest of the country. Many rural communities in Appalachia are also losing population. Due to these factors, there is a need for the development of new ways to bring money and jobs into Appalachian communities.
