Previous issue date: 2013 / Fundação de Amparo à Pesquisa do Estado de São Paulo (FAPESP) / Introdução: A mastigacao, cuja funcao pode ser avaliada objetivamente por testes de efiCiência mastigatoria e forca de mordida, e a fase inicial do processo digestivo e esta relacionada a capacidade de reduzir os alimentos a pequenas particulas. Nao estao bem estabelecidas efiCiência mastigatoria e forca de mordida para individuos adultos de ambos os generos com oclusao normal utilizando-se capsulas de fucsina e um dinamometro digital. Objetivo: Avaliar e correlacionar efiCiência mastigatoria e forca maxima de mordida em individuos adultos com oclusao normal. Metodos: Foram avaliados 55 individuos com oclusao normal, 27 masculinos e 28 femininos. Os individuos realizaram a mastigacao de quatro capsulas de fucsina, por 15 ciclos mastigatorios, com tres minutos de intervalo entre elas. Duas capsulas foram mastigadas nas regioes de molares a direita e as outras duas a esquerda. As capsulas foram analisadas por espectrofotometria e foi obtida a media de concentracao de fucsina, em μg/ml, dos lados e nos generos masculino e feminino. A forca de mordida foi aferida em Newtons (N), com dinamometro digital. Foram realizadas tres medidas nos molares a esquerda e tres a direita. Foi considerado como a forca maxima de mordida o maior valor dentre as tres medidas. Resultados: A efiCiência mastigatoria foi maior no genero feminino (1,17±016 μg/ml a direita e 1,20±0,15 μg/ml a esquerda) em relacao ao genero masculino (0,92 ±0,24 μg/ml a direita e 0,89±0,24 μg/ml a esquerda). A forca maxima de mordida foi maior no genero masculino (631,99±174,11 N a direita e 627,18±169,97 N a esquerda), em relacao ao genero feminino (427,16±139,69 N a direita e 420,23±111,36 N a esquerda). Na comparacao entre os lados, nao houve diferenca na efiCiência mastigatoria e na forca de mordida, a esquerda e a direita, nos generos masculino e feminino. Conclusoes: A efiCiência mastigatoria e maior no genero feminino enquanto que a forca muscular maxima de mordida e maior no genero masculino. Nao ha correlacao entre efiCiência mastigatoria e forca maxima de mordida entre os generos / Introduction: The chewing, which function can be objectively evaluated by chewing efficiency tests and bite force, is the initial phase of the digestive process and is related to the ability to reduce food to small particles. The use of fuchsine capsules and a national digital dynamometer are not assessed to identify a relationship between chewing efficiency and bite force for adults on both genders with normal occlusion. Fifty-five individuals with normal occlusion were evaluated, which 27
were male and 28 were female. These individuals performed the
chewing of 4 fuchsine capsules for 15 masticatory cycles, taking 3
minutes between them. Two capsules were chewed in the molar
regions on the right and the other two on the left. The capsules were
analyzed by spectrophotometry by measuring the average
concentration of fuchsine in µg/ml, for each molar side as well as for
each gender group. The bite force was measured in Newton (N),
making use of a digital dynamometer. Three of the assessments were
performed on the left molars and another 3 on the right. The maximum
bite force was regarded to be the highest of the three measurements.
Results: The masticatory efficiency was higher in females (1.17±016
µg/ml on the right and 1.20±0.15 µg/ml on the left) compared to males
(0.92±0.24 µg/ml on the right and 0.89±0.24 µg/ml on the left). The
maximum bite force was higher in males (631.99±174.11 N on the
right and 627.18±169.97 N on the left) compared to females
(427.16±139.69 N on the right and 420.23±111.36 N on the left).
Examining both molar sides, there was no difference concerning

Conclusions: The masticatory efficiency is higher in females while the
maximum bite force muscle is greater in males. There is no correlation
