Strnadel, Štěpán January 2016 (has links)
This master thesis deals with the issue of sustainable diets and the potential of the promotion of sustainable principles in public food procurement. The theme is introduced in broader context of environment, public health, historical development, international influences, significant theoretical approaches and fundamental factors affecting current state of diets and nutrition. The aim of the thesis is to specify universal principles of sustainable diets, which were derived from critical review of scientific literature and other relevant texts. The character of this thesis is dominantly theoretical. Discussing the potential of applying the principles of sustainability from the side of public institutions is the main theme of the second part of the study. The research question is related to the possibilities of local organic food consumption in school food system in Czechia. Main results show problematic combination of the requirements for both organic and local food in the context of the volume of school food demand and relatively small local organic production. In general terms the contribution of this thesis is the introduction of the research issues of geography of food and presenting the possibilities of further research. key words: sustainable diets, nutrition transition, food, organic...

Esquemas de cestas: o enraizamento social de uma nova forma de comércio / BOX-SCHEME THE SOCIAL EMBEDDEDNESS OF A NEW RETAIL FORMAT

Ronaldo Tavares de Souza 28 June 2017 (has links)
The production and trade of organic food are defining a growing market and presenting an alternative supposed to cause less negative externalities. Nevertheless, a conventionalization process has been identified some time ago, what takes it closer to market practices that threat its capacity to preserve the environment. Sales through large retailers is part of this process. As options, different ways to distribute food emerge and represent the possibility to reach more benefits to society and environment. One of them is the home delivery of boxes containing fresh food, the box-schemes. It consists of weekly acquisition of a standard set of organic goods through electronic media. Utilizing the theoretical framework proposed by the Economic Sociology, I have investigated with owners, employees and consumers that are part of this social network, the interests, relationships and structures to answer how this new retail format gets socially embedded in Sao Paulo city. Through interviews based on a semi-structured script, it is possible to understand that this new channel is established from the desire to consume organic food. A market failure that causes poor distribution and quality in conventional network drives them to look for alternatives and try this new channel. The capacity to abandon the conventional buying habitus (see, touch, assess) opens space to establish a new tie with people that will choose the quality of the food to be delivered to their homes. Slowly, commercial exchange expands to reciprocity signals and strengthen trust up to a possible redistribution system. Eventually, values sharing makes possible to influence consumers and make them more conscious.

Développement de méthodes d'estimation de l'aptitude au mélange pour la prédiction des performances et la sélection de mélanges variétaux chez le blé tendre, et co-conception d'idéotypes de mélanges adaptés à l'agriculture biologique / Development of methods for estimating mixing ability for prediction of performance and selecting variety mixtures in bread wheat, and co-design of ideotypes of mixtures adapted to organic farming

Forst, Emma 29 March 2018 (has links)
Cereal variety mixtures have recently known a renewed interest but methods for screening and breeding varieties for mixing ability, or designing mixtures remain poorly developed. It has been shown that the performance in pure stand of a genotype can significantly differ from its performance in mixture, thus making mixture performance difficult to predict. But testing all the possible mixtures turns technically impossible when using large panels of genotypes. Therefore experimental and statistical methods are necessary to identify the genotypes with the best mixing ability, as well as try to predict the best combinations, from the observation of a limited number of mixtures. In a first part, we have reviewed different methods proposed in the literature to study these plant-to-plant interactions, contrasting i) the ones based on mixture performances, producing General and Specific Mixing Ability estimates, from ii) the ones where the performance of each genotype in the mixture is observed, allowing to estimate Producer and Associate effects. We have then proposed a statistical framework based on mixed models to estimate Mixing Ability in incomplete designs. These Mixing Ability models and the Producer-Associates model have been applied to a diverse panel of bread winter wheat genotypes observed in different experimental designs, revealing interactions between plants of different genotypes. Then the ability of these designs and models to predict the performance of validation mixtures have been compared. We finally discussed how these methodological frameworks can be applied to screening for mixing ability and the possibility to integrate them in breeding programs. In a second part, we performed a literature survey to propose assembly rules for better combining traits associated to plant interactions, and designing mixture idéotypes that favor the complementarities between varieties. During participatory workshops involving organic farmers, these rules have been validated, invalidated, adapted or implemented, and then used for designing mixture ideotypes that fit farmers’ practices and environments. The designed mixtures based on these rules have been assessed in on-farm trials for agronomic criteria and farmers’ specific requirements. The two complementary approaches of this thesis unleash the potential for developing locally adapted cultivar mixtures.
