Metabolic effects of incremental exercise on Arabian horses fed diets containing corn oil and soy lecithin

Feeding a fat-containing diet to the exercising horse is a facile way to increase energy density without risking the complications associated with hydrolyzable carbohydrates. Fat adaptation may also result in increases in the utilization of free fatty acids for fuel during exercise and sparing of muscle glycogen. Phosphatidylcholine, the main component of lecithins, can influence muscle contraction and improve endurance capacity during exercise. When it is combined with corn oil in a total mixed ration, soy lecithin is both highly digestible and palatable to horses. Our objectives in this study were to compare the effects of incremental exercise and isocaloric control (CON), corn oil (CO), and a soy lecithin/corn oil (LE) diets on plasma free fatty acids (FFA), cholesterol, glycerol, triglyceride (TG), lactate, and glucose. Also three different statistical models were compared for goodness of fit to the lactate curve. Plasma lactate and glucose both increased slowly early in the incremental exercise test (IET), then increased rapidly as the work intensity increased. Both decreased during recovery. No effects of IET or diet were found for either of these variables. Plasma TG was unchanged during exercise, but increased rapidly during recovery. Plasma FFA decreased from resting early in the IET then remained steady throughout the remainder of exercise. During recovery a rapid increase was exhibited. Plasma glycerol was constant during exercise, but increased during recovery. Plasma cholesterol did not change during exercise or recovery. Diet affected plasma FFA. Plasma FFA were lower for the CO and LE diets than the CON diet during the IET. Plasma glycerol was lower for the CO diet than the CON diet during the IET, with the LE diet intermediate between the two. Plasma cholesterol was higher for the CO and LE diets than the CON diet during the IET. A segmented model and an exponential model were found to have a good fit to the lactate curve. A point of inflection for a rapid increase in plasma lactate during incremental exercise was discovered. When this model was applied to diet, no differences in lactate threshold were found between the diets. Some criteria for fat adaptation were met, namely diet affected plasma FFA, glycerol, and cholesterol. However diet did not affect plasma TG, lactate, or glucose. This indicates that the rate of fatty acid oxidation was increased following fat adaptation, but it did not affect the rate of glucose oxidation and glycolysis during exercise. A lactate threshold for the equine can be obtained using a broken line model. Further studies using this approach are needed to establish its correlation with performance. / Master of Science

Denna uppsats ingår inom det vetenskapliga fältet Fat Studies där målet är att utmana den stigmatisering som överviktiga individer upplever socialt och psykiskt. Syftet med denna uppsats är att studera hur överviktiga karaktärer porträtteras i den amerikanska reality-serien Here Comes Honey Boo Boo samt hur genus och klass representeras i relation till fetma. Mina frågeställningar är följande: 1) På vilket sätt porträtteras de överviktiga karaktärerna i tv-serien Here Comes Honey Boo Boo? samt 2) Hur representeras genus och klass i relation till fetma Here Comes Honey Boo Boo? Mitt metodval ingår inom den kvalitativa innehållsanalysen. Jag har applicerat en textanalytisk metod på mitt studieobjekt där jag kartlagt nyckelscener och huvudteman. Jag har i relation till uppsatsens syfte försökt finna återkommande mönster att bygga min analys på. Den teoretiska begreppsramen består av Stuart Halls (2013) representationsteorier samt Bakthins (1984) begrepp carnivalesque. Sedan vävs begreppet panopticism in med understöd av Betterton (1996) och Kristevas (1982) teoretiseringar för att erhålla en allmän bild om hur kvinnan relateras till sin vikt. För att teoretisera begreppen klass och genus i relation till fetma används begreppsförklaringar tagna från Rothblum och Solovays (2009) antologi The Fat Readers studie. Studien visar flera intressanta resultat i relation till teoretiseringen. Det mest utmärkande resultatet är att serien Here Comes Honey Boo Boo försämrar den rådande bilden som finns av överviktiga individer genom att porträttera dem på ett förlöjligande, humoristiskt och groteskt sätt. Kroppsliga reaktioner och andra djuriska instinkter är ett genomgående inslag i serien och tyder på att Here Comes Honey Boo Boo är en serie vars handling utgår från begreppet carnivalesques grunder. Ett överraskande resultat är det faktum att överviktiga män och kvinnor porträtteras på olika sätt i serien trots att kroppshyddorna är lika stora. Det var svårt att borste från aspekter som klass och genus i relation till fetma, de är närvarande i form av kroppen som klassbeteckning och skillnader i representationer mellan könen.

Scientific Considerations of Olestra as a Fat Substitute

Olestra is, a sucrose polyester, a noncaloric fat substitute, made from sucrose and several fatty acid esters. It has been approved by the FDA as a food additive used in preparing low-fat deep-frying foods such as savory snacks. Available literature on olestra was evaluated that had both positive and negative connotations. Clinical trials in numerous species of animals including humans were conducted to determine if olestra would affect the utilization and absorption of macro- and micronutrients; the effects of olestra on growth, reproduction, or its toxicity were also examined. The roles of olestra as a fat substitute, how it could effect on humans and the environment, and the potential impacts from its use in large amounts were assessed. Olestra can be removed from the environment by aerobic bacteria and fungi which may be isolated from activated sludge and soils.

En högfettkost som nutritionsstrategi vid uthållighetsprestation? : En systematisk litteraturstudie / A high fat diet as a nutrition strategy for endurance performance? : A systematic review

Syfte och frågeställningar Syftet med denna litteraturstudie är att undersöka om det finns stöd i nuvarande forskning för att en fettrik kost är mer effektiv som nutritionsstrategi vid uthållighetsprestationer jämfört med en kolhydratrik kost. Studiens frågeställningar är: Förbättras uthållighetsprestationen av en fettrik kost jämfört med en kolhydratrik kost? Hur påverkas kolhydrat- och fettmetabolismen av en högfett- och lågkolhydratkost? Metod Litteratursökningen genomfördes i databaserna Ebsco, Pubmed och Cinahl. Totalt inkluderades 16 artiklar, 11 artiklar från litteratursökningen i databaserna och 5 artiklar från valda referenslistor. Studierna kvalitetsgranskades med hjälp av SBU:s granskningsmall för randomiserade kontrollerade studier. Resultat I 3 av 16 studier förbättrades uthållighetprestationen vid intag av högfett- och lågkolhydratkost, i 4 av 16 studier försämrades prestationen och i resterande 9 studier sågs ingen signifikant skillnad i prestationen mellan kostinterventionerna. Majoriteten av studierna fick en förhöjd fettoxidation som resultat av en högfett- och lågkolhydratkost men ingen signifikant skillnad gällande blodglukos-, blodinsulin- eller blodlaktatvärde mellan kostinterventionerna. Slutsats Trots en förhöjd fettoxidation och välfyllda glykogenlager finns inte tillräcklig evidens för att påvisa en generell prestationshöjning vid uthållighetsprestationer av en högfettkost jämfört med en högkolhydratkost. Detta troligtvis på grund av nedsatt förmåga hos musklerna att använda glykogen. Resultaten från de studier som ingick i denna systematiska litteraturstudie visar konsekvent en försämrad prestation efter intag av högfett- och lågkolhydratkost vid arbetsintensiteter över 80% av VO2max. Vid arbetsintensiteter omkring 60-70% av VO2max kan prestationen eventuellt förbättras efter intag av högfettkost bestående av 60-70% fett och mindre än 15% kolhydrater. / Aim The purpose of this study is to investigate whether there is scientific evidence that a high fat diet is more effective as a nutrition strategy for endurance performance than a high carbohydrate diet is. The objectives of the study are: Does endurance performance improve by a high fat diet compared by a high carbohydrate diet? How is the metabolism of fat and carbohydrate affected by a high fat and low carbohydrate diet? Method The literature search was conducted in the databases Ebsco, Pubmed and Cinahl. A total of 16 studies was included, 11 studies from the literature search and 5 studies from selected reference lists. The studies quality was audited by SBU: s questionnaire for randomized controlled studies. Results Endurance performance was enhanced after ingesting a high fat- and low carbohydrate diet in 3 of 16 studies and was decreased in 4 of 16 studies. In the remaining 9 studies there was no significant difference in performance between the two trials. A high fat- and low carbohydrate diet resulted in an increased fat oxidation in the majority of the studies but there was no significant difference in bloodglucose-, blodinsulin- or blodlactatelevels between the two trials. Conclusions Despite increased fat oxidation and well-filled glycogen levels there is not sufficient evidence to prove that endurance performance will be enhanced by a high fat diet compared to a high carbohydrate diet. This is probably because of a lower ability of the muscles to use glycogen. The results from this systematic review consequently shows a decreased performance after a high fat- and low carbohydrate diet at work intensities over 80% of VO2max. At intensities around 60-70% of VO2max, the performance can possibly be enhanced after a high fat diet consisting 60-70% of fat and 15% or lower of carbohydrate.

Investigation of How Different Fat Systems and Other Ingredients Affect the Properties of Whipping Creams Based on Vegetable Fat

Whipping creams are oil-in-water emulsion which by whipping can be formed to a foam by the incorporation of air into the system. Traditionally whipping creams are made out of milk but today imitation whipping creams based on vegetable fat has gained a large share of the marked due to their many benefits compared to traditionally whipping creams. Imitation whipping creams are both cheaper and more flexible than traditionally creams. By vary the characteristics of the fat system and the cream recipe the properties of the imitation creams can be adapted to fit the purpose of a specific product. The aim of this thesis was to increase the understanding of how different types of fat systems and other ingredients affect the properties of imitation whipping creams based on vegetable fat. This was done by studying three vegetable fat systems with different physicochemical properties. The properties of the fat systems were characterized and the three fat systems were then used for making different imitation whipping creams. The properties of the creams were characterized and the properties of the fat systems and the creams were assessed and compared with each other. The study showed that the fat characteristics that generally seem to have the highest impact on the properties of whipping creams are the structure, the solid fat content and the crystallization temperature of the fat. A fat solution with a hard structure, a high crystallization temperature and a high solid fat content at a wide range of temperatures overall seem to provide the whipping creams with the best properties. This as these fat properties provide the creams with a high foam stability, a high overrun and a short whipping time. This study has also shown that other ingredients than the fat systems provide the creams with diverging properties. This is best shown by the results of the freeze-thaw stability which indicate that a recipe with a high amount of sugar seem to provide the whipping creams with good freeze-thaw stability. Other properties of the whipping creams also seem to be very much influenced by other ingredients than the fat systems but further studies are needed to provide clarity to the complexity of the interplay of the ingredients in whipped creams.

Use of Extrusion Technology and Fat Replacers to Produce High Protein, Low Fat Cheese

This study investigated the use of extrusion technology and fat replacers to produce high protein, low fat Cheddar cheese. In chapter 3, four different fat replacers were tested at the highest concentration level of each, as recommended by the manufacturers for low fat cheese, to investigate the change in cheese texture and optimize extruder conditions. In addition, the press time/pressure combinations of the extruded cheeses were optimized. The fat replacers and extruder conditions that were effective in improving the texture of low fat cheese were then used in chapter 4. In chapter 4, three fat replacers were used at three different concentrations (lowest, middle and highest) as recommended by the manufacturers for replacing fat in cheese. The fat replacers were microcrystalline cellulose (MCC 1) (0.125%, 1.06% and 2%), whey protein concentrate (WPC 2) (0.50%, 0.75% and 1%) and whey protein concentrate (WPC 1) (0.40%, 2.20% and 4%). These fat replacers were effective in improving the texture of low fat cheese as determined from the results of chapter 3. The extruded cheese samples with and without fat replacers were analyzed for texture at three different time periods (1 day, 1 week, and 1 month). None of the fat replacers used were effective in improving the texture of low fat cheese significantly. Since none of the treatments statistically improved the texture of low fat cheese, in the next part of the study, extrusion alone and WPC 1 at the middle concentration were then used to produce low fat cheese with high protein content by blending low moisture aged Cheddar cheese and nonfat cheese. Extrusion of cheese blends with or without fat replacer yielded cheese with high protein level. It was concluded from the study that the fat replacers we used were not effective in improving the texture but extrusion of aged Cheddar cheese with nonfat cheese can yield high protein cheese.
