Možnosti stanovení ethylkarbamátu v produktech kvasných výrob

Hlaváč, David January 2015 (has links)
Ethyl carbamate, also known as urethane, is a carcinogen occuring in fermented foods such as bread, cheese, yoghurt and most in alcoholic beverages, especially in stone fruit brandies. 15 samples of fermented foods were analyzed in this work (2 samples of bread, cheese and yoghurt and 9 samples of alcoholic beverages) using gas chromatography. 5 samples were positive. Ethyl carbamte was detected in all of 3 samples of plum brandy in concentrations (9,94 +- 0,25) mg/l, (5,34 +- 0,41) mg/l and (4,03 +- 0,36) mg/l and in 2 vodka samples in concetrations (2,38 +- 0,25) mg/l and (0,26 +- 0,01) mg/l. Ethyl carbamate was not detected in bread, cheese and yoghurt samples as well as in Gin, Stará myslivecká, Apricot brandy and Gieroy vodka. However, the storage conditions of all samples were unknown.

Importat factors of alternative food chain Náš Grunt, s.r.o. in support of the regional production

Strmisková, Petra January 2016 (has links)
The aim of the thesis is to define the role of alternative food networks in the region that are based on the elementary socioeconomic factors, to assess the possibility of market appreciation of regional production in the selected alternative food chain and to identify potential benefits for consumers and the development of the region. This methodology, which is used in this work, is a survey of opinions and preferences of consumers on the purchase of agricultural products in the selected alternative food chain. The survey was based on the analysis and synthesis of literature and conducted research in the particular area. Moreover, it includes the definition of significant factors influencing the purchasing behavior of consumers and evaluation of their perception of social benefits in the particular alternative food chain of specific region within the context of regional development.

Stanovení vonných látek rostlinného původu v potravinách / Assessment of aromatic compounds of plant origin in foods

Jelínková, Monika January 2009 (has links)
The aroma compounds suitable for food flavouring are mainly of plant origin. It is necessary to take into account the possible allergic effects of some of them. The theoretic part of this thesis is focused on aroma compounds and their biological effects. It also describes methods useful for their isolation and analysis with a nearer intent on the methods used in this thesis - solid phase microextraction and gas chromatography. The aim of the experimental part was to establish, optimise and validate the method for determination of allergic aroma compounds chosen and subsequently to enable its using in wide spectrum of food and other products.

Nákupní chování seniorů na maloobchodním trhu s potravinami

Nohavicová, Lenka January 2017 (has links)
The diploma thesis focuses on shopping behaviour of seniors when shopping for food. The aim was to identify their needs, detect barriers and problem areas. To determine these characteristics indepth interviews with elderly (n = 35) and observations in 8 grocery stores were conducted. Based on the findings, obstacles and problems of seniors in the food market were identified. Subsequently recommendations were drafted for producers and sellers aiming to increase customer comfort.

Využití funkčních potravin v terapii nádorových onemocnění

Vašíčková, Kateřina January 2019 (has links)
This diploma thesis with the name „Use of Functional Food in Cancer Therapy“ is focused on the study of the possibility of using nutraceuticals of functional food in cancer therapy. Literary part of this work deals with the topic of functional food and their positive effects on human body, especially in prevention and treatment of various type of diseases. One of the main topic is cancer and its treatment options. These days, research using nutraceuticals as a supplementary treatment or monotherapy modality of cancer is often the subject of research. In this work, the effect of nutraceutical curcumin, whose antitumor effects were tested in vitro in both monotherapy and supplementary breast cancer treatment, were investigated. As a supplementary treatment, curcumin was tested in synergy with the cytostatic doxorubicin. Biologically active molecules have been encapsulated into a cavity of protein nanocarrier apoferritin, which has been promoted to support molecule´s therapeutic effects while protecting non-transformed breast cells. The encapsulation efficiency was about 68–72 % for all applied molecules. Stability of encapsulated curcumin and doxorubicin complexes stored in aqueous medium at 4 °C and 20 °C for 48 hours was determined by monitoring the change in optical properties, the size and surface ζ-potential of the nanoparticles or premature drug release from the nanotransporter. In addition, a colloidal stability test have been confirmed the increased protection of biologically active molecules by the process of direct encapsulation. In solutions simulating the internal environment of the organism (blood plasma, cytoplasm, endosomes), the amount of the released molecules from the apoferritin cavity was monitored at 37 °C for 48 hours. The colloidal stability test determined the blood plasma behavior for 48 hours. The toxicity of the tested complexes against the tumor cell lines MDA-MB-231 and MDA-MB-468 was determined by several cell experiments. The HBL-100 cell line was consider as a control non-transformed cells. The research of this diploma thesis determined the oxidative stress of cell lines induced by prepared com-plexes and the rate of internalization of these formulations into cells. Biocompatibility was determined by monitoring protein corona formation on the surface of nanoparticles, activation of C3 complement component, genotoxic effects on healthy breast cell lines and hemolysis of erythrocytes in human blood.

Spotřební chování seniorů na trhu s potravinami

Jančová, Gabriela January 2019 (has links)
Jančová, G. Consumer behaviour of the Seniors on the Food market. Diploma thesis. Brno: Mendel University in Brno, 2019. Diploma thesis is dealing with a consumer behaviour of seniors on the food market where the senior is consider as a person at the age of 65 years old and more. The aim of the work is to identify factors which influence consumer behaviour of seniors on the food market. Methods of assessment revenues and expenses of seniors are used to accomplish this aim. Thanks to analysis of secondary and primary data gained by 351 respondents answers to the questionnaire survey are detected factors which affect seniors on the food market. These factors include freshness, quality, taste, price of food, and date of durability/applicability. Seniors are particularly dissatisfied with the lettering and price tags on products, music, and the placement of shelf goods in grocery stores. After primary data processing is done segmentation of respondents by method of cluster analysis which reveals four different groups divided according to factors of quality, range of product, goods, price and freshness of food. In the end proposal and recommendations for sellers of food are written with aim how to increase comfort of a customer - senior.

Land reform as strategic approach to enhancing people's right to food - fact or fiction?

Omelková, Kateřina January 2017 (has links)
This diploma thesis focuses on the interrelationship between the land reform programme in South Africa and the objectives of the right to food. It primarily purposes to answer following question: Does the land reform programme sufficiently support the objectives of the right to food?. In order to interrogate this question effectively a methodology connecting the concepts of the right to food, land reform programme and sustainable rural livelihood was developed. Developed methodology and methods were subsequently applied and tested on selected projects of land redistribution in South Africa. The key question was addressed through the analytical approach assessing the perceived degree of success of the interrelationship.
