This diploma thesis is about soybean as functional food. Functional food contain components with positive effect on human health. In soybean there are lot of these components and very valued are phytoestrogens. Phytoestrogens has estrogenic activity with positive effect in prevention of osteoporosis, breast and prostate cancer, cardiovascular disease and menopausal problems. In experimental part was measured level of isoflavones in different kinds of soy food. The method for separation was high performance liquid chromatography with mass spectrometry.

Dopad hornictví a těžby zlata na základní potravinovou produkci v Ghaně

Mining in developing countries are located in rural areas where agriculture is the main source of livelihood. Mining communities in Ghana's mineral-rich regions engage in food crop production. These regions are actually leading the production of cash crops like cocoa, oil palm and citrus. They also produce in large quantities food staples like plantain, maize, cocoyam, legumes and an assortment of vegetables. The paradox, however, these areas have seen unprecedented boom in activities of ASM. This gives potential negative spillovers to individuals who are involved in farming through environmental pollution and competition for key inputs (like, land, water, and labor). To exam this situation, we employed the impact of gold mining on staple food crop production in Ghana. We estimated the yield of agricultural productivity for major crop in a selected areas where ASM is intensive using both quantitative data analysis and qualitative systemic literature reviewed. It suggests that a 1% increase in ASM production might reduce agricultural production in Ghana. This may be as a result of pollution from mines and agricultural land used by mines. Gold price and mining price have a positive relationship with agricultural production, statistically significant at 0.01 levels. Furthermore, we find that the mining activity is associated with food insecurity (food pollution) and poverty reduction. A simple cost-benefit analysis shows that, the actual fiscal contributions of mines in Ghana wouldn't have been enough to compensate the affected populations considering the hug negative effect mining from ASM.

This diploma thesis analyses the consumer behaviour of people in the age 18-40 years on the market with gluten free food. Using a questionnaire survey, eye tracking research and interviews were identified factors which influence consumer buying decision process. The thesis focused both on the sales of gluten free foods in stores as well as sales through online stores. There were some significant differences between types of consumers, according to which it was possible to create personas. The research results were the basis for creating general marketing advices for subjects on this market.

Furthermore, methods of identifying the country of origin on food packaging were described, with focusing primarily on the brand quality.The practical part focuses on the observation of indicate country of origin of selected commodities and the evaluation of the questionnaire focused on respondents' interest in the origin of food and evaluation of hypotheses.

Sledování obsahu selenu ve výživě vysokoškolských studentů

The thesis is focused on monitoring the selenium intake of students from the University of South Bohemia in city Ceske Budejovice. A method of collecting values of the monitored nutrients was used for the experimental part and this data were collected by way of diets which individual respondents in the age group between 20-26 years recorded. The group of respondents consisted of twenty college students, ten women and ten men. During the monitored year every third week of the month in the period from January 19 to 25, 2015, from April 13 to 19, 2015 and from June 15 to 21, 2015 was always evaluated. In the monitored respondents the selenium incomes were on average at the level of 39 g per person per day and met the current level of saturation of the population of the Czech Republic, which is in the range between 25 to 40 g / day . In the evaluated group of respondents the average selenium intake reached 37 g for women and 42 g for men . This income is below the recommended daily allowance of selenium which is 55 g for women respectively 70 g Se / day for men. The found values correspond to moderately high deficiency of selenium intake. By evaluating diets of respondents there were also found not only inadequate intake of monitored selenium but also very unbalanced intake of macronutrients and energy. Improper diet composition and unbalanced nutrient intake may be one of the causes of selenium deficiency but probably deficiency of other micronutrients too.

Based on this information, was subsequently formulated recommendations to manufacturers that these foods are introduced to the market as new products.

Vliv regionálního značení na regionální rozvoj v Kraji Vysočina / Impact of the Regional Labels on Regional Develepment in Vysočina Region

The dissertation thesis is focused on regional food labelling schemes in Vysočina Region and their impact on regional development, from the consumers perspective. Chosen economic and social aspects were analysed: the quality and content of the information on the regional labels in media, preference of regional food among inhabitants of Vysočina Region, their regional food preferences and awareness of regional labels. The research was conducted in two phases. Content analysis of media aimed to analyse media presence and occurance of the characteristics attached to each regional label: VYSOČINA Regional Product and Regional Food Vysočina Region. The other research had quantitative design and aimed to determine level of awareness of the labels among Vysočina inhabitants. To test the ability of respondents from Vysočina Region to recognise and differentiate the labels, the author created non existent label From Our Region Vysočina. Media analysis of the Vysočina regional labels revealed that media may help build awareness about the labels as they have been informing about them continuously, but they emphasise that these labels signal above all quality and origin, diminishing special connection with the region and its tradition. The research of regional labels awareness showed that respondents do not pay attention to the labels as almost 24% of 819 respondents claimed they had already seen non-existent label. This could be a viewed as a sign of the food labels inflation with their rising number and very low differentiation it is impossible for the conumers to differentiate them and also that people do not pay attention to them. Further analysis confirmed that respondents preferences and views on the regional labels from the Vysočina districts differ.

The thesis is focused on the main aspects of consumer´ s shopping behaviour and the utilization of monitored signs of quality of groceries. The aim of this paper is to identify the familiarity with the set of information given for food labeling and the rate of its use as well as the impact of chosen brands on shopping behaviour of Czech consumers. The key aim of this work is to verify the accuracy completeness of labeling on a sample of groceries. The main methods of this quantitative research were the standardized questionnaire as well as description, comparison, analysis, and synthesis. The results of this research showed the connection between the choice and groceries purchase and its look and the information on the wrapping and the new food labeling. This thesis also wants to propose the possible ways how to improve the food labeling and its use.

This master thesis deals with consumer behavior when purchasing food. For the purpose of this thesis students from the Central Bohemia Region are chosen as a selected group of consumers. The theoretical part sums up the knowledge related to the shopping behavior of consumers when buying food and influences on this behavior. The second part analyzes the shopping habits of the selected group of consumers. Shopping behavior is examined in terms of frequency of purchase, place of purchase, the most frequently purchased food categories, the main decision criteria when buying food, the impact of advertising and promotional discounts, the importance of information on food composition and the country of origin, interest in organic food and healthy lifestyle, willingness to try new food and approach to food purchases on the internet. The final part interprets the new trends in consumer behavior of the selected group of consumers and formulates a set of recommendations both for the selected group of consumers and for food retailers.
