GALVIJŲ SKERDIMO TECHNOLOGINIO PROCESO ĮTAKA SKERDENŲ KOKYBEI / INFLUENCE OF TECHNOLOGICAL SLAUGHTER PROCESS ON CATTLE CARCASS QUALITY

Darbo pavadinimas: Galvijų skerdimo technologinio proceso įtaka skerdenų kokybei Darbo tikslas: įvertinti galvijienos gamybos technologinio proceso įtaką skerdenų (mėsos) sanitarinei kokybei Darbo uždaviniai: 1. Atlikti mokslinės literatūros analizę apie mėsos gamybos technologinio proceso įtaką sanitarinei skerdenų (mėsos) kokybei. 2. Nustatyti dažniau galvijų skerdimo technologinio proceso metu pasitaikančius pažeidimus. 3. Įvertinti galvijų skerdenų sanitarinę kokybę: 3.1. Nustatyti pH atsižvelgiant į priešskerdiminius (amžių ir lytį, priešskerdimino laikymo trukmę, traumas) ir skerdiminius (nukraujinimo laipsnį, skerdenų apdorojimo kokybė) veiksnius. 3.2. Nustatyti galvijų skerdenų bakterinę taršą (bendrą bakterijų kiekį, koliforminių bakterijų kiekį). 4. Įvertinti pieno rūgšties panaudojimo įtaką panaudojus galvijų skerdenų bakterinės taršos sumažinimui. Tyrimo rezultatai: „X“ įmonėje skerdžiami nešvarūs - 34, 6 proc., liesi – 25 proc. galvijai, 12,0 proc.- galvijų buvo apsvaiginti nepakankamai, 7,6 proc.– blogai, 7,4 proc. -skerdenų buvo blogai nukraujintos ir 3,3 proc. - labai blogai, 44,5 proc. -galvijų skerdenose aptiktos įvairaus pobūdžio traumos, 27,4 proc. - skerdenų suterštos virškinimo trakto turiniu ir gyvulio plaukais. Šie technologinio proceso pažeidimai įtakoja skerdenų sanitarinę kokybę. Įvertinus pH kitimo priklausomybę nuo skerdžiamų galvijų amžiaus, galvijų skerdenų aktyviojo rūgštingumo iškarto po skerdimo (pH40) variacija buvo labai maža, vos 0,2... Perform an analysis of the scientific literature on the technological meat production process impact on the sanitary of carcasses (meat) quality. 2. Identify more frequently occuring breaches at catlle slaughter process. 3. Evaluate sanitay quality of catlle carcasses: 3.1 Determine pH according to the pre-slaughter (age, sex, duration of pre-slaughter lairage, injuries) and slaughter (effectiveness of bleeding, carcass processing quality) factors. 3.2 Determine bacterial contamination of catlle carcass (total amount of cfu, amount of coliform bacteria). 4. Evaluate lactic acid influence on bacterial decontamination of catlle carcass. Results and conclusions. Plant „X“ slaughtered dirty - 34, 6 pct., skiny – 25 pct. catlle., 12,0 pct. of cattle carried poor stun, 7,6 proc. – unsatisfactory stun, 7,4 pct. catlle bleeding was poor and 3,3 pct. unsatisfactory, on 44,5 pct. catlle carcasses were detected different type injuries, 27,4 pct. Carcasses were contaminated with content of digestive tract and hair. These breaches of technological process makes inpact on carcass sanitary quality. Neste trabalho é proposto e avaliado um sistema capaz de monitorar de forma não-destrutiva, não-invasiva, individualizada, em tempo real e em ambiente industrial, a qualidade de soldas produzidas através do processo de solda a ponto resistiva (PSPR), diminuindo ou mesmo eliminando a necessidade dos testes destrutivos, reduzindo custos e aumentando a produtividade. Este sistema de monitoramento é baseado em reconhecimento de padrões, através de redes neurais artificiais do tipo Perceptron multicamadas. As características do processo usadas na entrada da rede neural são os parâmetros ajustados de um modelo matemático parametrizável, criado com o intuito de refletir as propriedades fundamentais da grandeza do processo passível de ser medida e monitorada em tempo real, neste caso a curva de resistência dinâmica. Estes valores ajustados dos parâmetros do modelo são ainda relacionados com os estados ou condições do processo, de forma a permitir a identificação de possíveis causas para falhas detectadas. Para avaliar e validar este sistema, usaram-se dados reais obtidos na produção de lotes de contatos elétricos através do PSPR. Os resultados obtidos mostram que o sistema proposto é capaz de monitorar satisfatoriamente a qualidade do processo investigado, com erro médio quadrático de 16,5 N, na estimação da força de cisalhamento suportada pela solda, no pior caso. O sistema também mostrou-se capaz de identificar a causa para soldas cuja qualidade estimada foi considerada baixa, com taxa de acerto acima de 97%. Esse sistema proposto não contém especificidades de nenhum processo produtivo e, portanto, tem potencial para ser aplicado em outros processos, além do PSPR. / In this work a non-destructive, non-invasive, individualized, real-time system has been proposed and evaluated to monitor the quality of welds produced by resistance spot welding process (RSWP) in industrial environment. This system is able to reduce or eliminate the need for destructive tests, leading to cost reduction and increase in productivity. This monitoring system is based on pattern recognition with multilayer Perceptron artificial neural networks (ANN). The process features used as input of the ANN are adjusted parameters of a parametric mathematic model created to reflect the fundamental properties of the process variable that is measurable in real time, in this work, the dynamic resistance curve. The adjustable model parameters values are related with the process states and conditions, so that it is possible to identify the causes for detected bad quality. In order to evaluate and validate the proposed system, real data obtained in the production of electric contacts by RSWP were used. The results show that the proposed system is capable of properly monitoring the investigated process quality, with a mean square error of 16.5 N, in the estimation of the shear force supported by the weld, in the worst case. The system proved to be able to identify the causes for detected bad quality, with a reliability of more than 97%. The proposed system contains no productive process specificities, and, therefore, can be applied to other processes.

Atualmente são diversos os modelos de qualidade, internacionais e nacionais (CMMI, SPICE, MPS.BR), mas o número de empresas que os utilizam é ainda reduzido. Tal fato não é justificado pela falta de interesse das empresas, pois, além de aumentarem o controle e qualidade dos processos e produtos, esses modelos são importantes para o desenvolvimento e para a exportação de software. Um dos fatores que leva a baixa utilização dos modelos de qualidade é a falta de um método para instanciação destes modelos ao domínio de negócio específico de cada empresa. Método que possa ser utilizado para diferentes modelos de qualidade desde que exista uma arquitetura de referência baseada neste modelo. Este trabalho apresenta um método de instanciação de processos que a partir de uma arquitetura de referência baseada em um modelo de qualidade e das características da empresa geram processos de uma fábrica de software. O método proposto será aplicado experimentalmente em duas empresas reais a fim de se coletar dados sobre a utilização do método em situações reais. As aplicações do método de instanciação nas empresas reais seguirão um roteiro de execução de experimentos de engenharia de software experimental. / Currently there are several quality models, international and national (CMMI, SPICE, MPS.BR), but the number of companies that use them is still low. The proposed method will be applied experimentally on two real companies in order to collect data on the use of the method. The real applications of the instantiation method in real companies follow a roadmap for execution of software engineering experiments.

<p>Osnovni cilj istraživanja u ovoj doktorskoj disertaciji je da se analizom stanja na trži&scaron;tu osiguranja, stavova potencijalnih korisnika životnog osiguranja i menadžmenta osiguravajućih kompanija, kao i studijom slučaja konkretne, složene osiguravajuće kompanije, razvije model unapređenja kvaliteta procesa životnog osiguranja i razrade osnovni strate&scaron;ki elementi, a odnose se na planiranje, organizaciju i upravljanje sistemima koji pružaju usluge životnog osiguranja. Primjenom metoda ankete i intervjua i modela Balanced Scorecard, uočeni su kritični elementi poslovnih procesa i predložene mjere unapređenja. Razvijen je model kompanije koja posluje u oblasti životnog osiguranja koji obezbjeđuje njenu samostalnost, uključuje aktuelna ograničenja na evropskom trži&scaron;tu osiguranja i povi&scaron;enu efektivnost njenih poslovnih procesa.</p> / <p>The main goal of this doctoral dissertation is to develop a model for improving the quality of life insurance process and to elaborate basic strategic elements such as planning, organization and management of institutions that provide life insurance services. This is achieved through analysis of the life insurance market, attitudes of potential customers and the management of insurance companies, as well as a case study of concrete, complex life insurance company. Through application of the survey method, interview, as well as balanced scorecard, the critical business process elements were noted and improvement measures were proposed. As a result, a model which ensures the independence of the life insurance company, includes current restrictions at the European insurance market and enables increased efficiency of its business processes, was developed.</p>

A Pre-enactment Model For Measuring Process Quality

Most of the process measurement studies are related with time and cost based models. Although quality is the other conventional aspect, there are no widely used models for measuring the process quality in the literature. In order to provide complementary information about the quality, a process quality measurement model has been chosen to be developed and the studies about process characteristics have been searched in the scope of the thesis. Moreover, by utilizing the similarities between process and software, the studies in software quality have been investigated. In the light of the researches, a model is built on the basis of ISO/IEC 9126 Software Product Quality Model. Some of the quality attributes are redefined in the model according to the process characteristics. In addition, new attributes unique only to the process are developed. A case study is performed and its results discussed from different perspectives of applicability, understandability and suitability.

An Automated Quality Measurement Approach For Business Process Models

Business process modeling has become a common need for organizations. Therefore process quality is also having an important role for the organizations. The most of the quality studies are based on cost and time which can be analyzed during or after the execution of the business processes. There are also quality measures which help analyzing measures before the execution of the business processes. This type of measures can give early feedback about the processes. There are three frameworks defined in the literature for a more comprehensive measurement. One of the frameworks is adapted from software programs and it aims to enable process design to be less error-prone, understandable and maintainable. The second framework is adapted from object-oriented software designs and it provides object-oriented view to the design of the business process. The last framework is adapted from ISO/IEC Software Product Quality enabling to measure the quality of process itself rather than the design. By conducting a case study, the measures defined in the frameworks are explored in terms of applicability, automation potential and required time and effort on a set of business process model. As a result of this study it is observed that measurement takes time and requires effort and is always error-prone. Therefore, an approach is implemented by automating the measures which have automation potential, in order to decrease the required time and effort and also to increase the accuracy of the measurement. The second case study is then conducted on a set of another business process models in order to validate the approach.
