Kontím, fáráš, lovíme: Dumpster diving a symbolické hranice mezi čistým a nečistým / Gleaning, trash picking, scavenging: Dumpster diving and symbolic boundaries between clean and unclean

Kubatová, Marie January 2014 (has links)
The author deals with the phenomenon of dumpster diving. Being focused on those divers who are used to dumpster dive not being pressed to it by their financial situation, she concentrates on their definition of purity and their way of dealing with symbolic boundaries of clean and unclean. After summarising social-environmental and social scientific background of the phenomenon in context of the theoretical frame based on Mary Douglas and her book about purity and danger the author presents a qualitative analysis of participant observation and in- depth interviews with informants who dumpster dive voluntarily. Based on quantitatively and representatively tested public opinion on dumpster diving she points both the colourful composition of dumpster divers' motives and ideological believes and their reflection and norm- based boundaries categorization that is connected to food they are used to eat. In connection with informants' conception of food value the author argues that through inspiring power of the first dumpster diving experience informants' understanding and dealing with those boundaries have changed. Nevertheless, she stresses that despite being convinced their way of consumption is right and thus pure the informants tend to apply and present themselves by pattern of conduct that...

Potravinářská legislativa EU a ČR a její implementace v potravinářských provozech / Food Legislation of EU and The Czech Republic - Implementation by Food Industry

ŘÍHA, Michal January 2012 (has links)
This work describes the development of legislative provisions relating to the issue of animal products as food, issued in the CR and the EU. This work also reports their implementation in food businesses, particularly in terms of data provided on product labels. During this work product labels were collected in selected chain stores, documented by photography and the obtained results were compared with the applicable requirements of the CR. The observed data of this study are also compared with the requirements of Act No. 110/1997 Coll. Food, and Decree No. 113/2005 Coll. Individual products of the investigated area (meat and dairy products) are also compared with each other (Point method and Simplified Point Method) and in terms of significance, consumer attention and other appurtenances associated with data on product labels were surveyed. The results revealed a strong dominance of Czech manufacturers on our market in categories of both milk and meat products. In terms of characteristics that producers are obliged to provide, no significant errors were found. If the products lacked any indication, it was usually an indication of dietary (nutritional) value for both meat and dairy products. Manufacturers of the products studied provided a large number of optional information (logos, etc.). We conclude they should rather focus on some of consumer-preferred emblems, for there is high number of them and they seem difficult to follow by the customers. Most consumers prefer the Klasa and the ?Český výrobek? (Czech product) logos.

Srovnání dostupnosti a finanční náročnosti běžné stravy s bezlepkovou dietou / Comparison of the options and financial demands of a regular diet with gluten-free diet

Kosíková, Monika January 2021 (has links)
In the Czech Republic, 50 000 people are diagnosed with Celiac disease and the only known treatment for it is a gluten-free diet. For such patients, gluten consumption can provoke inflammation of a small bowel that can result in heavy consequences. Gluten is a protein contained in wheat, rye, barley, and oats and plays an important role in food production, because of its properties. Bakery and other gluten-free products are produced from other types of cereals. They also require a special technological process, separate spaces, and have a much smaller target group of consumers, which can increase their price at the end. People following a gluten- free diet have to be very careful while eating in restaurants and canteens because even a small amount of gluten can harm their health. Health insurance companies in the Czech Republic contribute various amounts to the GFD, however, mostly only for children. The goal of the research was to find out whether and for how much gluten-free food is more expensive than the ordinary one; and how the availability of gluten-free products and meals is assessed by people who have to eliminate gluten due to health reasons. To achieve the goal, quantitative research with a questionnaire survey was used. The questionnaire with 17 questions was filled in by a hundred...
