Bakgrund: Det senaste decenniet har allt fler stormarknader och lågprisbutiker öppnat vilket har lett till att de mindre livsmedelsbutikerna blivit utsatta för större konkurrens. Parallellt med att stormarknaderna tagit marknadsandelar i dagligvarubranschen har även större fokus riktats mot ökat samarbete och informationsdelning i försörjningskedjan, så kallat Supply Chain Management (SCM). Inom dagligvarubranschen har Efficient Consumer Response (ECR) utvecklas ur samma idéer som SCM men med fokus på livsmedel och dess försörjningskedjor. I grund och botten handlar ECR om företagens gemensamma arbete för att integrera verksamheter, minska kostnader samt producera största möjliga nytta för slutkonsumenten. Med tanke på den ökade konkurrensen i dagligvaruhandeln samt det faktum att det finns ont om tidigare forskning om små och medelstora företag (SME:s) relaterat till SCM/ECR, är det intressant att undersöka hur dessa företag påverkas av samarbetet. Det går att ifrågasätta om SCM/ECR samarbetet i försörjningskedjan är väl anpassat för de små och medelstora butikerna längst ut i försörjningskedjan, samt om det lämnar något utrymme för dem att differentiera sig och i längden skapa hållbara konkurrensfördelar. Syfte: Syftet med studien är således att undersöka hur SCM och ECR i dagligvarubranschen påverkar SME:s längst ut i försörjningskedjan. Mer specifikt syftar uppsatsen till att undersöka om SCM/ECR samarbetet är anpassat för de små och medelstora företagen. Syftet är även att undersöka om samarbetet lämnar utrymme för dessa företag att differentiera sig? Metod: Studien har utförts med en kvalitativ ansats, varvid sex semistrukturerade besöksintervjuer har genomförts med tre ICA – och tre Hemköpshandlare, vilka alla kan anses driva SME:s i dagligvarubranschen. Slutsats: I studien har det identifierats att SCM och ECR har haft stor påverkan på små och medelstora butiker i livsmedelsbranschen. Samarbetet tycks ha haft positiv men också negativ påverkan på butikernas dagliga verksamhet samt långsiktiga styrning. Vidare har det konstaterats SCM och ECR har minskat de små och medelstora butikernas lokala differentieringsmöjligheter.

Use of sensory analysis and social media for product development driven by consumers: a case-study for smoked bacon / Uso da análise sensorial e redes sociais no desenvolvimento de produtos direcionados pelos consumidores: um estudo de caso para o bacon defumado

Daily food selection is made without much effort and is determined by experienced, affective, and intuitive processes, commonly expressed through social media. However, the majority of the current studies in sensory and consumer science use classical methods without considering social media, which are currently used to express the \"consumer-voice\". This fact could jeopardize the ecological validity and reliability of the current sensory methods. In this sense, studies based on classical and new sensory methods, along with social media, could provide more realistic results, since social desirable and rationalized responses to a \"stimulus\" would be prevented. In this context, the objective of the current work was to study the transition from classical sensory analysis to social media as an alternative in the development of smoked bacon considering the consumer\'s response. This thesis is divided into eight studies, with the first four studies based on the intrinsic properties of the product. In the following two studies the dynamic sensory perception, using the Temporal Dominance of Sensations, was studied. The two final studies addressed the non-sensory properties associated with smoked bacon. The results of the present study indicated that the static sensory properties and the volatile profile of bacon were dependent on the smoking process. The dynamic sensory properties were dependent on the smoking, fat content and mastication. Non-sensory factors affected the representation of smoked bacon, with healthiness being the most important factor, followed by context of consumption and convenience. The lexicometric analysis of the tweets revealed that the main associations of the word bacon in twitter were: culinary preparations, occasions of consumption and positive feelings. Finally, it can be concluded that the transition process from classical methods to social networks is a growing phenomenon, which seeks to complement the static and dynamic intrinsic sensory measurements in the search for a better understanding of consumer\'s behavior. / A seleção diária dos alimentos é feita sem muito esforço e é determinada por processos vivenciados, afetivos e intuitivos, comumente demonstrados através das redes sociais. No entanto, a maioria dos estudos atuais em ciência sensorial e do consumidor usa métodos clássicos, sem considerar as redes sociais, que atualmente são usadas para expressar a \"voz do consumidor\". Este fato poderia prejudicar a validade ecológica e a confiabilidade dos métodos atuais de análise sensorial. Nesse sentido, estudos baseados em métodos sensoriais clássicos e novos em conjunto com as redes sociais, poderiam fornecer resultados mais realistas, uma vez que respostas socialmente desejáveis e racionalizadas em relação a um \"estímulo\" seriam evitadas. Nesse contexto, o objetivo deste trabalho foi estudar a transição da análise sensorial clássica para as redes sociais como uma alternativa no desenvolvimento de bacon defumado, considerando a resposta do consumidor. Esta tese está dividida em oito estudos, com os quatro primeiros estudos baseados nas propriedades intrínsecas do produto. Nos dois estudos seguintes a percepção sensorial dinâmica, usando a Dominância Temporal de Sensações, foi estudada. Os dois estudos finais abordaram as propriedades não sensoriais associadas ao bacon defumado. Os resultados do presente estudo indicaram que as propriedades sensoriais estáticas e o perfil de compostos voláteis do bacon foram dependentes do processo de defumação. Já as propriedades sensoriais dinâmicas mostraram-se dependentes da defumação, conteúdo de gordura e a mastigação. Os fatores não sensoriais afetaram a representação do bacon defumado, sendo a saudabilidade o fator mais importante, seguido do contexto de consumo e da conveniência. A análise lexicometrica dos tweets revelou que as principais associações da palavra bacon no Twitter foram: preparações culinárias, ocasiões de consumo e sentimentos positivos. Finalmente, pode-se concluir que o processo de transição dos métodos clássicos para as redes sociais é um fenômeno crescente, que busca complementar as medidas sensoriais intrínsecas estáticas e dinâmicas na busca por uma melhor compreensão do comportamento do consumidor.

Assim o varejo obteve uma forte tendência de concentração, buscando estar próximo ao seu consumidor. Por estar desenvolvendo praticas para melhor se adaptar a este novo cenário essa dissertação dentro dos princípios adotados pelo ECR Efficient Consumer Response, tem como objetivo de pesquisa analisar mais especificamente o processo de gerenciamento por categorias tendo como metodologia um estudo de caso, entre um fabricante da categoria de refrigerados lácteos e um supermercadista com o formato de loja compacta, levando em consideração a parceria e expectativas estabelecidas pelo supermercadista local e a capacitação industria parceira. Os resultados do estudo demonstram que o processo de GC profere resultados positivos na industria e varejo se os mesmos possuírem cultura organizacional alinhada e recursos mínimos necessários.

CONSUMER RESPONSE TO TABLE SPACING IN A FAST-CASUAL RESTAURANT

The purpose of this research was to evaluate consumer response based on two distances (12 and 24 inches) between tables in a fast-casual restaurant. An onsite survey was conducted to measure customers’ cognitive, emotional, and behavioral responses to questions on pleasure, privacy, stress, arousal, comfort, control, customer satisfaction, and future dining intentions based on their experience with the table spacing. Results showed that table spacing has an effect on diner’s pleasure, feelings of privacy, and sense of comfort and control. The results confirmed a strong correlation between customer satisfaction and future behavioral intentions.

Hey girl, what are your motives? : Exploring the purchase behavior motives of Swedish females when consuming high-end beauty and skincare products and the effects of online personalized advertising

Background: As retailing moves towards online shopping the number of online purchases have increased substantially over the last year in Sweden (Klarna Bank AB, 2019). The industry of high-end beauty and skincare products has experienced growth in 2019 (PostNord, 2019), which is of interest to investigate. There lies importance for firms in retrieving knowledge of how the target market thinks and reacts. This research allows for a deeper understanding of the motivations of consumer behavior, which will be of high value for retailers and marketers when further operating in 2020 and entering 2021.    Problem discussion: There is a growing body of literature that examines the motivations of consumer behavior, however, identified gaps have yet to accumulate. Even if online personalized advertising (OPA) is increasingly being used by retailers worldwide, its influence on Swedish females remains unexplored. This exploratory study was undertaken in response to the demand in Sweden and it attempts to draw meaningful connections between consumer response to OPA as well as the value motives explaining consumption behaviors.    Purpose: In order to fill gaps in previous literature, this research sought to build a theory, which will make meaningful sense of observations on Swedish females in the age group 18-35-year-old’s purchase behavior. More specifically, the research will create an understanding of how OPA influences Swedish females, and what values motivate the female consumer when completing a purchase of high-end beauty and skincare products, with and without respect to the influence of OPA.   Method: A qualitative approach with semi-structured in-depth interviews with 19 Swedish female participants in the age group 18-35 were conducted. The general analytical procedure for analyzing the collected data was used, and the data was further compared with previous literature.    Results: This research indicates that participants declare empathy and hedonic values to influence the completion of purchase. Within the category of empathy values, security is a key value when shopping online. When exposed to OPA, the values of being well-respected and self-respect were added to the explanation for consumer motives of purchases of high-end beauty and skincare products online.

Product form is the principal factor that affects the consumer response. It influences the consumer preferences in many ways and affects the success of the product in the market. The response is moderated by several influences including individual tastes and preferences, personal characteristics, cultural and social context and other situational factors. The purpose of this study is to find whether gender as a personal characteristics, has an influential effect on the perception of the product form. A survey was conducted with a sample set of mobile phones. To quantify the participants&amp / #8217 / perceptions, semantic differential method was used in which participants were asked to rate characteristics over a set of opposite adjective pairs. It is found out that, with respect to particular adjectives, responses to product form might be significantly different for males and females.

Quantifying consumer perception of designer intent

This thesis explores the relationship between designer intent and consumer response. A novel approach to evaluate the degree of correspondence between designer intent and consumer perceptions has been proposed. The empirical results have shown the influence of consumers’ cultural backgrounds on the way they perceive semantic and symbolic product personalities (characteristics of a product and its owner, respectively), comparing British and Japanese consumer groups. Semantic product personalities are more likely to be universally perceived and more easily intentionally elicited from consumers than symbolic product personalities. The research project consists of a pilot study (Phases I) and an experiment (Phase II) in which mixed methods of interview and survey are employed. Phase I seeks to explore the in-depth understanding of a designer’s thoughts by interviews, and to develop and test newly elaborated consumer surveys termed Designer-driven semantic differentials and Consumer-driven adjective selection. The findings have been considered to construct an analytical framework, characterised by Agreement among consumer perceptions and Correspondence between designer intent and the consumer perceptions, for evaluation of designers’ elicitation of intended product personalities from consumers. Phase II conducts a statistical examination of the impact of cultural difference on consumer perceptions under experimental conditions. The perception of target and non-target consumer groups as categorised by nationality were gauged by Designer-driven semantic differentials and Personality selection, specifically perception of USB sticks designed by three different designers. The survey results are analysed by using descriptive statistics, one-way ANOVA and Chi-squared test within the analytical framework. Subsequently, the results from Phase I and II are extensively discussed based on a framework based on brand personality and Affect Control Theory, both of which may involve potential impact on the development of design research into product development with emotional attachment. The scene is set for future research opportunities based on the approach and findings of this study.
