Previous issue date: 2016-01-29 / Coordena??o de Aperfei?oamento de Pessoal de N?vel Superior (CAPES) / Os h?bitos alimentares est?o na utiliza??o e consumo de alimentos que se encontram dispon?veis. Podendo, por vezes, essa utiliza??o e escolha ser consciente ou n?o, e ainda estar condicionada por mudan?as de comportamento alimentar, motivadas por fatores externos como modelos e padr?es de vida. Maus h?bitos alimentares s?o respons?veis por diversos problemas de sa?de, correlacionados ao consumo de alimentos hipercal?ricos e de baixo teor nutricional. No quadro de sa?de atual do Brasil tem mostrado uma diminui??o nos casos de desnutri??o e doen?as infecciosas e aumentado os casos de obesidade e doen?as cr?nicas, atingindo em crian?as altos ?ndices de sobrepeso, obesidade infantil e diversos preju?zos ? sa?de. ?rg?os n?o governamentais como a Pastoral da Crian?a t?m, nesse sentido tamb?m, buscado mudan?as comportamentais sadias, atrav?s de programas e projetos pilotos nas comunidades onde atua, na tentativa de nortear a popula??o tanto ? ingest?o quantitativa quanto qualitativa correta dos alimentos, al?m de boas pr?ticas de sa?de como realiza??o de atividades f?sicas como mudan?as em h?bitos alimentares mais saud?veis. A Pastoral da Crian?a ? um organismo de a??o social da CNBB (Confer?ncia Nacional dos Bispos do Brasil) que teve sua funda??o na cidade brasileira, Florest?polis/Paran?, pela pediatra e sanitarista, Dra Zilda Arns Neumann e tamb?m pelo ent?o Arcerbispo de Londrina Dom Geraldo Majella Agnelo. Hoje se faz presente em todos os estados brasileiros e ainda em cerca de 21 pa?ses da ?frica, ?sia, Am?rica Latina e Caribe promovendo a??es b?sicas de sa?de, educa??o, nutri??o e cidadania, fomentando o desenvolvimento de crian?as, fam?lias e comunidades. Devido aos novos h?bitos alimentares inseridos ? cultura alimentar das fam?lias, pela chamada ?globaliza??o alimentar? novos estilos de vida e h?bitos n?o saud?veis surgem como novos desafios. A suplementa??o nutricional ? uma forma complementar de suprir defici?ncias diet?ticas. Um exemplo ? a ?multimistura? um dos grandes marcos da Pastoral da Crian?a, na d?cada de 80, no combate a mortalidade infantil causada pela desnutri??o em crian?as, sobretudo na regi?o nordeste do Brasil, no entanto estudos tem questionado seus potenciais nutricionais. O uso de suplementa??o ? comum em muitos pa?ses da ?frica, onde outro destaque nutricional ? a farinha das folhas de Moringa Oleifera, cujos diversos estudos t?m mostrados melhorias de ganhos nutricionais e quadros an?micos, diminu?dos nos casos em que foram administradas dosagens ? alimenta??o. Este trabalho buscou analisar as composi??es f?sico-qu?micas de folhas secas e ?midas de M. oleifera e a mistura de farelos desenvolvida pela Pastoral da Crian?a em Parnamirim/RN e ainda verificar os h?bitos alimentares de l?deres e fam?lias, quanto ?s escolhas, frequ?ncias com as quais consumem certos alimentos, conhecimentos sobre os riscos de uma alimenta??o n?o saud?vel e a forma como a m?dia e a ind?stria aliment?cia influenciam nas escolhas, por fim o uso sugestivo de folhas de M. oleifera na alimenta??o. Foi aplicado um question?rio/entrevista de 24 quest?es, 19 alternativas/escores e cinco discursivas, analisadas pelo teste U de Mann Whitney com 5% de signific?ncia, para amostras independentes no software IBM? SPSS? Stat?stics v.22. Analisaram-se tamb?m as composi??es f?sico-qu?micas de folhas secas e ?midas de M. oleifera e a mistura de farelos desenvolvida pela Pastoral da Crian?a em Parnamirim/RN. Os dados obtidos foram computados em software Microsoft Office Excel 2010? distribu?dos segundo a vari?vel envolvida e suas respectivas m?dias e desvio-padr?o, avaliadas pelo teste de T- Student para amostras independentes com signific?ncia 5% no software IBM? SPSS? Stat?stics v.22. Pelo diagn?stico diet?tico realizado percebeu-se um baixo consumo de alimentos recomendados como fontes de vitaminas e minerais. Em contrapartida a um cosumo consider?vel por industrializados como sucos, refrigerantes e alimentos gordurosos, ora por influ?ncia de propagandas e marketing, gerenciadas pelas empresas aliment?cias, ora pela car?ncia informacional. Quanto ?s an?lises cujos resultados mostraram que a multimistura mesmo apresentando constituintes proteicos em sua composi??o, as folhas de M. oleifera apresentam uma maior concentra??o nutritiva, como 20x mais c?lcio em suas folhas secas e 4x mais Vitamina C em suas folhas ?midas que a multimistura da Pastoral da Crian?a. Novas pol?ticas de reeduca??o e conscientiza??o alimentar devem ser estimuladas, norteando a popula??o quanto a h?bitos alimentares mais saud?veis e, al?m disso, mais trabalhos devem ser realizados a fim de analisar os valores nutritivos tanto das farinhas da M. oleifera quanto da mistura de farelos, para o consumo humano, no tratamento de desnutri??o e anemia, sendo uma poss?vel fonte alimentar nutritiva, aliada ?s a??es desenvolvidas pela Pastoral da Crian?a. / Food habits are in use and consumption of foods that are available. Can sometimes use this and choose to be conscious or not, and still be conditioned by changes in eating behavior, motivated by external factors such as models and standards of living. Bad eating habits are responsible for various health problems, related to the consumption of high-calorie food and low nutritional value. In the current health situation in Brazil has shown a decrease in cases of malnutrition and infectious diseases and increased cases of obesity and chronic diseases, reaching in high rates of overweight children, childhood obesity and various health hazards. Non-governmental bodies such as the Pastoral da Crian?a have, in this sense also sought healthy behavioral changes through programs and pilot projects in the communities where it operates, in an attempt to guide the population to both correct quantitative and qualitative intake of food as well as good practice health and physical activities as changes in healthier eating habits. The Pastoral da Crian?a is a social action agency of the CNBB (National Conference of Bishops of Brazil) which had its foundation in the Brazilian city, Florest?polis/Paran?, the pediatrician and sanitarian Dr. Zilda Arns Neumann and also by then Arcerbispo Londrina Dom Geraldo Majella Agnelo. Today is present in all Brazilian states and also in about 21 countries in Africa, Asia, Latin America and the Caribbean promoting basic health care, education, nutrition and citizenship, promoting the development of children, families and communities. Due to new eating habits entered the food culture of families, the so-called "food globalization" new lifestyles and unhealthy habits emerge as new challenges. Nutritional supplementation is a complementary way to address dietary deficiencies. An example is the "multi" one of the great landmarks of the Pastoral, in the 80s, in combating infant mortality caused by malnutrition in children, especially in northeastern Brazil, however studies have questioned its potential nutritional. The use of supplementation is common in many countries in Africa where other nutritional highlight is the flour of leaves of Moringa oleifera, which several studies have shown nutritional gains improvements and anemic frames, reduced where doses were administered to food. This study aimed to analyze the physical and chemical composition of wet and dry leaves of M. oleifera and the mixture of bran developed by the Children in Parnamirim / RN and even check out the eating habits of leaders and families about the choices, frequencies with which consume certain foods, knowledge about the risks of an unhealthy diet and how the media and the food industry influence the choices finally the suggestive use of M. oleifera leaves in food. a questionnaire / interview of 24 questions, 19 alternative/scores five discursive, analyzed by Mann Whitney U test with 5% significance was applied for independent samples in IBM SPSS Statistics v.22 software. They also analyzed the physical-chemical composition of wet and dry leaves of M. oleifera and the mixture of bran developed by the Pastoral da Crian?a in Parnamirim/RN. Data were computed in Microsoft Office Excel 2010? software distributed according to variable involved and their respective means and standard deviations, evaluated by the T Student test for independent samples with significance 5% in IBM SPSS Statistics software v.22 . By dietary diagnosis made was noticed a low consumption of foods recommended as sources of vitamins and minerals. In contrast to a considerable consumption by industrialized as juices, soft drinks and fatty foods, or by the influence of advertising and marketing, managed by food companies, sometimes by informational need. As for the analysis whose results showed that multimixture even with protein compounds in its composition, the M. oleifera leaves have a higher nutrient concentration, as 20x more calcium in their dried leaves and 4 times more Vitamin C in their damp leaves that multimixture of Pastoral da Crian?a. New re-education and food awareness policies should be encouraged, guiding the population and to healthier eating habits and, in addition, more work must be performed in order to analyze the nutritional values of both the flours of M. oleifera as the mixture of bran, for human consumption, in the treatment of malnutrition and anemia, with a possible nutritious food source, combined with the actions developed by the Pastoral da Crian?a.
