Avaliação de hidrolisados de caseína como antioxidantes em produtos cárneos e chocolate brancoRossini, Karina January 2008 (has links)
Estudos recentes indicam que os peptídeos obtidos pela hidrolise enzimática da caseína podem apresentar atividades antioxidantes. Neste trabalho, previamente obteve-se os peptídeos através de hidrolise da caseína utilizando as enzimas Alcalase e Flavourzyme (4h, a 50ºC e pH 8), selecionando os que apresentaram as melhores características, in vitro, relativas à atividade antioxidante. A hidrolise enzimática utilizando a enzima Flavourzyme mostrou melhores resultados, com alto valor de proteína solúvel e conteúdo de aminoácidos livres, além de peptídeos de menor peso molecular do que com a Alcalase, como observado nas análises de cromatografia de permeação em gel e eletroforese em gel de poliacrilamida. Os peptídeos de caseína obtidos com a Flavourzyme também apresentaram melhores resultados utilizando o método ABTS na determinação da capacidade antioxidante. O hidrolisado obtido a partir da enzima Flavourzyme foi aplicado em produtos cárneos e em chocolate branco. Em produtos cárneos, os peptídeos de caseína (2.0%) inibiram, efetivamente, a peroxidação lipídica em carne moída (100%) e em carne mecanicamente separada de ave (CMS) (cerca de 20%) indicando que estes peptídeos podem ser utilizados nestes produtos, auxiliando na prevenção da formação de flavor desagradável e aumentando sua vida útil. Relativamente a sua aplicação em chocolate branco, esta adição teve o intuito de inibir escurecimento deste produto, fator considerado como limitante na sua vida-útil sendo conseqüência tanto de reações de escurecimento não enzimático quanto da oxidação de lipídeos. Os parâmetros que indicaram alteração lipidica e reações não enzimáticas foram mensurados em três diferentes amostras de chocolate branco: uma amostra com 0,2%, de manteiga de cacau, de antioxidante sintético Grindox 562, outra com 0,2%, de manteiga de cacau, dos peptídeos de caseína e a terceira amostra sem qualquer tipo de antioxidante. As amostras foram expostas a duas temperaturas diferentes: 20 ± 2 e 28 ± 2ºC. Os resultados das análises realizadas indicaram que as amostras armazenadas à temperatura de 20ºC apresentaram resultados significativamente melhores àqueles das amostras armazenadas à temperatura de 28ºC, relativos ao índice de acidez, à atividade de água, ao índice de peróxido, à cor e às substâncias reativas ao ácido tiobarbitúrico (TBARS), indicando melhor conservação deste produto. Também foi observado que a adição de quaisquer dos antioxidantes empregados não influenciou de forma significativa os resultados obtidos, evidenciandose assim, que o principal parâmetro responsável pelas alterações do chocolate branco em sua vida útil refere-se à temperatura de armazenamento a qual as amostras foram submetidas. / Recent studies indicate that peptides obtained by casein hydrolysis may have antioxidant activity. In this work, previous casein peptides were obtained by enzymatic hydrolysis using Alcalase and Flavourzyme (4h, at 50ºC and pH 8), selecting the ones that showed the best characteristics in vitro, related to the antioxidant activity. The enzymatic hydrolysis using Flavourzyme showed the best results, with higher soluble protein and free amino acid content and producing lower molecular weight peptides than Alcalase, as observed by gel permeation chromatography and polyacrylamide gel electrophoresis. Related to its application in meat products, casein peptides obtained with Flavourzyme also exhibited greater antioxidant capacity using the ABTS method. The casein hydrolyzed from Flavourzyme enzyme was applicated in ground beef homogenates, mechanically deboned meat (MDM) of poultry and white chocolate. In meat products, casein peptides (2.0%) effectively inhibited lipid peroxidation in ground beef homogenates (100%) and mechanically deboned meat (about 20%) of poultry. Casein peptides may be useful in meat processing as another naturally occurring antioxidant, helping to prevent off-flavor formation in meat products and increasing shelf life. In the use for white chocolate, the goal was to inhibit its browning, the main problems that limit the white chocolate’s shelf-life. Non-enzymatic browning reaction and lipid oxidation were involved directly in the browning of white chocolate. Thus, parameters which indicated fat alteration and non-enzymatic reactions were measured in three different samples of white chocolate. One sample with 0,2% of cocoa butter, with the synthetic antioxidant Grindox 562, other with 0,2% of cocoa butter, with the natural antioxidant and the third sample without any kind of antioxidant. The samples were exposed to two different temperatures: 20 ± 2 and 28 ± 2ºC. The results of the analysis made indicated that the samples stored at the temperature of 20ºC showed results significantly better to those samples stored at the temperature of 28ºC, related to the conservation of the white chocolate. Besides, the results indicated that the addition of any antioxidants employees has not influenced in a significant way the results obtained. Thus, it was evidenced that the main responsible parameter for the alterations of the white chocolate’s shelf-life is related to the storage temperature to which the samples were submitted.

This thesis is focused on Master Data Management (MDM), Customer Data Integration (CDI) area and its main domains. It is also a reference to a various theoretical directions that can be found in this area of expertise. It summarizes main aspects, domains and presents different perspectives to referenced principles. It is an exhaustive background research in area of Master Data Management with emphasis on practical use with references on authors experience and opinions. Secondary focus is directed to the field of business value of Master Data Management initiatives. Thesis presents a thought concept for initiations of MDM project. The reason for such a concept is based on current trend, where companies are struggling to determine actual benefits of MDM initiatives. There is overall accord on the subject of necessity of such initiatives, but the struggle is in area of determining actual measureable impact on company's revenue or profit. Since the MDM initiative is more of an enabling function, rather than direct revenue function, the benefit is less straight forward and therefore harder to determine. This work describes different layers and mapping of business requirements through layers for transparent linkage between enabling functions to revenue generating ones. The emphasis is given to financial benefit calculation, measurability and responsibility of business and IT departments. To underline certain conclusions thesis also presents real world interviews with possible stakeholders of MDM initiative within the company. These representatives were selected as key drivers for such an initiative. Interviews map their recognition of MDM and related terms. It also focus on their reasons and expectations from MDM. The representatives were also selected to equally represent business and IT departments, which presents interesting clash of views and expectations.

The diploma thesis deals with the management and security of mobile devices in the enterprise IT. The aim of the work is to familiarize the reader with the issue of enterprise mobility. As enterprise mobility covers a vast area and an important aspect of greatly efficient and secure use of any company's mobile devices is their mobile strategy, the work focuses on the process of creating a mobile security strategy and providing guidelines for its successful implementation. The integration of smart phones into a corporate infrastructure is a complex act. It is necessary to take into account the many safety demands and requirements for interoperability. The issue of mobile enterprise device management and security is very broad. Another part of the work describes various mobile platforms in terms of their suitability for use in the enterprise IT. Operating systems are analyzed in detail from several different points of view. The work provides insight into the market of operating systems and explains the basic security threats to which these systems are exposed and recommends ways of protection against unwanted effects. The final part of the thesis deals with design solutions management and security of mobile devices in the company. On the basis of the requirements set suggests a solution that encompasses deployment of Mobile Device Management device management and security proposes rules for the extension of security policy on mobile device management.

Fabrication and Characterization of Silicon Photonic DevicesAbdullah Al Noman (11251179) 11 August 2021 (has links)
Silicon photonics has become one of the leading candidates for the next generation optical communication platform. In addition to being an inexpensive material and compatible with Complementary metal–oxide–semiconductor (CMOS) manufacturing, silicon exhibits low absorption at optical telecommunication bands. However, high propagation loss and poor light confinement in narrow Si waveguides have limited high-density optical integration.<br>In this work, we show the fabrication and characterization of a novel type of devices named E-skid devices that can reduce the skin depth and suppress the large spatial content of evanescent light. These devices use artificial anisotropic dielectric metamaterial to suppress the evanescent waves. Beside E-skid devices, we also discuss the fabrication and experimental characterization of mode filters using Silicon on Insulator that can block the fundamental TE0 and allow the higher order modes to pass through using Multi Mode Interference.<br>In this work, the mode is filtered using radiation, not by reflection.<br>Beside Silicon, Silicon Nitride has also gained much interest because of its low loss, smaller nonlinear absorption and higher Kerr effect. Silicon Nitride waveguides have widely<br>been used for lots of applications specially the optical frequency comb generation. One special case of coherent optical frequency comb is Soliton in which case the non-linearity and dispersion cancel each other’s effect and keep the pulse without distortion. In this work, we described the Silicon Nitride fabrication process and did a comparative analysis with other research groups who fabricates similar devices. We tried to improve our process by inserting a few additional steps in our fabrication process. We also investigated our process step by step and found out reasons for our low quality factor and low yield. We found a few factors that might be responsible for the low quality factor and addressed them. We fabricated real devices using our modified process and saw improvement in quality factors, yield and thermal performance of the devices.<br>Finally, we describe an edge polishing method for Silicon Nitride microring resonator devices, which we developed from scratch and we can polish edges down to sub-micron level. Thus, the edges become optically flat and it allowed us to do heterogeneous integration with an Indium Phosphide chip. This paves away for some exciting opportunities like on-chip frequency comb generation.<br><br>

In current information systems the requirement to integrate disparate applications into cohesive package is greatly accented. While well-established technologies facilitating functional and comunicational integration (ESB, message brokes, web services) already exist, tools and methodologies for continuous integration of disparate data sources on enterprise-wide level are still in development. Master Data Management (MDM) is a major approach in the area of data integration and referrential data management in particular. It encompasses the referrential data integration, data quality management and referrential data consolidation, metadata management, master data ownership, principle of accountability for master data and processes related to referrential data management. Thesis is focused on technological aspects of MDM implementation realized via introduction of centrallized repository for master data -- Master Data Integration Hub (MDI Hub). MDI Hub is an application which enables the integration and consolidation of referrential data stored in disparate systems and applications based on predefined workflows. It also handles the master data propagation back to source systems and provides services like dictionaries management and data quality monitoring. Thesis objective is to cover design and implementation aspects of MDI Hub, which forms the application part of MDM. In introduction the motivation for referrential data consolidation is discussed and list of techniques used in MDI Hub solution development is presented. The main part of thesis proposes the design of MDI Hub referrential architecture and suggests the activities performed in process of MDI Hub implementation. Thesis is based on information gained from specialized publications, on knowledge gathererd by delivering projects with companies Adastra and Ataccama and on co-workers know-how and experience. Most important contribution of thesis is comprehensive view on MDI Hub design and MDI Hub referrential architecture proposal. MDI Hub referrential architecture can serve as basis for particular MDI Hub implementation.
