Effect of storage pre-treatments and conditions on the dehulling efficiency and cooking quality of red lentils

This study focuses on investigating the effect of post-harvest handling conditions and storage time on the dehulling efficiency and cooking quality of two varieties of red lentils, as well as optimizing the dehulling conditions. The effects of storage time, storage moisture content and storage temperature, as well as the effect of different storage pre-treatments aiming to simulate post-harvest handling, were studied. Dehulling efficiency was mostly affected by the pre-milling moisture content, regardless of the storage conditions. Pre-treatments involving moisture content changes lowered the dehulling efficiency of both varieties of red lentils, whereas freezing and thawing cycles had less of a negative effect on the dehulling characteristics. Textural parameters were mostly affected by storage time; samples became harder after storage. The final recommendation arising from this study is to monitor the moisture content of lentils during storage as it has a detrimental effect on both the dehulling and cooking quality.

[pt] Reflexões de uma dada superfície podem ser modeladas acuradamente considerando-se a transferência de energia entre superfícies, seguida da aplicação do princípio de conservação de energia. A técnica que implementa esse conceito é chamada de Método da Radiosidade. Imagens realistas de uma cena que contenha em grande parte superfícies difusas podem ser produzidas usando-se essa técnica. Por outro lado, o método original é mais apropriado para representação realista de superfícies suaves, ou lisas (sem rugosidade). Mas esse tipo de característica não é representativa do comportamento da reflexão de luz na maioria dos objetos reais. Modificar o método básico da Radiosidade levando-se em conta esse fato resultaria em uma tarefa extremamente complexa para se aplicar ao modelo de iluminação global. Um meio termo adequado para se conseguir uma boa representação de superfícies rugosas seria a pós-renderização das superfícies usando um modelo de iluminação local, feita logo após da aplicação do método básico da Radiosidade. As técnicas que procuram adicionar detalhes de superfície no nível de iluminação local são conhecidas por Métodos de Texturização, dos quais podemos citar o Mapeamento de superfícies, Bump Mapping e Texturas Procedimentais como exemplos. O presente trabalho é uma tentativa de produzir imagens realistas usando uma combinação das duas técnicas descritas. Partindo-se de um pacote gráfico existente que implementa o método básico de Radiosidade, foram feitas modificações no código fonte com o intuito de implementar técnicas de texturização de pós-renderização em dois casos (Mapeamento de superfícies e Texturas Procedimentais). O resultado foi a produção de imagens que, embora não totalmente corretas (do ponto de vista da conservação de energia), conferem às cenas um maior grau de realismo. / [en] Diffuse reflections from a given surface can be accurately modeled by considering transfers between surfaces, subject to conservation of energy laws. The technique which implements that concept is generally know as Radiosity method. Realistic images of a scene that contains mostly diffuse surfaces can be produced using that technique. On the other hand, the original method is suited mostly to the fair representation of smooth surfaces. However, most objects do not have smooth, even surfaces. Modifying the Raiosity original technique to compromise in order to go around that task would be to pos-render the surfaces on a local illumination model, after the global illumination model is applied. Such techniques to add surface detail on a local illumination level are known as Texture methods, of which Surface mapping, Bump mapping and Procedural texturing are examples. The present work is an attempt to produce realistic images using the blending of two described techniques. Using an existing Radiosity software package as a starting point, the autor made modifications to the source code in order to implement texture Techniques on a pos-render base in two instances (Surface Mapping and Procedural texturing). The result was the production of images, that though not entirely accurate (from the energy conservation point of view), convey a more realistic sense to the scene.
