The aim of the present paper is to analyse how Antanina Banelytė translated pronouns of address of Carolyn Slaughter’s novel A Black Englishman into Lithuanian, mainly the proper analysis where she translated English you as polite Jūs into Lithuanian and where it is translated as familiar tu. What is more, the present paper consists of two topics, and the second topic concerns with what particular translation strategies Antanina Banelytė has applied for the translation of culture-specific items in the novel. The translation of pronouns of address and culture-specific items is presented as a difficult task, since English and Lithuanian languages have different pronoun systems and most of the culture-specific items from the novel are unfamiliar to the target text readers. Therefore, the task of the translator was to create a naturally sounding target text and still to preserve its local colour of the Indian culture. In order to analyse the translator’s decisions in her translation theoretical framework is presented for both topics separately. First, forms of address in English and Lithuanian and their translation problems are discussed; then, current theories on translation of culture-specific items are presented. [to full text] / Šio darbo tikslas išanalizuoti kaip Antanina Banelytė į lietuvių kalbą išvertė įvardžius naudojamus kaip kreipinius iš Carolyn Slaughter romano „A Black Englishman“ („Juodasis anglas“). Pagrindinis tikslas buvo ištirti, kodėl angliškas kreipinys „you“ vienur buvo verčiamas kaip mandagioji forma „Jūs“, o kitur kaip familiarus kreipimasis „tu“. Šis darbas gvildena dvi temas. Antroji šio darbo tema yra ištirti, kokias vertimo strategijas Antanina Banelytė pasitelkė versdama kultūrines realijas rastas nagrinėjamame romane. Abi šios užduotys pristatytos kaip labai sudėtingos, nes, visų pirma, anglų ir lietuvių kalbos turi skirtingas kreipinių formas; antra, dauguma kultūrinių realijų yra nepažįstamos lietuviško vertimo skaitytojams. Todėl, vertime buvo siekiama pateikti natūralų lietuvišką tekstą, bet tuo pačiu metu išsaugoti Indijos kultūros ypatumą. Vertėjos sprendimams priimtiems vertimo metu pagrįsti buvo pateikta teorinė medžiaga kiekvienai šio darbo temai atskirai. Pirmiausia buvo aptarta angliškos ir lietuviškos kreipinių formos bei jų vertimo problematika. Po to buvo pristatytos plačiausiai vartojamos vertimo strategijos kultūrinėms realijoms versti. Analitinė darbo dalis, kurioje nagrinėjamos kreipinių formos vertime, susideda iš dviejų dalių. Influence of conventional and Kosher slaughter techniques in cattle on carcass and meat quality

The aim of this study was to evaluate and compare the influence of conventional and Kosher slaughter techniques in cattle on carcass and meat quality parameters. The conventional slaughter was done using a pneumatic captive bolt gun to stun the animals before sticking, while Kosher slaughter was done by sticking the animals and then stunning them with a 0.22 calibre cash special captive bolt gun, 20 seconds later. The animals (n=311) were randomly assigned into 4 treatment groups, namely; slaughter method (SM) (main group, sub-divided into: conventional slaughter technique (CST) and Kosher slaughter technique (KST)); electrical stimulation (ES), sub-divided into: electrically stimulated (ES) and non-stimulated (NES); gender (G), sub-divided into: male (M) and female (F); fat code (FC), sub-divided into: FC-2 and FC-3 (i.e. lean to medium fatness). The quality attributes evaluated were blood loss (BL), drip loss (DL), cooking loss (CL), presence of blood in the trachea (BLT), blood splash in the lungs (BS), shear force (SF), colour (L*, a* and b*), pH and temperature profile over 24 hours and the effect of subcutaneous fat thickness (SCF). Animals were mainly steers in the “A” age group with an average slaughter weight of about 400 kg. Different crossbreeds of Bonsmara, Brahman and Nguni cattle were used, which is typical of cattle slaughtered in South Africa. Blood loss, blood in trachea and blood splash were evaluated using 311 animals (CST, n=141; KST, n=170) but for the other parameters, smaller numbers were used because of the hectic nature of the trials. Evaluation of BL, BLT and BS were done in the abattoir and pH and temperature readings were also taken at 45 mins, 3, 6, 12 and 24 hrs post-mortem between the 10th and 11th rib on the m. longissimus dorsi which was where the carcasses were sampled for the meat quality analyses. The results of this study revealed that there was no significant difference (p> 0.05) in % blood loss between the conventional and the Kosher group but the conventionally slaughtered group had a slightly higher bleed-out. Fat code had a significant (p= 0.0475) influence on %BL, with FC-2 (2.42%) group bleeding out slightly more than FC-3 (2.24%). For % drip loss, there were no significant differences (p> 0.05) between all the treatment groups except for fat code (p= 0.0242), with FC-3 (2.95%) samples exuding more water than FC-2 (2.42%) meat samples. In terms of % cooking loss, there was a significant difference (p= 0.0004) between the slaughter methods, with meat samples from the conventional method (22.11%) exuding more water than the meat from Kosher group (18.16%). For blood in trachea, there was a highly significant difference (p< 0.0001) between the slaughter methods, with the Kosher-slaughtered animals having significantly more blood in the tracheas than the conventional group. Similarly, for % blood splash, the Kosher-slaughtered group also had a significantly (p< 0.0001) higher amount of splash than the conventional group. In terms of shear force, analyses showed significant difference between the SM with the Kosher meat (42.99) appearing more tender (p= 0.0005) compared to the meat from conventionally slaughtered animals (53.54). Electrical stimulation also had a significant influence, with meat from the ES group (43.27) being significantly (p< 0.0001) more tender compared to the NES group (61.15). For subcutaneous fat thickness, there were no significant differences (p> 0.05) in all the treatments save for fat code, with FC-3 group (6.38) having thicker fat cover (p= 0.0004) than FC-2 (4.44) which was anticipated. In terms of colour, there was a significant difference (p< 0.0001) between slaughter methods for the L* value (lightness). Meat samples from the Kosher-killed animals (46.08) were lighter than the conventionally killed ones (35.40). Samples from the females (48.29) were also significantly lighter (p= 0.0057) than the males’ (37.79). For a* value (redness), there was a significant difference (p< 0.0001) between the slaughter methods. The conventional group meat (15.58), were redder than the Kosher meat (10.40). Gender effect was also significant (p< 0.05), with meat from the males (13.81) appearing redder than the females’ (11.25). For b* value (yellowness), significant difference (p< 0.0001) was also found between the slaughter methods. The Kosher meat samples (-6.49) appeared yellower than those from conventional slaughter (0.26). FC-3 samples (-2.36) were also significantly (p= 0.0112) yellower than the FC-2 samples (-3.05). For pH, analyses revealed a significant difference (p< 0.0380) at 45 minutes post-mortem (pm) between slaughter methods. The kosher carcasses (pH= 6.43) had a slightly higher pH compared to the conventionally slaughtered carcasses (6.33). The ES carcasses (pH=6.16) also had a significantly lower (p< 0.0001) pH compared to the NES carcasses (pH=6.89). At 3hrs pm, only electrical stimulation showed a significant influence (p< 0.0001). The ES carcasses (pH= 5.72) were lower than the NES group (pH= 6.49). At 6hrs, only electrical stimulation still showed a significant influence (p< 0.0001), with the ES carcasses (5.56) still having a faster decline compared to the NES group (pH= 6.01). At 12hrs, the ES group (pH= 5.61) still had a significantly (p= 0.0008) lower pH than the NES group (pH= 5.82). At 24hrs, only the slaughter method showed a significant influence (p= 0.0314) in carcass pH, with the Kosher carcasses (pH= 5.53) having a slightly lower pH compared to the conventionally slaughtered ones (pH= 5.56). The latter difference is probably not of any practical significance and could be ignored. Temperature at 45 minutes pm showed a significant difference (p= 0.0248) between the slaughter methods with the carcasses from Kosher slaughter (36.500C) having a slightly lower temperature compared to those slaughtered conventionally (37.220C). At 3hrs pm, the carcasses from Kosher slaughter (30.060C) had a significantly higher (p= 0.0005) temperature than the conventional group (27.050C). The female carcasses (31.260C) also had significantly higher (p< 0.05) temperature compared to the male carcasses (27.890C). The FC-2 carcasses (28.190C) also had a significantly lower temperature (p= 0.0149) compared to FC-3 (30.110C) which was anticipated due to lower temperature decline in those with lower subcutaneous fat. At 6hrs pm, the conventionally slaughtered carcasses (14.710C) still showed a significantly faster decline (p< 0.0001) compared to those slaughtered by Kosher (20.16). FC-2 carcasses also showed a significantly (p= 0.0104) lower temperature (16.680C) compared to FC-3 (18.740C). At 12 hrs pm, the conventionally slaughtered carcasses (4.720C) still had a significantly (p< 0.0001) lower temperature compared to the Kosher group (10.240C). The FC-2 group (6.690C) also had a significantly (p= 0.0011) lower temperature compared to the FC-3 group (8.890C). Finally at 24 hrs after slaughter, slaughter method still showed a highly significant influence (p< 0.0001) with the conventionally slaughtered carcasses having a much lower temperature (-0.420C) compared to the Kosher group (3.060C). The male’ carcasses (0.620C) also had significantly lower (p< 0.05), ultimate temperature compared to carcasses from the females (2.990C). There was also a significant difference (p< 0.05) between the fat codes, with the FC-2 carcasses (1.010C) showing a lower temperature, compared to the FC-3 (1.710C) carcasses. Thesis (MPhil)-- Stellenbosch University, 2001. / ENGLISH ABSTRACT: This ethical case study of public slaughter has indicated that there is an urgent need to address the issue of public slaughter, because it has resulted in animosity and polarisation between black and white people living in the Goldfields. Black people feel that their rights are violated, and they are not protected by the government because they encounter problems when practising their rituals. White people feel that the government is not protecting them from the health hazards caused by black people. The ultimate aim of the study is to contribute to and amplify the existing body of knowledge with regard to the extent of the problem experienced by people in the Goldfields, its impact in their every day lives and to propose guidelines that will help when regulations governing environmental issues are drawn. In order to accomplish these aims the following objectives should be realised by this study: • South Africa is a multi-racial country so a uniting policy is needed. • Each culture is unique and it has a special value, so no culture must be marginalised. • The old policy needs to be revised and amendments made. • Identify the actual causes of these problems. Are they racist driven or are they driven by genuine health concerns? This ethical study also indicates that the following are central values that should inform decision-making: • Health. • Respect and tolerance. • Communication. • Participation. Transparency. • Commitment. Based on the findings from the research conducted it is clear that both clashing parties (black and white people) need to live in peace at the ultimate end although their description of peaceful life differs, so the following recommendations are made as to how to address and alleviate problems caused by public slaughter. • A formal meeting must be convened to discuss this critical issue. • Drafted proposals must be produced. • The proposals must be debated. • The proposal must be adopted. • The existing bylaws must be changed. / AFRIKAANSE OPSOMMING: In hierdie gevallestudie in etiek oor slagtery in die openbaar is bevind dat daar 'n dringende behoefte bestaan om die probleem van slagtery in die openbaar aan te spreek, veralomdat dit in die verlede reeds tot spanning en polarisasie tussen swart en wit groepe in die Goudveld aanleiding gegee het. Swartmense voel dat hulle regte aangetas word en dat hulle nie genoegsaam deur die owerheid beskerm word om hulle rituele uit te voer nie. Witmense voel weer dat die owerheid hulle nie beskerm teen gesondheidsgevare wat geskep word deur swartmense nie. Impacts of the recession and horse slaughter ban on the U.S. thoroughbred industry

Master of Agribusiness / Department of Agricultural Economics / Christine Wilson / Over the last decade, the United States horse industry has seen a decline in all segments of the industry. Both people and organizations within and outside the industry have debated the cause of this decline, with the 2007 horse slaughter ban being at the center of this debate. The purpose of the report is to analyze a specific segment of the industry to determine what has led to this decline over the last decade. To do this, we will look specifically at the total number of thoroughbreds sold over a thirty-year history, and using regression analysis, determine if a controversial bill that banned the slaughter of horses in the United States for the purpose of meat was the cause of this decline or if other key variables that played a key role. These additional variables will include hay prices, corn prices, oat price, gas prices, and a macro economic indicator variable. The regression results show that the horse slaughter ban did in fact have an impact on the decline of the total number of thoroughbreds sold within this specific segment of the industry. Also, both hay and the unemployment rate had an effect on the decline of the total number of thoroughbreds sold, while gas prices appear to have had an unexpected positive effect, which is contrary to common thought. This thesis shed a new light on the decline of the horse industry within the United States and the effect the ban has had on the thoroughbred industry.

Orientador: Kléber Tomás de Resende / Resumo: RESUMO - A absortometria de raios-X de dupla energia (DXA) é um método não-invasivo para mensurar a composição corporal de animais que representa uma alternativa aos métodos padrões de dissecação e análise química, por ser uma técnica de fácil aplicabilidade e que possibilita o acompanhamento das variações na composição corporal do animal ao longo de sua vida. Assim, o objetivo deste estudo foi verificar a capacidade do método DXA em determinar a composição corporal de caprinos submetidos a dois níveis nutricionais. Para isso, foram utilizados 36 machos Saanen, castrados, divididos em três faixa etárias (3, 5 e 7 meses), cada faixa etária era composta por 12 animais, que foram divididos em dois regimes alimentares: sendo 6 animais mantidos sob regime alimentar ad libitum (AL) definido como o consumo sob mantença com adicional para ganho de 150 g.dia-1; e 6 animais mantidos sob regime alimentar ao nível de mantença (M). Assim que atingiram a idade pré-estabelecida os animais foram mantidos em jejum de líquido e sólidos por 24 horas e escaneados no aparelho DXA Hologic (Discovery Wi). Posteriormente, foram abatidos sendo realizada análise química do corpo inteiro para comparação entre os métodos. O pernil esquerdo foi seccionado da carcaça total escaneado pelo aparelho DXA, e então, dissecado em osso, músculo e tecido adiposo, cada componente foi analisado individualmente no DXA, e posteriormente submetido a análise química para servir de referência aos parâmetros DXA obtidos c... (Resumo completo, clicar acesso eletrônico abaixo) / Abstract: ABSTRACT - Dual-energy X-ray absorptiometry (DXA) is a noninvasive method to measure the body composition of animals that represents an alternative to comparative slaughter, since it is a technique that is easy to apply and allows monitoring of the variations in the animal's body composition throughout its productive life. The objective was to evaluate the use of DXA method in determining the body composition of goats submitted to two nutritional levels. For this, 36 Saanen males, castrated, were divided into three age groups (3, 5 and 7 months), each age group was composed of 12 animals, 6 of which were kept under diet ad libitum (AL), consumption under maintenance additional for gain of 150 g.day-1; and 6 under maintenance level (L). As soon as they reached the pre-established age, the animals were fasted for 24 hours and scanned in the Hologic DXA device (Discovery Wi). Then, the animals were slaughtered and whole body chemical analysis was performed for comparison between methods. The left leg was sectioned from the total carcass and scanned by the DXA device, after that, it was dissected into bone, muscle and fat, each component was individually analyzed by DXA, and then chemical analysis was performed to be reference for in vivo DXA parameters. The influence of slaughter on blood composition in cattle

In this study the effects of blood sampling, transportation and slaughter on certain blood variables (sodium, potasium, chloride, glucose, lactates, lipids, proteins, colloidal osmotic pressure, cortisol, ACTH, T3, TSH, osmolality etc.) of cattle were investigated. The experimental animals, crossbreed (Brahman, Afrikander and Hereford) heifers and oxen obtained from Kanhym Estates, Middelburg, were unaccustomed to handling. One group of animals was subjected to the stress of sampling with restraint, a second group was sampled with restraint after transportation and a third group had blood taken after slaughter at the Kanhym abattoir at Balfour. Control blood samples were obtained from Friesland dairy cows accustomed to handling and blood sampling and from crossbreed oxen unaware of the sampling procedure. Both control and experiment groups were studied in the same season. (April and May, 1984). Results were analysed and compared statistically. The blood cortisol, ACTH, lactates and glucose were significantly higher in the experimental groups than in the control group. Cortisol and ACTH values were significantly higher, and the lactate and glucose values significantly lower in the group subjected to the stress of sampling with restraint than in the other two experimental groups. Therefore, if the variables measured are an assessment of stress and change because of stress, then the animals investigated experienced stress. In addition, cattle unaccustomed to handling perceive the slaughtering process as less stressful than blood sampling in a crush (based on cortisol and ACTH results).

CoordenaÃÃo de AperfeiÃoamento de Pessoal de NÃvel Superior / Neste estudo, avaliou-se a influÃncia de duas diferentes faixas de peso ao abate e do tipo de corte com 4 (quatro) tipos de tratamentos sendo, tratamento 1 (ANGLONUBIANO x SRD e peso entre 20â22 kg), tratamento 2 (ANGLONUBIANO x SRD e peso entre 26 â28 kg), tratamento 3 (BOER x SRD e peso entre 20-22kg) e tratamento 4 (BOER x SRD e peso entre 26 â28 kg) sobre algumas caracterÃsticas da composiÃÃo centesimal, Ãcidos graxos e colesterol da carne de caprinos dos grupos genÃticos relacionados, recentemente introduzidos no Estado do CearÃ. Foram utilizados os cortes pernil, paleta e lombo de 12 animais com pesos distintos, criados em regime semi-intensivo, com suplementaÃÃo alimentar a base de um concentrado protÃico de milho e soja na proporÃÃo de 70:30. A anÃlise da composiÃÃo centesimal mostrou valores mÃdios entre 75,95% e 77,50% para umidade; 18,81% e 22,98% para proteÃna; 0,70% e 1,35% para gordura e entre 1,01% a 1,15% para cinzas. Registraram-se diferenÃas significativas (p<0,05) entre o tratamento 2 (ANGLONUBIANO x SRD e peso entre 26 â28 kg) e o tratamento 3 (BOER x SRD e peso entre 20-22kg), para o corte paleta no que se refere ao teor de proteÃna, enquanto que para o teor de cinzas entre os cortes lombo e pernil. Quanto à anÃlise de colesterol à mÃdia geral para os cortes pernil, paleta e lombo se situou entre 31,60 e 59,16%, 34,79 e 61,34% e 32,79 e 59,72%, respectivamente, correspondentes ao intervalo de 19,36 a 65,32 mg/100g de carne. Observou-se para o tratamento 4 (BOER x SRD e peso entre 26-28kg) em todos os cortes, valores do colesterol superiores aos demais tratamentos, à exceÃÃo do tratamento 1. Estatisticamente (p<0,05) o efeito do grupo genÃtico foi observado somente entre os tratamentos 2 e 4 em todos os cortes. Na anÃlise de Ãcidos graxos foram identificados em todos os tratamentos, oito picos sendo quatro correspondente a Ãcidos saturados (mirÃstico, palmÃtico, esteÃrico e araquÃdico) e quatro insaturados (palmitolÃico, olÃico, linolÃico e linolÃnico), com predominÃncia dos Ãcidos olÃico (23,89 a 31,04%), esteÃrico (16,83 a 24,97%), palmÃtico (15,82 a 24,23%) e linolÃico (7,41 a 16,81%). Registraram-se diferenÃas significativas (p<0,05) entre os cortes e tratamentos para os Ãcidos mirÃstico, palmÃtico, palmitolÃico, linolÃnico e araquÃdico. Leg, shoulder and loin cuts of 12 animals with distinct weights, bred in semi-intensive regime, fed with maize and soy (70:30 proportion) protein concentrate were used. Proximal composition analysis showed average values of moisture from 75.95 to 77.50%; 18.81 to 22.98% for protein; 0.70 to 1.35% for fat and 1.01 to 1.15% for ash. Significant differences were found between treatment 2 (ANGLONUBIANO x SRD and weights between 26 and 28 kg) and treatment 3 (BOER x SRD and weight between 20 and 22 kg), for protein in shoulder cut and for ash in pernil cuts and loin. In relation to cholesterol analysis, general average values for leg, shoulder and loin were situated between the following values: 31.60 to 59.16%; 34.79 to 61.34% and 32.79 and 59.72%, respectively, corresponding to the range form 19.36 to 65.32 mg/100g of meat. Higher cholesterol values were observed for treatment 4 (BOER x SRD and weight form 26 to 28 kg) in all cuts, except for treatment 1. Effect of genetic group was statistically (p<0.05) observed between treatments 2 and 4 in all cuts. In fatty acids composition analysis, 8 peaks were identified in all treatments. Four were saturated (miristic, palmitic, stearic and arachidic) and four unsaturated (palmitoleic, oleic, linoleic and linolenic). Oleic acid (23.89 to 31.04%), stearic (16.83 to 24.97%), palmitic (15.82 to 24.23%) and linoleic (7.41 to 16.81%) were the main fatty acids found. Significant differences (p<0.05) were found between cuts and treatments for miristic, palmitic, palmitoleic, linolenic and arachidic acids. Saturated/unsaturated ratio did not show any significant difference (p<0.05) among treatments or cuts.

Long-term effects of different fat sources and vitamin E supplementation on growth performance, antioxidant status, carcass characteristics, meat quality, and immune capacity of pigs with heavy slaughter weight up to 150 kg

Two experiments were used to evaluate the potential interaction of fat source and vitamin E (VE) in heavy slaughter weight pigs. In Experiment 1, a total of 64 individually-fed pigs (28.41 ± 0.83 kg) were randomly assigned to 8 dietary treatments in a 4×2 factorial arrangement. Fat treatments included cornstarch (CS), tallow (TW), corn-oil (CO), and coconut-oil (CN). VE treatments were dietary α-tocopheryl acetate (ATA) at 11 and 200 ppm. In Experiment 2, a total of 72 individually fed pigs (28.55 ± 1.16 kg) were randomly assigned to 12 dietary treatments in a 2 × 6 factorial arrangement. Fat treatments were TW and CO. VE treatments included four levels of ATA (11, 40, 100, and 200 ppm) and two levels of mixed tocopherols (primarily γ-tocopherol; 40 and 100 ppm). VE deposition, growth performance, and meat quality were measured in both experiments. In both experiments, interaction between fat sources and VE were detected (P < 0.01) on plasma VE concentration, which increased (P < 0.01) with time and with increasing dietary VE, but increased faster (P < 0.05) in pigs fed with CN and TW compared to pigs fed CS and CO. Compared to CO, more saturated dietary fat sources (CN and TW) led to firmer belly (P < 0.01), which had more (P < 0.01) SFA and MUFA while less (P < 0.05) Feed/Gain in Phase 4 and Phase 5. In Experiment 2, increasing dietary ATA increased overall ADG (linear, P = 0.02), with an interaction (P < 0.05) with fat sources on cumulative ADG during Phase 1-4, wherein pigs fed CO, but not TW, had increased ADG with increasing dietary ATA. Increasing dietary ATA increased (quadratic, P < 0.05) liver SOD activity, and decreased (quadratic, P < 0.05) liver MDA content. The oxidative stability of loin was improved (P < 0.01) when dietary ATA increased over 40 ppm. In summary, both dietary fat source and VE supplementation affected the response measures.
