Změny v chemickém složení syrového kravského mléka v průběhu roku / Changes in chemical composition of raw cow´s milk during a year

The aim of thesis was to analyze results of raw bulk milk according to these quality indicators: fat content, protein content, urea content, casein content, solids-not-fat (SNF) content, lactose content and freezing point. Data were evaluated from November 2009 through October 2010 at two breedings. Limits given by European Union and czech legislation were keep in both breedings. In first breeding were mediumly means 4,127 g/100g fat, 3,427 g/100g protein, 2,601 mmol/l urea, 2,688 g/100g casein, 9,015 g/100g solids-not-fat, 4,887 g/100g lactose and freezing point -0,5265 °C.In second breeding were mediumly means 4,045 g/100g fat, 3,319 g/100g protein, 2,462 mmol/l urea, 2,603 g/100g casein, , 8,839 g/100g solids-not-fat, 4,828 g/100g lactose and freezing point -0,5246 °C. Results were compared and causes of difference and milk quality variation were explained.

From 1984 several works they have been suggesting that the maternal milk is a protection factor for DM1; that effect would feel due to the anti-infectious properties of that type of milk, or for the fast that the breast-feeding to the breast would avoid that the children could be exposed precocious to other etiologic agents contained in the substitutes of the maternal milk. Those same discoveries were later found in several studies, but the paper of the maternal milk in the emergence of DM1 stayed controversial. More recently, in 1992, some researchers observed, among the diabetics, discharges concentrations of antibodies bovine anti-albumin. The authors postulated the hypothesis that the bovine albumin could act as unchaining of the destructive process of the beta cells of the pancreas and, consequently, of the diabetes. Contradictory results were observed in the publications that were happened the that. This research has as objective establishes the relationship among the precocious exhibition to the cow s milk and the occurrence of Diabetes mellitus type 1. The study is of the type case-control. 64 mothers of bearers of Diabetes mellitus type 1 and 64 mothers of controls were interviewed, fittings for neighborhood, sex, age and race. 84,4% (n=54) of the diabetic individuals were exposed to the cow s milk before the 4 months of age, while in the group control this percentile one was of 64,1% (n=41). There was a significant statistical relationship among the groups (X²=5,9; p=0,01). The Odds Ratio (OR) calculated it was of 3,03 (IC 95% = 1,21 7,72; p=0,01) between diabetics and controls. The observed results allow to establish a positive association among the precocious exhibition to the cow s milk and the occurrence of Diabetes mellitus type 1 in the studied population. This way, it is believed to be indicated, as form of preventing the emergence of the Diabetes mellitus type 1, the exclusive breast-feeding to the breast for at least four months, being avoided the precocious introduction, in the infantile feeding, of the cow s milk and yours derived / A etiologia do Diabetes mellitus tipo 1 (DM1) envolve tanto a herança genética como a exposição a fatores ambientais. Evidências de estudos epidemiológicos e experimentais sugerem que a dieta possa ser importante na etiopatogenia desta doença. Desde 1984 vários trabalhos têm sugerido que o leite materno é um fator de proteção para o DM1; esse efeito se daria devido às propriedades anti-infecciosas desse tipo de leite, ou pelo fato de que a amamentação ao seio evitaria que as crianças pudessem ser precocemente expostas a outros agentes etiológicos contidos nos substitutos do leite materno. Esses mesmos achados foram posteriormente encontrados em diversos estudos, mas o papel do leite materno no aparecimento do DM1 permaneceu controverso. Mais recentemente, em 1992, alguns pesquisadores observaram, entre os diabéticos, altas concentrações de anticorpos anti-albumina bovina. Os autores postularam a hipótese de que a albumina bovina poderia atuar como desencadeadora do processo destrutivo das células beta do pâncreas e, consequentemente, do diabetes. Resultados conflitantes foram observados nas publicações que se sucederam a essa. Esta pesquisa teve como objetivo estabelecer a relação entre a exposição precoce ao leite de vaca e a ocorrência de Diabetes mellitus tipo 1. O estudo é do tipo caso-controle. Foram entrevistadas 64 mães de portadores de Diabetes mellitus tipo 1 e 64 mães de controles, pareados por vizinhança, sexo, idade e raça. 84,4% (n=54) dos indivíduos diabéticos foram expostos ao leite de vaca antes dos 4 meses de idade, enquanto que no grupo controle este percentual foi de 64,1% (n=41). Houve uma relação estatisticamente significante entre os grupos (X²= 5,9; p = 0,01). O Odds Ratio (OR) calculado foi de 3,03 (IC 95% = 1,21 7,72; p=0,01) entre diabéticos e controles. Os resultados observados permitem estabelecer uma associação positiva entre a exposição precoce ao leite de vaca e a ocorrência de Diabetes mellitus tipo 1 na população estudada. Desta forma, acredita-se ser indicado, como forma de prevenir o aparecimento do Diabetes mellitus tipo 1, a amamentação exclusiva ao seio por pelo menos quatro meses, evitando-se a introdução precoce, na alimentação infantil, do leite de vaca e seus derivados.
