HACCP-Implementering och tillsyn

Axelsson, Christer January 2008 (has links)

The food-safety legislation in Sweden were changed and updated in 1996, much because of demands from the European Union for a common legislation regarding the food-safety issues in the EU. This report discusses how the Swedish authorities are dealing with the new legislation in Sweden. Further on the report presents how the food safety officers in the municipalities in Sweden are implementing this new legislation in their daily work, especially the requirements regarding the HACCP, Hazard Analysis Control and Checkpoints. The report shows that the implementation is quite slow and that many foodsafety-officers don’t implement the legislation in the same way all over the country. In some parts of Sweden the officers demands a complete Hazard-analysisplan with Critical checkpoints while in other parts of Sweden the are not the same demands. The reason to why this is possible may be the educational differences between the food safety officers in Sweden. In some municipalities the officers are well educated about the new legislation including HACCP while other municipalities don’t afford or take the time to educate their officers. The report also shows that the knowledge of the new legislation is poor among the people who work in the food-section.

Maneechansook, Chanerin January 2011 (has links)
Thailand is a leading rice exporting country that exports rice for one-third of world‟s export volume. Rice from Thailand is exported to markets in every part of the world including Sweden. Thai rice products are available to be accessed by Swedish consumers in supermarket generally. The purposes of this study are to analyze the entire chain of rice starting from farm in Thailand to consumers in Sweden. Stakeholders in the chain are examined and value-added by each stakeholder is defined. Role of governance in the chain is analyzed to underline the governance relationships and interaction of actors. Moreover, roles of government institution are examined to describe its impact on the chain. Data for the analyses are collected through two activities which include a review of relevant literature and gathering from government offices of Thailand and international institutes. The results of the study reveal that there are at least twelve actors involving in the value chain of rice exported from Thailand to Sweden which include farmers, local collectors, farmer‟s organization, central market, millers, brokers, wholesalers, retailers, exporters, International rice traders and brokers, Associated Marketing Services (AMS), Swedish importers and Swedish consumers. Rice from producers is taken through numbers of path before it‟s reached to consumers. Value of rice is raised along the chain it is taken through according to the costs incurred and marketing margin of each stakeholders. Profits are shared largely to stakeholders who have high bargaining power which are millers and exporters. The governance in domestic rice market goes forth and back along the chain. Prices of rice are influenced by local supply and demand of both local and international consumption. The policy measures adopted by Thai government create affects to the rice value chain to some extent; anyhow the chain typically adjusts itself by the market mechanism of demand and supply. Swedish government applies EU legislation in the country since Sweden has become the member of the European Union in 1995. Further to EU legislation, there are non-legislative requirements developed by market itself that rice exporters must be aware. / Program: Magisterutbildning i företagsekonomi

Aplikace nových legislativních předpisů v označování potravin a výrobků z nich v České republice / Application of new legislation on the labeling of food products into the Czech Republic

PROCHÁZKOVÁ, Helena January 2017 (has links)
Labels used on refreshments provide consumers simple, comprehensible and consistent information about packaged foods and enables them to make wiser choices. Food packages contain a link between agricultural commodities and consumable forms of food known to consumers. Labels act as a silent selling point through distinctive brands since it help the customers choose between products and keep a check on the amount of foods they are eating that are high in fat, salt and added sugars for example. Secondly, it facilitates the identification in the barcode system. The aim of this work is to compare refreshments from different sectors of the food industry from the view point of current legislation in European Union and Czech Republic. The comparison was carried out by selecting refreshments sold in Czech Republic compared to Belgium. On the basis of information gathered from the labels and questionnaire we can assess the importance of labeling when packaging products for consumer. Some local differences were recorded, eg in the case of minced meat sold in Belgium there were 4 certification logos; in the Czech Republic, on the other hand, the meat content of ham or packaged salami was stated. The questionnaire survey showed that consumers mostly follow the information on the labels, differently when buying food and monitoring the information on the labels by women and men, the age and education of respondents, and the nationality in this case almost does not matter. The results show that food packaging and labeling information needs to be given much higher attention from both parties consumers and manufacturers.

Potravinářská legislativa EU a ČR a její implementace v potravinářských provozech / Food Legislation of EU and The Czech Republic - Implementation by Food Industry

ŘÍHA, Michal January 2012 (has links)
This work describes the development of legislative provisions relating to the issue of animal products as food, issued in the CR and the EU. This work also reports their implementation in food businesses, particularly in terms of data provided on product labels. During this work product labels were collected in selected chain stores, documented by photography and the obtained results were compared with the applicable requirements of the CR. The observed data of this study are also compared with the requirements of Act No. 110/1997 Coll. Food, and Decree No. 113/2005 Coll. Individual products of the investigated area (meat and dairy products) are also compared with each other (Point method and Simplified Point Method) and in terms of significance, consumer attention and other appurtenances associated with data on product labels were surveyed. The results revealed a strong dominance of Czech manufacturers on our market in categories of both milk and meat products. In terms of characteristics that producers are obliged to provide, no significant errors were found. If the products lacked any indication, it was usually an indication of dietary (nutritional) value for both meat and dairy products. Manufacturers of the products studied provided a large number of optional information (logos, etc.). We conclude they should rather focus on some of consumer-preferred emblems, for there is high number of them and they seem difficult to follow by the customers. Most consumers prefer the Klasa and the ?Český výrobek? (Czech product) logos.

Starostová, Andrea January 2013 (has links)
