Previous issue date: 2015-06-30 / A tradição e a cultura estão presentes na microrregião do Serro, Estado de Minas Gerais, através da produção do queijo que, mais que um produto artesanal, é um legado que passa de pai para filho. O queijo é a base econômica dos onze municípios que compõem a região. O reconhecimento deste produto como primeiro patrimônio imaterial do Estado de Minas Gerais, e o quarto bem imaterial do Brasil, permite o desenvolvimento de políticas públicas no campo da cultura, ressaltando a importância deste saber fazer e assegurando a diversidade cultural. O saber tradicional persiste como prática cultural, embora envolto em uma rede de controvérsias em torno de saberes e práticas que envolvem disputas quanto à fabricação deste alimento. Os dados empíricos obtidos através de uma pesquisa qualitativa (inspirada em uma pesquisa etnográfica) e sua análise permitiram compreender a relação entre o saber fazer em suas práticas tradicionais e as normas que o regulamentam, o que implica em dificuldades em sua perpetuação como patrimônio cultural e contribui para a sua descaracterização. Nesse cenário conflituoso, o extensionista tem exercido o papel de mediador, para que o processo de formalização da produção não se distancie do saber fazer conforme a cultura e tradição da região. Neste contexto, esta pesquisa busca desvelar os aspectos sociais e simbólicos presentes nas práticas socioculturais e suas relações entre os diversos grupos relacionados com a produção do queijo minas artesanal da microrregião do Serro. Ressalta os significados ligados à tradição histórica relativa à pratica do saber fazer o queijo e o caráter legítimo daquilo que é, de fato, realizado. / Tradition and culture are present in the micro-region of Serro, Minas Gerais, through the production of cheese, more than a farm product, is a legacy that passes from father to son. Cheese is the economic base of the eleven counties that make up the region. Recognition of this product as the first immaterial heritage of the State of Minas Gerais, and well the fourth immaterial good of Brazil, enables the development of public policies in the field of culture, emphasizing the importance of this know-how and ensuring cultural diversity. The traditional knowledge persists as a cultural practice, though wrapped in a web of controversy around knowledge and practices involving disputes about the production of this food. The empirical data obtained through a qualitative research (inspired by ethnographic research) and its analysis allowed us to understand the relationship between the know-how in their traditional practices and norms that regulate it, which implies difficulties in its perpetuation as cultural heritage and it contributes to their destruction. In this confrontational scenario, the extension has played the role of mediator, so that the process of formalization of the production does not detach from the know-how as the culture and tradition of the region. In this context, this research seeks to un cover the social and symbolic aspects present in socio-cultural practices and their relationships among the various groups related to the production of manual Minas cheese in the micro-region of Serro. Emphasizes the meanings attached to the historical tradition on the practical know- how cheese and legitimate character of what is, in fact, held.
