Challenges and procedures relative to food safety in school foodservice

The purpose of this two phased study was to determine the challenges to implementing food safety and hazard analysis and critical control point (HACCP) in school foodservice and the adherence to food safety procedures in 15 schools. In phase one, food safety and HACCP procedures were studied utilizing a focus group and a national mailing of a three part survey instrument to school foodservice directors. The instrument examined the challenges and attitudes of directors toward the use of HACCP programs and food safety practices in their operations. Phase two examined the food safety procedures used in school kitchens. The researcher and two trained observers audited 15 middle school kitchens using an audit form developed by the researcher. Practices audited included temperature monitoring, personal hygiene, cold storage procedures, cleanliness of facility and other observable food safety practices. The survey yielded a response rate of 58% and the challenge and attitude statements were tested for reliability and analyzed using factor analysis and multiple regression. The responses indicated that the school foodservice directors did not perceive the same challenges to food safety as those revealed by the focus group participants. In general, the directors were positive about the use of HACCP programs and food safety practices. However, they did perceive the time and money necessary to maintain these programs to be a challenge. Results from the food safety audits revealed that food safety practices could be improved among the audited operations. Poor food safety practices were observed in the areas of hand washing, temperature monitoring, hair restraints, and sanitizing of equipment. This study suggests that school foodservice directors need to be committed to food safety programs if they are to be effective. Directors need to continually train and monitor employees and maintain a positive attitude about the necessity of food safety in order to assure safe food handling practices. / Graduation date: 2002

Automatic safety and speed enforcement systems. An economic study

There is a debate in Sweden if the Automatic Safety and speed enforcement systems (SSS) in Sweden are profitable or not. Cost benefit analysis (CBA) is an excellent tool for determining the economy of traffic safety measures. The parameters of the CBA in this work include: tire wear, fuel consumption, environmental pollution, saved lives and injuries, reduced material damage, time for disputing tickets, time in traffic lines due to accidents, longer time due to lower speed and collected fines and maintained cost for the SSS. The sensitivity analysis shows that the SSS system appears to be profitable and the greatest uncertainty arises from the calculation of saved lives. Each SSS will on average generate a profit of approximately 250,000 SEK annually.

La problématique scientifique de cette thèse est centrée sur le développement decommunications par lumière visible (Visible Light Communications - VLC) dans lesapplications automobiles. En permettant la communication sans fil entre les véhicules, ou entreles véhicules et l’infrastructure routière, la sécurité et l'efficacité du transport peuvent êtreconsidérablement améliorées. Compte tenu des nombreux avantages de la technologie VLC,cette solution se présente comme une excellente alternative ou un complément pour lescommunications actuelles plutôt basées sur les technologies radio-fréquences traditionnelles.Pour réaliser ces travaux de recherche, un système VLC à faible coût pour applicationautomobile a été développé. Le système proposé vise à assurer une communication très robusteentre un émetteur VLC à base de LED et un récepteur VLC monté sur un véhicule. Pour l'étudedes communications véhicule à véhicule (V2V), l'émetteur a été développé sur la base d’un pharearrière rouge de voiture, tandis que pour l'étude des communications de l'infrastructure auvéhicule (I2V), l'émetteur a été développé sur la base d'un feu de circulation. Considérant lerécepteur VLC, le problème principal réside autour d’un capteur approprié, en mesured'améliorer le conditionnement du signal et de limiter les perturbations dues des conditionsenvironnementales. Ces différents points sont abordés dans la thèse, d’un point de vue simulationmais également réalisation du prototype.La validation expérimentale du système VLC a été réalisée dans différentes conditions etscénarii. Les résultats démontrent que la VLC peut être une technologie viable pour lesapplications envisagées. / The scientific problematic of this PhD is centered on the usage of Visible LightCommunications (VLC) in automotive applications. By enabling wireless communication amongvehicles and also with the traffic infrastructure, the safety and efficiency of the transportation canbe substantially increased. Considering the numerous advantages of the VLC technologyencouraged the study of its appropriateness for the envisioned automotive applications, as analternative and/or a complement for the traditional radio frequency based communications.In order to conduct this research, a low-cost VLC system for automotive application wasdeveloped. The proposed system aims to ensure a highly robust communication between a LEDbasedVLC emitter and an on-vehicle VLC receiver. For the study of vehicle to vehicle (V2V)communication, the emitter was developed based on a vehicle backlight whereas for the study ofinfrastructure to vehicle (I2V) communication, the emitter was developed based on a traffic light.Considering the VLC receiver, a central problem in this area is the design of a suitable sensorable to enhance the conditioning of the signal and to avoid disturbances due to the environmentalconditions, issues that are addressed in the thesis. The performances of a cooperative drivingsystem integrating the two components were evaluated as well.The experimental validation of the VLC system was performed in various conditions andscenarios. The results confirmed the performances of the proposed system and demonstrated thatVLC can be a viable technology for the considered applications. Furthermore, the results areencouraging towards the continuations of the work in this domain.

Increase the probability of prevent road accidents by installing autonomous systems in a vehicles is the current trend in the field of active safety with a focus on pedestrian safety. The work deals with the evaluation of intervention of active safety systém for pedestrian detection assembled in series production. Benefit of active safety systems to prevent road accidents can be achieved, for example, early warning driver of a potential collision situation sufficiently in advance to reaction and post-maneuver (braking, yaw, ..). The evaluation of the intervention of active safety systems, which aim to prevent an accident with a pedestrian is necessary to experimentally evaluate the behavior of these systems. The main objective of this work is to test the selected systém based on different types of reál accidents. Atthe time of the measurements and present, are not for experts and specialists in the field of road traffic accidents publicly accessible data about the behavior of such a systém. The work aims to evaluate the behavior of the Volvo systém in inducing reál traffic situations. For the evaluation of this systém are precisely analyzed fatal traffic accidents with pedestrians in the urban area (speed of vehicles up to 60 km/h). Simulated traffic situations by their nature cover the most common critical situations in urban traffic. Expert community and the professionals who deal with the solution of traffic accidents receive this work valuable data to deal with such accidents. Based on these measurements give more expert input data to solve a collision with a pedestrian. The basis for understanding the behavior are created graphs of distance, speed and time at a key moment of the collision. These key moments include entry a pedestrians to driving corridor of the vehicle, system's response to conflict situations, warn the driver and then autonomously brake active safety systém
