FOOD JUSTICE IN POST-INDUSTRIAL US CITIES: THE ROLE OF NONPROFIT ORGANIZATIONS

The primary purposes of this dissertation were to (i) assess and identify post-industrial urban neighborhoods with food-insecure and vulnerable populations, and (ii) explore and analyze the role of nonprofit organizations (NPOs) in addressing place-based food insecurity. The study used mixed-methods, including qualitative GIS, statistical tests, surveys, interviews, and field observations. A food justice theoretical framework was used to develop a Place-Based Food Insecurity and Vulnerability Index (PFIVI), which factored together 33 variables to measure six indicators. The study applied this index in the City of Philadelphia and then examined three types of interventions that NPOs embark on - providing hunger relief, providing healthy and affordable food through the alternative food movement, and offering food-based programs and events tied with community capacity building efforts. Statistical relationships between PFIVI scores and NPO-driven programs showed spatial mismatch issues between the programs and community needs in some neighborhoods. This research also highlighted other limitations of these programs and the challenges that NPOs face both on- and above-the-ground. While the NPOs are trying hard to promote food justice through their mission statements, advocacy, outreach, and on-the-ground programs, the city may have only partially achieved this goal. A lot more needs to be done by strengthening organizational networks, strengthening social networks with community residents, and offering healthy but affordable food in disadvantaged neighborhoods, and NPOs alone should not bear these responsibilities. / Geography

The Impact of Engagement With Community Supported Agriculture on Human Attitude Towards the Sustainable Food Movement

With a total of 164 community supported agriculture programs (CSA), Vermont is leading the "locavore" movement in the United States, ranked number one in the country with the most CSAs and Food Hubs per capita. ("Locavore Index," 2013) CSAs have a large positive impact on reducing carbon emissions, advancing local economic growth, and promoting healthy lifestyles of consumers. The purpose of this study is to explore the overall experience of individuals in comparison to their current social norm, individual attitudes, identity, and intentions of change, and understand any change overtime in their individual attitude and behavior. Attitude change was measured by conducting pre and post surveys of the Intervale Food Hub UVM student members, as well as regression analysis to understand any possible indicators of chance. The data analysis provided understanding of the impact of the Intervale Food Hub's CSA membership on individuals' attitudes, norms, and identity. Survey questions, based on the theory of planned behavior, inquired about individuals' preferences, skills, and behavioral intentions. Because of the complexity of food and human relations, this data was be supplemented by collecting qualitative data to more richly understand the relationship between individuals and their Intervale Food Hub food shares. The conclusion of this study will advance understanding of one form of community supported-agriculture and its impact on human attitudes. Study findings will also aid the staff of the Intervale Food Hub in understanding their customers and implementing more efficient practices.

Farm Design: Functional Architecture in a Family Farming Enterprise

This thesis challenges the argument that farms must grow larger and more specialized in order to survive. The root of this thesis stems from my disdain towards current mainstream industrial methods of farming, attempting to compete in the world market. In theory, current government farm policies are meant to assist and protect farmers on the global market but typically result in protecting the large companies responsible for manifesting the problems in the first place. These key factors have changed the face of the agricultural landscape of North America and have lead to a lost connection between society and their food. These factors have lead me to build upon more sustainable and value-added farm philosophies. Such practices highlight the benefits of small farm enterprises for the farmer, the animals, the environment and society as a whole. The design is in combination a response to the landscape and the local economic niche it functions within. Through physical connection, the architecture highlights the cycles of individual farm elements working together to strengthen the whole farm as system.

Envisioning Pathways toward Transformative Food Systems Change: Understanding the Role of Multi-Stakeholder Engagement at the Culinary and Nutrition Center in Springfield, MA

The alternative food movement claims varied goals such as building environmental sustainability, strengthening local economies, and promoting health equity, yet critics argue that the movement’s transformative potential is threatened by a lack of shared vision. Literature suggests that community-based multi-stakeholder coalitions are a useful tool for building consensus around food systems futures. But what kinds of futures? Home Grown Springfield is a school food initiative aimed at reducing hunger in Springfield, MA by serving healthy, homemade, and locally-sourced meals via the Culinary and Nutrition Center, a brand-new full-service commercial kitchen and storage facility. This qualitative case study examines the engagement process of the Culinary and Nutrition Center’s Advisory Council, a multi-stakeholder coalition convened in 2018 to guide the project. The engagement process was envisioned by the Springfield Food Policy Council, Springfield Public Schools, and Sodexo, and funded by the Henry P. Kendall Foundation. Research findings suggests that engagement of diverse actors promotes expanded project visions, which results in more holistic, progressive, and potentially transformative food systems change. In addition, it reveals challenges around the process of authentic community engagement and the dynamics of power-sharing between project leaders and community members. This research has multiple objectives: 1) to document the first year of the Advisory Council’s process for its own reflection; 2) to demonstrate the need for planners to help facilitate diverse cross-sector engagement for more holistic and progressive regional planning; and 3) to highlight the critical need for community leadership and decision-making in planning for sustainable and equitable community development.
