The diploma thesis deals with the influence of spontaneous and controlled technology on the creation of biogenic amines. In the literary part, it deals with the properties, origin and their occurrence. It further describes the various factors and microorganisms that influence their creation. Consequently, it focuses on the effect of biogenic amines on health and factors that may increase their toxicity in the microorganism. At the end of the literature search, describe focuses on the creation of biogenic amines in wine, their content in world wines and focuses on oenological factors affecting their content. The experimental part describes the Chardonnay experiment procedure in detail. It was divided into four variants. Two of them were technologically processed in the barrel, the other two in a glass container. Subsequently, both versions in the barrel and in the glass were divided into a production process processed by spontaneous and controlled technology. Samples were sampled during the experiment and then analyzed analytically by HPLC for the formation of biogenic amines. The resulting wines were sensory evaluated. All results were statistically processed and compared with studies dealing with similar issues.

Tendo sido uma experiência vivida, mais de dois terços do tempo, em sala de aula na Faculdade de Educação da Universidade Federal da Bahia. O percurso me-todológico do trabalho foi realizado a partir de um vasto envolvimento bibliográfico com a temática da imagem e do universo da comunicação audiovisual, do qual procurei fazer um in-ventariado iconográfico de aspectos e abordagens. Isso, especialmente, no que concerne às questões ligadas ao processo ensino-aprendizagem, isto é, relacionadas com a construção do conhecimento na sala de aula. Múltiplos enfoques advindos da investigação, com propósitos, sobretudo, de subsidiar a prática docente, no meio da qual se inserem aspectos ligados à co-municação, foram adotados. Tendo observado que a melhor maneira de estudar a imagem é pelo exercício com a própria imagem, passei a chamar de “práxis imagética” a que consiste no trabalho de produzir imagens ou situações em que elas estejam presentes. Adicionalmente, pa-ra, ao mesmo tempo em que o exercício se faz, poder refletir sobre o que é produzido, realizei, experimentalmente, entre outros, um material audiovisual – videográfico – com o aporte das ferramentas tecnológicas digitais contemporâneas e de subsídios do quadro teórico-conceitual, previamente, erigido. Na parte final, em conformidade com o design delineado, faço uma re-flexão sobre o processo das elaborações videográficas e sobre as considerações manifestadas após cada exibição feita para o público presente. / ABSTRACT The current work is the history of my professional involvement with the imagetic universe for more than three decades in classrooms at the Faculdade de Educação of the Federal University of Bahia. The methodological path was done by means of a vast bibliography related to the image and the universe of audiovisual communication, of which I have tried to write an iconographic inventory of aspects and approaches, especially in what concerns the process of teaching and learning, that is, the construction of knowledge in the classroom. Multiple approaches resulting from the investigation were adopted in order to help the teaching practice, such as those related to communication. As I have observed that the best way to study image is through the exercise with image itself, I started naming ―imagetic praxis‖ that one which produces images or situations where they are present. I also experimented an audiovisual videographic material with the help of technological digital contemporary tools and a theoretical conceptual frame that was previously built. Eventually, in keeping with the project, I examine the videographic process and the questions asked by the public after each exhibition.
