Funkčnost a efektivita systému HACCP a nutriční jakost stravy v zařízení společného stravování / The functionality and effectiveness of the HACCP system and the nutritional quality of meals in public catering facilities

Objectives: The first aim of this diploma thesis was to analyze the functionality and effectiveness of the HACCP system in selected catering facilities. Other goals were to find out how to make a meal and find out the satisfaction of meals with a meal composition. Research Questions: 1. How is the temperature controlled at the expedition of the dishes in vessels and their direct dispatch? 2. How is the schedule plan of food delivery fulfilled? 3. How is the concrete diet created? 4. How are the borders satisfied with the composition of the diet? Methodology: A qualitative research survey was used in the practical part. There is the secondary analysis of HACCP data, a field survey by measuring temperature and participating in food distribution. In addition, a personal interview was conducted with the leader on nutritional recommendations and diet. Personal interviews with fifteen boarders were conducted. Results: The results of the survey point out the fact that, although shortcomings in the HACCP legislation and production chart have been identified, the critical control point of food temperature measurement is effective. The lunch distribution plan was respected. An increase in the critical limit at this critical control point has been proposed. It was recommended to introduce a critical control point when receiving raw materials. It was also found that the diet was prepared according to the preferences of the boarders. The supervisor has insufficient knowledge of nutritional recommendations. A leaflet and a recipe for a healthy alternative to traditional dishes were created. Desserts prefer traditional Czech cuisine. They prefer meat dishes, frying and baking. They are not interested in adding vegetarian dishes and legumes. The gained information can also contribute to selected catering meals to other catering companies, public health workers and students in the field.

Detta arbete undersöker synkroniseringstekniken dead reckoning i racingspel. Mer specifikt hur en variant, där objekts avstånd från varandra dynamiskt kontrollerar hur ofta de synkroniseras över nätverket, presterar gällande bandbreddsåtgång och konsistens jämfört med vanlig dead reckoning som alltid synkroniserar lika ofta. Det undersöks också hur banornas karaktär och egenskaper påverkar resultatet. Det visar sig att denna dynamiska dead reckoning har god potential att ge förbättringar gällande bandbreddsåtgång och att banornas utformning har stor inverkan över hur stor denna potential är.

Na década de 90, a corrida de rua sofreu uma alteração significativa no seu conceito de evento. O caráter de entretenimento começou a ser explorado pelos produtores de eventos desse setor, fazendo emergir o conceito de corridas fashions. Só no estado de São Paulo, foram ofertados 415 eventos de corrida de rua, no ano de 2015. Percebendo esse mercado em expansão, empresas de diversos setores procuram se aliar ao esporte em questão e, em contrapartida, as produtoras desses eventos procuram esses patrocinadores para o financiamento das atividades. Com isso, o objetivo desse trabalho foi identificar os perfis de patrocinadores que agregam mais valor aos eventos de corrida de rua: um estudo na visão dos consumidores desse esporte. Para responder esse objetivo, optou-se por uma metodologia qualitativa de caráter exploratório. Foi aplicado um questionário misto à uma amostra de 407 corredores, em quatro eventos de corrida de rua. Esse questionário continha perguntas abertas e fechadas, e as respostas foram analisadas por meio das frequências e seus conteúdos, respectivamente. Como resultado, obteve-se um perfil de patrocinador que seja de segmentos congruentes com o esporte e a corrida de rua, como segmento esportivo, alimentício e de calçados para corredores. Além disso, segundo os consumidores, é importante que os patrocinadores ativem suas marcas durante os eventos da modalidade. Essas ativações devem ser associadas aos atributos que esses consumidores consideram como atributos da corrida de rua, como, saúde, amizade, qualidade de vida, bem-estar, socialização e diversão. Conclui-se que existem patrocinadores que agregam mais valor do que outros, na ótica do consumidor desse esporte. Essas informações podem ser úteis para os produtores de corrida de rua, uma vez que essas empresas que devem ser procuradas em uma possível prospecção de patrocinadores para os eventos da modalidade. Patrocinadores que agregam mais valor ao evento são percebidos pelos consumidores, o que resulta em uma percepção positiva daquele evento em questão e de seus patrocinadores / In the 90s the street race underwent a significant change in your event concept. The entertainment character began to be exploited by the event producers in this sector, giving rise to the concept of fashions races. Only in the state of São Paulo were offered 415 street racing events in 2015. Realizing this expanding market, companies from various sectors are seeking to combine the sport in question, and in turn producing these events seek these sponsors for funding these activities. Thus, objective of this study was to identify the profile of sponsors that add more value to street racing events: a study in view of the consumers of this sport. To meet this objective we chose a qualitative methodology exploratory. A mixed questionnaire to a sample of 407 runners in four road race event was applied. The questionnaire contained open and closed questions, which the frequencies were analyzed the responses and their contents respectively. As a result we got a sponsor profile that is congruent segments with sport and street racing as sports segment, food and shoes for runners. Moreover, according to consumers, these sponsors must activate their brands during the sport events. These activations should be associated with attributes that consumers consider as street racing attributes as health, friendship, quality of life, well-being, socialization and fun. It is concluded that there are sponsors that add more value than others in the consumer\'s view of this sport. This information can be useful for street racing producers, since these companies should be sought in a possible prospect for sponsors for the sport events. Sponsors that add more value to the event are perceived by consumers, resulting in a positive perception of that event in question and its sponsors

Real-time Wind Direction Filtering for Sailboat Race Tracking

In this paper, an algorithm that calculates the direction of the wind from the directions of sailors during fleet races is proposed. The algorithm is based on a 1-D spatial convolution and it is named Convolution Based Direction Filtering (CBDF). The CBDF-algorithm is used in the TracTrac race client that broadcasts sailboat races in real-time. The fact that the proposed algorithm is polynomial makes it suitable, to be used as a real-time application inside TracTrac, even for large fleets. More concretely, we show that the time complexity of the CBDF-algorithm is O(n2), in the worst-case, where n > 0 is the number of boats in competition. It is also shown that in more realistic sailing scenarios, the CBDF-algorithm is in fact a linear algorithm.

This thesis is concerned with the use of some optimization methods in harness racing. In the first part of the thesis, both critical path method and critical chain method of the project management are applied to horse racing projects. Then a comparison is made in order to choose a suitable method under various conditions. As a result, we can suggest improvements in horse racing organization. In order to determine optimal number of racing days, races and other aspects within a season, an optimization model is created in the second part of the thesis. Minimization of cost or maximization of number of starts can be chosen as an objective function. Various constraints are considered.

Kvalitativní studie tvorby strategie ve sportovní organizaci / A Qualitative Study of Strategy Creation in a Sports Organization

Strategy is generally considered as one of the most important factors of organizations´ success. However, it can be supposed that this theory is applicable for all sectors. The diploma thesis focused on the perception of strategy, strategic planning cycle and its impact on the particular sports industry. This industry is Thoroughbred horse racing. The field of research was application of management theory in the particular horse racing club, its use and the impact on the clubs´ performance, which could lead to potential implementation of necessary changes. The research was conducted using qualitative approaches. Research was based on two pillar, in-depth interviews and participant observation. This approach increased the validity of the statements thanks the triangulation of sources. The findings discuss that the strategy seems to be unimportant for clubs´ managers, although they significantly work on some parts of the strategic planning cycle. However, this fact do not negatively affect the clubs´ performance. It is therefore desirable but not necessary, to make changes and create the strategy.

The main aim of this work is to investigate and record the arrival of a mountain bike in Vimpersko from 1989 to the present. Partial objectives include recording the main characters associated with the emergence of mountain bike races and a section in Vimperk and linking the topic with the history of cycling in the Czech Republic. The main method of work is the historical method enriched with interviews with the main actors of mountaine biking in Vimpersko.
