A bacteriocina P34 é produzida por um Bacillus sp. e apresenta atividade antimicrobiana para diversas espécies de Listeria sp. e para L. monocytogenes ATCC 7644. Neste trabalho, foi pesquisada a presença de bactérias lácticas em lingüiça frescal de frango. Os resultados demonstraram o isolamento de seis culturas em placas de ágar MRS a 30ºC por 48 h. Cinco das seis linhagens isoladas inibiram o crescimento da L. monocytogenes após incubação a 30o C por 24 h. Os sobrenadantes brutos destas bactérias lácticas demonstraram efeito sinérgico quando adicionados em conjunto com a bacteriocina P34 frente ao microrganismo indicador, L .monocytogenes, pelo método de difusão em ágar com discos. Foi inoculada L. mononocytogenes ATCC 7644 em suspensão com 103 UFC/g em lingüiça frescal de frango no dia zero e recuperada em meio MOX nos dias zero, três, sete e dez da inoculação. Os resultados permitiram concluir que a bacteriocina P34 parcialmente purificada na concentração de 256 UA/g inibiu L. monocytogenes em todos os tempos. A bacteriocina P34 parcialmente purificada foi testada em envoltórios naturais de bovinos (tripas semi-secas salgadas) frente ao mesmo microrganismo indicador, L. monocytogenes ATCC 7644, demonstrando sua inibição in vitro. / The bacteriocin P34, produced by Bacillus sp., showed antimicrobial activity for many species of Listeria sp and L. monocytogenes ATCC 7644 . In this work, it was investigated the presence of lactic bacteria in fresh chicken sausage. The results demonstrated the isolation of six cultures in MRS agar plates at 30o C for 48h. Five of the six isolated strains inhibited the growing of the L. monocytogenes after incubation at 30ºC for 24h. The crude supernatants of these lactic bacteria demonstrated the synergic effect when it were added together with the bacteriocin P34 against indicator microorganism, L. monocytogenes ATCC 7644, using the method of diffusion in agar with paper discs. L. monocytogenes ATCC 7644 was inoculated in a suspension with 103 UFC/g in chilled chicken sausage and recovered in MOX counting from zero, three, seven and ten days from the inoculationt. The results allowed concluding that the P34 bacteriocin partially purified, in a 256 UA/g concentration, inhibited the indicator microorganism in all periods of time. At the same time, the partially purified P34 bacteriocin were tested in natural bovine wrapping ( salty semi-dried tripe ) using the same indicator micro-organism, L. monocytogenes ATCC 7644, demonstrating its inhibition in vitro.
