The diploma thesis “Quality of wine affected by sulphurization” is focused on problems related to sulphur dioxide and its influence on technological and sensory quality of wine. The theoretical part of the thesis briefly describes the production of wine, describes various forms of sulphur dioxide in wine and its bonds with various components of wine. There are also outlined ways of the sulphurizing wine, dosing as well as how sulphur dioxide can be reduced by other technologies or by substituting it with other substances. The practical part of the thesis then verifies the effect of sulphur dioxide to the content of acids, reducing sugars and alcohol in wine. The effect of sulphur dioxide to the colour intensity of selected varieties of white and red wines is investigated. The wine is then also reviewed sensory to evaluate the effects of sulphur dioxide to the quality of the wine comprehensively. The results show sulphur dioxide affects the colour intensity. If the wine contains more sulphur dioxide, the colour of the wine is lighter. This difference is more evident in red wines. Sulphur dioxide has no influence to parameters such as reducing sugars, alcohol and acids. Wines with lower content of sulphur dioxide are more sensory acceptable.

Kvalita vajec finálních hybridů nosného typu chovaných v klecové technologii

The thesis deals with the evaluation of egg quality of final hybrids of the layer type for alternative husbandry system housed in the cage system. Evaluation of the quality of eggs was carried out in six hybrids Bowans Sperwer, Dekalb White, ISA Dual, ISA Sussex, Moravia Barred and Moravia BSL at regular intervals of four weeks. Altogether 900 eggs were analysed. The monitored parameters included: the egg weight, shape index of egg, yolk weight, yolk colour, yolk percentage, albumen weight, albumen percentage, and Haugh units, further the eggshell weight, eggshell percentage, eggshell thickness, strength and eggshell colour. There were also monitored the blood and meat spots. The highest average egg weight, albumen weight and albumen proportion were detected in Moravia BSL. ISA Sussex had the highest average eggshell weight, eggshell strength and eggshell thickness. The lowest presence of blood and meat spots were found in Dekalb White. Bowans Sperwer had the darkest eggshell colour.

The main aim of the thesis The quality of toast breads affected by fibre was to suggest a recipe with addition of wheat fibre (WF 600), potato fibre (KF 200), apple fibre (AF 12) and combination of wheat fibre and psyllium (WF 600 + P 95) in amounts of 3 %, 6 % a 9 % and further to assess the effect of added fibre to the quality of bread. I have done a baking experiment, a sensory analysis, universal tensile and pressure test. I´ve defined a colour of crumb and calculated nutritive value. The results were processed in Statistica 12 and MS Excel programmes. The addiotion of 3 % of psyllium and wheat fibre and 3 % of potato fibre had the best effect on bread volume. The bread with addition of apple fibre was the darkest colour, while the bread with addition of wheat fibre was the lightest one. A sample with 9 % of psyllium and wheat fibre was the softest one. A control sample had the highest nutritive value and the bread with 9 % of psyllium and wheat fibre had the lowest one.

Preference minoritního fenotypu v pohlavním výběru u člověka / The role of minority type preference in human sexual selection

Minority phenotype preference, or the negative frequency-dependent selection is a type of selection, where a feature is more preferred, the lower it's frequency is in the population. Even a weak effect in other-preference based sexual selection can result in a sustainable polymorphism. This study reviews the phenomenon in the context of human visual facial features. Common trends in attractiveness shape the morphology of the human face towards uniformity. Individual recognition however, as a condition for most social relations, uses the wast variability of different features. This variability could be formed and maintained by minority phenotype preference. In our study we tested the effect of minority phenotype preference in the selection for rare hair and eye colors. In 120 unique sets, each containing six photographs, we experimentally manipulated the frequency of each color type. These sets were then shown to 226 human raters. We tested whether the relative frequency of each color type affected the rating of individual stimuli. In hair color, significant effect of minority phenotype preference was detected when females rated the photographs of men. The aim of this thesis is to depict the social and political state of South Africa during the apartheid and after in two novels, Dance with a Poor Man's Daughter (1998) by Pamela Jooste and Disgrace (1999) by J. M. Coetzee. The Theoretical Part analyses the apartheid as a political ideology which is based on racial segregation and its projection in ordinary life. The Practical Part shows concrete features of apartheid and post-apartheid in the aforementioned novels.

Jiří Jančík ABSTRACT: This diploma thesis concerns the etymological analyses of colour names in the French language and related idioms. In the theoretical part we present the basic linguistic terminology necessary for the accomplishment of the etymological analyses; the practical part concerns the analyses itself. The objective of the thesis is to deeply analyze the six basic colours both from the etymological and symbolic point of view. Furthermore, the thesis concerns the etymological analyses of colours the names of which are to some extend specific and remarkable. We talk about colours like: fox tail, bonbon, the Berlin blue, tea, khaki, pearl or snow, divided into groups according to the word they contain (colours containing a name of an animal, food, liquid, material, the place of origin, etc.). These colours are examined not only etymologically; we are also interested in the reason for which they are called so. The aim of the thesis on "Evaluation of the color of honey" was to determine why the instrument can not Lovibond Honey Colorpod 440110 to evaluate color of all types of honey and compare results of with spectrophotometric measurement methods. The work is divided into theoretical and practical part. The theoretical part is dedicated to honey, its composition and methods of evaluating color. The practical part describes the results obtained instrument Lovibond Honey Colorpod -- 440110, spectrophotometers Konica Minolta -- 3500d a FT -- NIR Antaris. In UV/VIS region not been demonstrated reason of errors of photometer. Maximum lightness had a very light honeys and the largest share of yellow had light honey. The highest values of absorbance attain dark honeys. In color space CIE L* a* b* had the largest share of red. Evaluation of the color of honey in the UV/VIS can not prove adulteration of honey always unambiguously, but there are signs by which honey can be described as suspicious. By analyzing the NIR spectrum is falsification of honey demonstrated using discriminant analysis.

The gibbon primates of the family Nomascus are classified as critically endangered species, and, to date, basic understanding and information about their biology is missing. With regard to the status of these animals in the wild and captive populations in zoos, being familiar with their reproduction, may improve captive breeding programs. Data collection in this study was to be carried out by the practical use of non-invasive methods (polymerase chain reaction for DNA extraction and enzyme immunoassays), using faecal samples for analysis. The first method, polymerase chain reaction, was used for sex determination in juveniles, because of their coat colour and visual similarity of secondary sex characteristic in both sexes; it is not possible to determinate sex without handling the animal. Another main purpose of this study is to try and answer the hypothesis regarding the ovarian cycle of females, factors influencing their hormone concentration and also the onset of sexual maturity in females and the timing of their fur colour change. Hypotheses were checked by monitoring the concentration of progesterone and oestrogen faecal metabolites and by evaluation of the composition of breeding groups of gibbons with the ZOO influence. During a four year period (from 2010 till 2014), there were a total of 51 animals analysed from 16 different zoos with a faecal sample count totalling 1618 samples. The results confirmed the use of noninvasive methods for sex determination, and thus ensuring the maximum welfare standards. Endocrinological analysis confirmed the hypothesis of the influence of the environment (ZOO) to the hormone concentrations and female´s pregnancy effect in conjunction with her age on the final results of the male - father hormone concentrations. The initial information in this study is the confirmation of the onset of ovarian cycle in young females without connection to their fur colour change and a significant factor of a mother´s impact and her territoriality. This study is the first to present a long term monitoring of ovarian cycles in females and hormone concentrations of other individuals, both male and female, and from various age groups. The results allow us to understand the possible impact of zoo environments on the reproductive status of these gibbons and contribute to the general improvement of breeding management.
