Denna studies syfte är att undersöka tillagningskök i kommunala skolor och hur dessa praktiskt tillämpar arbetssätt för att minimera matsvinn. I bakgrunden behandlas ämnets ökande nutida relevans, tidigare forskning kring olika typer av interventioner och deras effektivitet samt den aktuella kommunens tidigare åtgärder. Deltagande observationer utfördes sedan vid två tillfällen i tillagningskök hos två mindre skolor i Umeå kommun. Den etnografiska rapporten analyserades taxonomiskt där fyra domäner samt ett antal underdomäner identifierades vilka presenterades tillsammans med utdrag ur narrativet. Resultatet och diskussionen visar och exemplifierar hur de två observerade skolornas kök tillämpar arbetssätt i praktiken. Studien visar att mätningen av matsvinnet i dagsläget inte utförs på ett enhetligt och jämförbart vis vilket försvårar möjligheten att undersöka de svinnreducerande arbetssättens effektivitet. Vidare forskning i ämnet rekommenderas för att kunna fastställa vilka arbetssätt som är effektiva ur ett svinnreducerande perspektiv och även är överförbara till andra skolor. / The purpose of this study is to investigate municipal production of food in school kitchens and the applied procedures used within them to minimize food waste. The background contains information about the growing academic interest in the subject of food waste. It also provides an overview of the scientific literature regarding waste reduction interventions and their efficacy and the earlier measures taken by the municipal regarding the subject. Two participating observations was performed on two schools in Umeå municipality. The ethnographic record of these observations was analyzed taxonomically where four domains and several subdomains were identified which were presented together with excerpts from the narrative. The result and discussion exemplify how the two schools were applying procedures in practice. During the time of this study the measuring of food waste was not performed in a homogenous manner which created difficulty in evaluating the efficiency of the applied procedures. Further research in the subject is recommended to identify which food waste reducing interventions observed are effective and can be transferred to other schools.
