Production and Quality Evaluation of Compressed Freeze-Dehydrated Sour Cherries and Their Pies

High quality, mature sour cherries (Prunus cerasus L., cultivar Montmorency)were freeze-dehydrated, conditioned with one thousand part per million of sulfur dioxide solution spray followed by dry heat at 200 F for 1 minute and compressed with a pressure of 400 pounds per square inch. The samples were vacuum sealed in cans and stored at 100 F and 70 F for 6 months. The samples were analyzed every 2 months for compression characteristics, changes of color, acidity, anthocyanins, and ascorbic acid. Organoleptic evaluations were made for flavor, texture, and appearance of the rehydrated products prepared as pies. The results indicated that freeze-dehydrated sour cherries stored at 70 F maintained higher quality and had a slower rate of change than those samples stored at 100 F. The sulfited sample had a higher quality rating than the control sample.

Influence of Pre-Fermentation Inoculations With Leuconostoc Mesenteroides and Lactobacillus Plantarum on Physico-Chemical Properties of Fresh and Dehydrated Sauerkraut

The effect Leuconostoc mesenteroides and Lactobacillus plantarum has on the physical and chemical properties of fresh and dehydrated sauerkraut was tested. Sauerkraut inoculated with L . plantarum was slower in fermenting and significantly lower in acidity and higher in pH. Dehydration of sauerkraut by freeze-conventional hot-air and micro-wave processes produced a significant loss in volatile components, ascorbic acid , lactic acid and an increase in pH. Each of the dehydration processes caused browning of the sauerkraut . These changes were less with freeze-drying and increased with conventional hot-air drying and microwave drying. Gas-liquid chromatography confirms the loss of volatile components and the production of a new peak, occurring at 9 to 10 minutes , in the conventional hot-air dried and microwave dried. Sensory evaluation scores of freeze-dried and conventional hot-air dehydrated sauerkraut compared favorably with that of a canned commercial product.

O objetivo geral deste trabalho foi quantificar as vitaminas antioxidantes (tocoferóis, ácido ascórbico, α- e β-caroteno) bem como a composição química de amostras de pólen apícola obtidas em apiários georreferenciados da região sul do Brasil e desidratadas de forma controlada conforme recomendação da legislação brasileira. Inicialmente foi realizada a composição química de 21 amostras de pólen apícola desidratados sendo os valores médios de 3,37% para umidade, 19,80% para proteínas, 3,44% para lipídios, 2,02% para cinzas. Pode-se verificar que a maioria das amostras encontraram-se dentro dos parâmetros de qualidade preconizados pela legislação brasileira. Além disso, utilizando a cromatografia líquida de alta eficiência (CLAE), foi confirmando a presença de açúcares redutores glicose (6,77%) e frutose (5,39%) nas amostras. A determinação da vitamina C foi realizada por titulometria e os valores encontrados variaram entre 60 e 797 µg/g, sendo duas amostras consideradas fonte desta vitamina para homens e três para mulheres conforme a Ingestão Dietética de Referência (IDR). Já os tocoferóis e o α- e β-caroteno foram analisados por CLAE. Com relação aos tocoferóis (α-, β-, γ-, δ-tocoferol), os valores foram apresentados como equivalentes de alfa-tocoferol e variaram entre 0,57 e 11,7 mg/100g, podendo duas amostras serem consideradas fontes de vitamina E. Da mesma forma, duas amostras foram consideradas fontes de vitamina A, levando-se em consideração os valores encontrados para α- e β-caroteno, que variaram entre 3,9 e 4945 µg de equivalentes de retinol por 100g de amostra. A caracterização das amostras com relação a origem botânica mostrou uma grande variedade entre os tipos polínicos encontrados nas diferentes amostras. Chama-se atenção para o gênero Eucalyptus que esteve presente em 16 amostras, sendo em duas delas como pólen dominante (>45% do total de grãos), bem como duas amostras que puderam ser considerados monoflorais (>90% do total de grãos). Os resultados estatísticos (correlação) mostraram que alguns tipos polínicos se correlacionam de maneira positiva e forte com a composição nutricional do pólen apícola, como os gêneros Brassicacom os teores de lipídios e proteínas, Euterpe com o α-tocoferol, α- e β-caroteno, Piptocarpha com os tocoferóis (β-, γ- e δ-), Senecio com α- e β-caroteno. With respect to tocopherols (α-, β-, γ-, δ-tocopherol ), the values were expressed as equivalents of alpha-tocopherol and ranged between 0.57 and 11.7 mg/100g, so two samples can be considered sources of vitamin E. Similarly, two samples were considered sources of vitamin A, taking into consideration the values for α and β-carotene, ranging from 3.9 to 4945 µg of retinol equivalents per 100g of sample. The characterization of the samples with respect to botanical origin showed a variety of pollen types found in different samples. Attention is drawn to the genus Eucalyptuswhich was present in 16 samples, and in two of them as the predominant pollen (> 45 % of total grains counted) and two samples that could be considered monofloral (> 90 % of total grains counted). The statistical results (correlation) showed that some pollen types correlate positively and strongly with the nutritional composition of pollen as Brassica genera with the levels of lipids and proteins, Euterpe with α-tocopherol, α- and β-carotene, Piptocarpha with tocopherols (β- , γ- and δ-), Senecio with α- and β-carotene. This study contributes significantly to the chemical and botanical characterization and the georeferenced bee pollen produced in apiaries of southern Brazil, thus enhancing the product and bringing information and benefits to beekeepers and consumers and provide relevant data for the study and methodological standardization national and international for this product.

Os resultados mostraram que existe uma forte dependência da cinética de secagem e dos atributos de qualidade do produto liofilizado, fatias de abacaxi, em função das condições utilizadas durante a etapa de congelamento. A taxa de congelamento, a difusividade efetiva da água no período inicial da liofilização, a retenção de vitamina C, o índice de reidratação e a dureza das amostras foram afetados significativamente, a um nível de 95 % de significância, pela temperatura de congelamento e espessura das fatias de abacaxi. / The use of new processing technologies, which permit keeping the quality attributes of the product at similar levels of those observed in the raw material, has permitted to obtain dehydrated fruits with sensorial aspects appreciated by consumers and contributed to extend their availability for periods beyond their harvest season, allowing their consumption during the whole year. FundaÃÃo Cearense de Apoio ao Desenvolvimento Cientifico e TecnolÃgico / A maior necessidade por produtos de conveniÃncia, fÃceis de preparar, motivada pelo novo estilo de vida e, ainda, a invasÃo das prateleiras por produtos estrangeiros de alta qualidade e diversificaÃÃo, vÃm modificando o tradicional consumidor de alimentos. O objetivo desse trabalho foi obter camarÃo em pà por meio da aplicaÃÃo do processo de spray dryer, assim como determinar sua composiÃÃo centesimal, caracterÃsticas fÃsico-quÃmicas, estudar a estabilidade do produto embalado em dois tipos de embalagens (laminada e polietileno) com e sem vÃcuo e armazenado por um perÃodo de 120 dias e ainda aplicar o camarÃo em pà na formulaÃÃo de snacks assim como avaliar sua composiÃÃo centesimal, caracterÃsticas fÃsicas e avaliaÃÃo sensorial. Os resultados mostraram que à dispensÃvel o uso de adjuvantes de secagem na desidrataÃÃo do camarÃo em spray dryer, podendo perfeitamente ser desidratado na temperatura do ar de entrada de 120 ÂC. O camarÃo em pà apresentou um valor nutricional satisfatÃrio com elevado teor proteico e baixo teor de gordura assim como uma fonte apreciÃvel de minerais. O estudo da estabilidade permitiu observar que o uso de vÃcuo nÃo surte total efeito sobre o produto, exceto no que se refere à oxidaÃÃo lipÃdica, em contra partida hà uma diferenÃa significativa entre as embalagens, apresentando a embalagem laminada maior eficÃcia na manutenÃÃo da atividade de Ãgua e umidade. O camarÃo em pà contribuiu para o aumento do valor nutricional do snacks especialmente no referente ao teor de proteÃnas e minerais. O processo de secagem em spray dryer nas condiÃÃes estipuladas nesse estudo se mostraram eficientes na obtenÃÃo do camarÃo em pà com caracterÃsticas nutricionais e fÃsico-quÃmicas de qualidade que favorecem sua utilizaÃÃo na formulaÃÃo de snacks. / The greatest need for convenience products, easy to prepare, driven by new lifestyle and also the invasion of shelves for foreign products of high quality and diversification, have been modifying the traditional consumer of food. The aim of this study was to obtain shrimp powder by applying the spray dryer process, and to determine their chemical composition, physical and chemical characteristics, to study the stability of the packaged product in two types of packaging (laminated polyethylene) with and without vacuum and stored for a period of 120 days and still apply the shrimp powder in snacks formulation also its chemical composition, physical characteristics and sensory evaluation. The results showed that it is unnecessary to use adjuvants in the drying dehydration of the shrimps in spray dryer, which can be perfectly dehydrated at 120  C inlet air temperature. The powdered shrimp showed a satisfactory nutritional value with a high protein content and low fat content and a substantial source of minerals. The study of the stability has observed that the use of vacuum do not freak total effect on the product except as regards to lipid oxidation, departure counter there is a significant difference between the packaging, the packaging laminate having the most effective in maintaining activity water and moisture. The shrimp powder contributed to increasing the nutritional value of the snack, especially in regard to the protein content and minerals. The drying process in spray dryer in the conditions stipulated in this study were efficient in getting the shrimp powder with nutritional and physicochemical quality characteristics that favor its use in snacks formulation.

Influence of Storage Duration, Temperature, and Oxygen on Quality of Stored Dehydrated Foods

This study was undertaken to determine the effect of oxygen absorber packets (OAP) (AGELESS Z.300 E) in improving the shelf-life of selected dried food products, including dried potato pearls, dried sliced apple, dried carrot, white rice, nonfat dry milk, all purpose flour, rolled oats, and wheat. Items were stored at four different temperatures (-20, 10, 21, and 29.5°C) over a period of 24 months with observations at 6-month intervals. Hunter colorimeter, thiobarbituric acid reactive substance (TBARS) germination rate, gluten weight, and volume were parameters used as quality indicators of various dried foods. Statistical analysis indicated a significant time and temperature effect for almost all the stored products. Storage at a high temperature (29.5°C) renders OAP ineffective in reducing browning during storage. Potato pearls, dried sliced apple, and dried carrot exhibit darkening by the first 6 months of storage at 29.5°C regardless of oxygen status of the container. White rice showed yellowing under the same conditions. Most of the dried food products that were stored at 10 and 21°C with or without oxygen absorber packets maintained their color as indicted by a relatively constant lightness reading (L*) over time. TBARS values rose in all stored food with increasing storage time, especially when the dried products were stored at higher temperature (29.5°C). Statistical analysis indicated a significant OAP effect in reducing TBARS concentration over time. Germination of wheat kernel was reduced to less than 80% after 24 months of storage at 29.5°C. However, when stored with oxygen absorber packets, germination was still 86%. Storage length and temperature are the primary factors that determine the quality of home-stored dried food items.

El aguaymanto es un fruto andino con muchas propiedades beneficiosas para la salud al punto de ser considerado un superalimento, lo que lo convierte en un alimento exótico y de alto valor nutritivo. El proceso de deshidratado, mediante el cual se retira el agua del fruto, asegura conservar todas las propiedades de éste, alargando su tiempo de vida. Con la tendencia mundial por consumir alimentos saludables, Estados Unidos (específicamente California) se presenta como el mercado más atractivo por el alto porcentaje de personas deportistas que valoran este tipo de alimentos. El aguaymanto ya es comercializado en Estados Unidos en diferentes presentaciones, incluso deshidratado. Sin embargo, nuestro proyecto busca establecer las ventajas competitivas siguientes: Mercado objetivo compuesto por deportistas y personas que se ejercitan. Empaque conveniente para el transporte. Alianzas comerciales con Tiendas especializadas y distribuidoras de alimentos saludables. Alta calidad del producto.
