Varje dag serveras det cirka tre miljoner måltider inom den offentliga sektorn, där Sverige är ett av tre länder som erbjuder kostnadsfri måltid i förskola, skola och äldreomsorg. Lagen beskriver att måltiden ska vara näringsriktig och det är måltidsutvecklaren som tillsammans med kost-/ måltidschef arbetar med måltiderna. Som verktyg för att utveckla måltiderna rekommenderas FAMM modellen och Livsmedelsverkets måltidsmodell. Genom åren har yrkesrollen måltidutvecklare växt fram i kommunen och bidragit med arbete kopplat till utveckling av offentliga måltider. Yrkesrollen kan ses som ospecificerad angående utbildning, kvalifikationer och arbetsuppgifter. Därav fanns det intresse att studera yrkesrollen närmare.   Syftet är att studera yrkesrollen som måltidsutvecklare med avseende på yrkets innehåll och kvalifikationer samt uppfattningar och förväntningar på yrkesrollen hos måltidsutvecklare och kost-/måltidschefer i skånska kommuner. Syftet är följt med fyra frågeställningar om måltidsutvecklaren, kopplat till arbetsuppgifter, utbildning, kompetens samt syn på den offentliga måltiden.   Uppsatsen är baserad på fyra semistrukturerade intervjuer med måltidsutvecklare samt en bredare kartläggning kring yrket baserat på en enkät som besvarats av kost-/måltidschefer i Skånes kommuner.   Studiens resultat visade att yrkesrollen som måltidsutvecklare var mångfacetterad med avseende på innehåll, kvalifikationer och utbildning, men också arbetsuppgifter och förväntningar kopplade till yrkesrollen. Yrkesrollen uppfattades som relativt självstyrd, med olika ansvarsområden, beroende på kommun, arbetssätt samt vilken förvaltning som måltidsutvecklaren hörde till.   Det finns uppfattningar och förväntningar om att måltidsutvecklaren ska ha en bred kunskap inom måltidsområdet. Det fanns både för- och nackdelar med att arbeta i en politiskt styrd organisation. Måltidsutvecklarna arbetar med måltiden ur ett helhetsperspektiv och anser att måltiden är betydelsefull för samhället i form av hållbarhet och hälsa. / Every day, about three million meals are served in the public sector, where Sweden is one of three countries offering a free meal in preschool, school and elderly care. The law states that the meal should be nutritious and it is the meal developer who, together with meal and diet manager, is working with the experience of the meal. As a tool for developing the meals, the FAMM model and the Food Agency's meal model are recommended to use. Over the years, the professional role as meal developer has emerged in the municipality and contributed with work related to the development of public meals. The profession as a meal developer in the municipality is relatively new and can be seen as quite unspecified regarding education, qualifications and tasks. For that reason, it was interesting to investigate the profession more closely.   The aim of this study is to examine the profession as a meal-developer with regard to the content and qualifications of the profession, as well as perceptions and expectations of the professional role of meal developers and diet / meal managers in Scanian municipalities. The aim is followed by four questions about the meal developer, linked to tasks, education, competence and challenges as well as their view on the public meal.   This study is based on four semi-structured interviews with meal developers and a questionnaire answered by diet / meal managers in Region Scanian.   The result of the study showed that the profession as a meal developer was multifaceted with regard to content, qualifications and education, but also tasks and expectations related to the profession. The profession was perceived as relatively self-directed, with different areas of responsibility, depending on the municipality, working methods and what management the meal developer belonged to.   There are perceptions and expectations that the meal developer should have a broad knowledge of the meal area. There were both pros and cons noticed of working in a politically controlled organization. The meal developers work with the meal from a broad perspective and believe that the meal is important for the society in terms of sustainability and health.
