Assessing the demand for phytosterol-enriched products

Phytosterol is a healthful ingredient that helps reduce blood cholesterol levels. It has been over ten years since the first phytosterol-enriched product, Benecol margarine, was launched in Finland in 1995; however, understanding of this product is still limited. In addition, it has been shown in the literature that health-related concerns have an influence on consumers’ decisions to consume harmful or beneficial ingredients. This study estimates the demand for three phytosterol-enriched products in the categories of margarine, orange juice and yogurt. The objectives of this study are (1) to estimate price and expenditure elasticities for phytosterol-enriched brands and comparative non-phytosterol brands, (2) to identify cannibalization effects with a proposed methodology, and, (3) to estimate the welfare effects associated with the introduction of a product. Subsuming LA/AIDS, Rotterdam, CBS and NBR demand systems, the Barten synthetic demand system is applied to margarine weekly scanner data. Phytosterol-enriched margarine brands (Benecol and Take Control) commanded significantly higher prices relative to other margarine brands. Strong substitutability among the phytosterol brands was evident as suggested by the statistically significant and relatively large compensated cross-price elasticities. Cannibalization is defined as the competition between products offered by the same firm. Cannibalization studies are important to multi-product firms because they provide insights into the benefits of offering product variety. In addition, the identification and assessment of cannibalization are integral factors for strategic decisions of new product introductions. However, there are no standard measures to identify its effects. We use the Barten synthetic demand system along with two conventional measures to illustrate that the use of cross-price elasticities derived from a flexible demand system is a viable alternative to identify cannibalization effects. The third objective analyzes the consumer welfare effects associated with a new functional food product introduction. Using the Barten synthetic model and pre- and post-introduction scanner data, we estimate direct price and variety effects associated with the introduction of a new functional food product (i.e., phytosterol-enriched product). With post-introduction data and an assumed demand structure, we also estimate indirect price effects. Our results suggest notable welfare effects consisting of a relatively small price effect and a large variety effect.

Denna studie utvärderar ekonomiska styrmedels effekt på konsumtionen av livsmedel samt ifall skatter och subventioner kan vara en metod som styr matkonsumtionen mot hälsosamma livsmedelsval. Sex livsmedelsgrupper analyseras i studien och dessa är sötsaker och glass, kött, grönsaker, mejerivaror, bröd och spannmålsprodukter samt frukt och bär. Fyra scenarier som representerar olika skatte- och/eller subventionsreformer simuleras för att analysera vilken effekt ekonomiska styrmedel kan ha på matkonsumtion och hälsa. Responsen som de ekonomiska styrmedlen har på matkonsumtionen beräknas med elasticiteter som tagits fram från parameterestimat i AIDS-modellen. Den data som ligger till grund för den ekonometriska modellen är aggregerad konsumtionsdata, konsumentprisindex och livsmedelsförsäljning. Resultatet från studien visar att det går att styra konsumtionen av livsmedel men att substitution mellan varor kan leda till att de hälsomål som reformen är menad att nå inte uppfylls.

Short of time or short of money? - A two constraint demand system on Canadian food consumption

This research develops a food demand system model based on the Linear Almost Ideal Demand System (LA/AIDS). The major contribution of this research is that the opportunity cost of time on food cooking/cleaning up is modeled in the demand system. Different from the traditional one constraint demand, this two constraints LA/AIDS model better captures consumer behavior and attitude toward food choice –food at home (FAH), sugar sweetened beverage (SSB), food away from home (FAFH). Using Statistics Canada Food Expenditure Survey (FES) and General Social Survey-time use, a two sample two stage least square (2S2SLS) is an applied in the data estimation. The empirical results show most coefficient estimates and own price elasticities are significant. FAH and FAFH are found to be more price elastic compared to a one constraint model, and SSB is found to be more price inelastic. This research provides a new perspective to estimate potential food policies, such as, a tax on SSB, or a food tax on "junk food".

Essays in applied demand and production analysis

Using farm level data, the first essay applied nonparametric methods to test the adherence of individual farm’s production choices to profit maximization objective. Results indicate that none of the farms consistently satisfy the joint hypothesis of profit maximization. The study took into account the uncertainty prevalent in agricultural production by systematically modeling the optimization behavior of farms. Departures of observed data of individual farms from profit maximization objectives were attributed more due to stochastic influences caused by output production decisions than input use decisions. Results also support the existence of technological progress during the study period for Kansas farms. At an alpha level of 5%, assuming both input and output quantities as stochastic, only 5.3% of the farms violated the joint hypothesis of profit maximization with standard error exceeding 10%. Whereas when only input quantities are considered stochastic, a total of 71.73% and 2.09% of the farms had minimum standard errors of greater than 10% and 20% respectively required for the joint profit maximization hypothesis to hold. When only output quantity measurements were assumed as stochastic, a total of 80.10 % and 18.84 % of the farms had minimum standard errors of greater than 10% and 20% respectively required for the profit maximization hypothesis to hold. The second essay examines the demand for alcoholic beverages (beer, wine and distilled spirits) for the U.S. using time series data from 1979-2006. The estimation is done using an error correction form of the Almost Ideal Demand System . Results indicate that there is a significant difference between short run and long run elasticity estimates. The paper addresses the exogeneity of log of prices and log of real expenditures. For the beer and wine equations, the hypothesis of joint exogeneity of price index and real expenditure cannot be rejected at all the conventional levels of significance. For the spirits equation, the tests strongly reject the simultaneous exogeneity of price index and real expenditure. When independently tested, price index appears to be endogenous variable where as real expenditure seems exogenous variable. Based on these results, the real expenditure was considered as an exogenous variable, where as the price index for spirits as an endogenous variable.

ESSAYS ON ORGANIC FOOD MARKETING IN THE U.S.

This dissertation examines organic food marketing from three aspects: household demand for organic food, household choice of retail formats accounting for preference organic food preference, and farmers’ joint adoption of organic farming and direct marketing methods. In Chapter Two, given the fast growth of private label milk and organic milk in the U.S., we estimate a censored demand system to study the demand relations among types of milk differentiated by brand types and organic status, using recent Nielsen Homescan data. We find that sociodemographic factors still play important roles in a household choice of milk types, and fluid milk is an inferior good. Moreover, as income increases, households are more likely to shift from buying conventional milk to organic milk and from private label conventional milk to branded conventional milk, as indicated by the asymmetric cross price elasticities. In Chapter Three, we examine whether households’ preference for organic food can affect their retail format choices for their grocery shopping trips. We model households’ choices of five major retail format with a conditional logit model, also using the Nielsen Homescan data. Our main findings are that regular organic user households are more likely to patronage organic specialty stores and discount stores, but less likely to shop in warehouse clubs. Price, consumer loyalty, and household shopping behavior also affects household retail format choice. In Chapter Four, we examine the relation between farmers’ adoption of organic farming and direct marketing, given their similar objectives in satisfying consumer demand and increasing farm income. We model farmers’ adoption of the two practices with a bivariate simultaneous linear probability model using data from USDA Agricultural Resource Management Survey. Our main finding is that the farmers’ adoption of organic farming decreases their probability of adopting direct marketing, whereas the reverse effect is insignificant. Also, organic farming is found to improve gross farm income.

Essays on semi-parametric Bayesian econometric methods

This dissertation consists of three chapters on semi-parametric Bayesian Econometric methods. Chapter 1 applies a semi-parametric method to demand systems, and compares the abilities to recover the true elasticities of different approaches to linearly estimating the widely used Almost Ideal demand model, by either iteration or approximation. Chapter 2 co-authored with Dr. Melvyn Weeks introduces a new semi-parametric Bayesian Generalized Least Square estimator, which employs the Dirichlet Process prior to cope with potential heterogeneity in the error distributions. Two methods are discussed as special cases of the GLS estimator, the Seemingly Unrelated Regression for equation systems, and the Random Effects Model for panel data, which can be applied to many fields such as the demand analysis in Chapter 1. Chapter 3 focuses on the subset selection for the efficiencies of firms, which addresses the influence of heterogeneity in the distributions of efficiencies on subset selections by applying the semi-parametric Bayesian Random Effects Model introduced in Chapter 2.

O consumo per capita de pescados no Brasil é relativamente baixo quando comparado com as outras proteínas de origem animais. Do lado da oferta, este fenômeno está relacionado com diversos fatores como, por exemplo, a sobre pesca, a baixa produção nacional, a distância entre centros produtores e consumidores etc. Este trabalho aborda os fatores que estão ligados à sua demanda, tais como: a influência dos preços e da renda da população no seu consumo. Inicialmente, caracterizou-se o problema da oferta de pescados no Brasil. Em seguida, foi feita uma revisão sobre a teoria econômica e o método de cálculo da função e de suas elasticidades para a forma funcional conhecida por Almost Ideal Demand System - AIDS. A partir dos microdados da Pesquisa de Orçamento Familiar - POF 2002-2003, fez-se uma análise descritiva da demanda por pescados no Brasil. Finalmente, foram estimadas as funções demanda e calcularam-se as elasticidades para dois tipos de agrupamentos: um que considerou 5 grupos de proteínas animais e o outro com 7 grupos de alimentos. Estas funções foram estimadas para o Brasil e para duas macro-regiões: Norte-Nordeste e Centro-Sul. Os principais resultados são: o consumo per capita de pescados é baixo porque poucos domicílios consomem pescados. O consumo de pescado da Região Norte-Nordeste é significativamente diferente do padrão observado na Região Centro-Sul do país. Os principais produtos substitutos aos pescados no país são as proteínas mais elaboradas e não as carnes mais tradicionais como a de aves e as vermelhas. Os supermercados são os pontos de vendas mais utilizados pelos consumidores de pescados de renda mais elevada, principalmente na Região Centro-Sul, mas os pequenos estabelecimentos comerciais também possuem grande importância na comercialização de pescados para o consumidor final, principalmente, na Região Norte-Nordeste. / Per capita consumption of fish in Brazil is relatively small as compared to other animal proteins. A descriptive analysis of fish demand in Brazil using the microdata called the Familiar Budget Research - POF 2002-2003 is presented. Finally, demand functions and their elasticities are calculated for two different cases: one considering 5 groups of animal proteins and other with 7 groups of food categories. These functions are estimated for Brazil as a whole and two macro-regions: Northnortheast and Center-South. The main results are: per capita consumption of fish is low in Brazil because few households consume fish. The pattern of fish consumption in the North-Northeast Region is different as compared to the Center-South. The main substitutes for fish are the processed proteins and not the traditional types of meat as chicken and red meat. For high income households located mainly in Center-South Region, fish are mainly purchased in supermarkets. However, small commercial establishments are still important in the fish retail market, especially in the North-Northeast.

Essays on redistribution and local public expenditures

<p>This thesis consists of a summary and four papers. The first two papers are theoretical contributions within the area of optimal taxation and public expenditures under asymmetric information between the government and the private sector, and the last two are empirical contributions to the literature on local public expenditures.</p><p>Paper [I] concerns the optimal use of publicly provided private goods in an economy with equilibrium unemployment. The paper points out that imperfect competition in the labor market gives rise to additional policy incentives associated with the self-selection constraint, which motivates adjustments in the public provision of private goods. It also addresses employment related motives behind publicly provided private goods.</p><p>Paper [II] addresses optimal income and commodity taxation in a dynamic economy, where used durable goods are subject to second-hand trade. In our framework, the government is unable to directly control second-hand transactions via commodity taxation. We show how the appearance of a second-hand market affects the use of commodity taxation on the new durable goods as well as the use of income taxation.</p><p>Paper [III] relates the existence and size of the flypaper effect to observable municipal characteristics. The analysis is based on a political economy model, which implies that the effect of a change in the tax base on the majority voter's tax share will be crucial for finding a flypaper effect. The empirical part is based on Swedish data on municipal expenditures and revenues for the period 1996-2004. The results show that the size of the flypaper effect varies among municipalities depending on the relative composition of grant and tax base.</p><p>In Paper [IV], the composition of municipal expenditures in Sweden is analyzed by estimating a demand system for local public services, in which tax revenue collection is treated as endogenous. The estimation is based on the QAIDS specification and uses panel data for the period 1998-2005 and for six local public services. The results show that the point estimates of the income elasticities are positive (with one exception), whereas the point estimates of the own-price elasticities are negative and less than one.</p>
