Nosso objetivo foi o de investigar o conjunto de experiências de pessoas que se autodeclaram vegetarianas, veganas e onívoros (nossos participantes da pesquisa), observando os impactos dos aspectos culturais, subjetivos/identitários e políticos/ideológicos no processo de suas escolhas alimentares. Em linhas gerais, nossa principal questão de pesquisa é a de compreender como se constituem as escolhas alimentares de vegetarianos, veganos e onívoros. Para responder nossa problemática de estudo, partimos dos pressupostos teóricos da Psicologia Histórico-Cultural, especialmente com base nos conceitos formulados por Vigotski e autores contemporâneos, como Fernando González Rey. Para nosso trabalho empírico, que teve como alicerce o modelo de pesquisa construtivo-interpretativa, entrevistamos 14 adultos veganos, vegetarianos e onívoros, a fim de compreender as construções subjetivas envolvidas no processo de suas escolhas e hábitos alimentares. Nossa pesquisa pode constatar que tese da alimentação humana como uma construção social é sustentada pelos pressupostos teóricos desenvolvidos por Vigotski e que foi possível identificar, através de nossos estudos empíricos, o alcance do aporte da Psicologia Histórico-Cultural para compreender os fenômenos da alimentação humana. Porém, a Psicologia ainda carece de maiores aprofundamentos sobre a questão da construção social de nossas escolhas e preferências alimentares. / This doctoral thesis presents a study on vegetarianism and veganism from a reading of Historical-Cultural Psychology, understanding that the acquisition of food habits and preferences, besides being a biological process, occurs in the relationship with another. Our objective was to investigate the set of experiences of self-described vegetarians, vegans and omnivores (our research participants), observing the impacts of cultural, subjective / identitary and political / ideological aspects in the process of their food choices. In general terms, our main research question is to understand how the vegetarian, vegan and omnivorous food choices are constituted. In order to answer our study problem, we start from the theoretical presuppositions of Historical-Cultural Psychology, especially based on the concepts formulated by Vygotsky and contemporary authors, such as Fernando González Rey. For our empirical work, which was based on the constructive-interpretive research model , we interviewed 14 vegan, vegetarian and omnivorous adults in order to understand the subjective constructs involved in the process of their choices and eating habits. Our research can verify that the thesis of human food as a social construction is supported by the theoretical assumptions developed by Vygotsky and that it was possible to identify, through our empirical studies, the reach of the contribution of Historical-Cultural Psychology to understand the phenomena of human food. However, Psychology still lacks further insight into the question of social construction of our food choices and preferences.
