Estudo dos pontos críticos na cadeia de beneficiamento e seus efeitos na qualidade e conservação de lima ácida \'Tahiti\' / Study of the critical points of impact on the handling line and its effects on the quality and conservation of \'Tahiti\' acid lime

O Brasil é o maior produtor de lima ácida \'Tahiti\' (Citrus latifolia Tanaka), uma fruta de origem tropical pertencente à família Rutaceae. O beneficiamento pós-colheita desta fruta visa conservar a qualidade obtida no campo por mais tempo, entretanto, injúrias mecânicas podem ocorrer neste processo, elevando a perda de qualidade e, reduzindo a vida útil e o valor comercial dos frutos. Este trabalho foi dividido em duas etapas, as quais deram origem a dois artigos que objetivaram: (1) Avaliar a influência da colheita e do beneficiamento pós-colheita na qualidade e conservação de lima ácida \'Tahiti\', (2) Identificar os pontos críticos de impacto na linha de beneficiamento de lima ácida \'Tahiti\', e avaliar a influência desses pontos na qualidade e na conservação pós-colheita. Na etapa 1, os frutos foram coletados na planta e na linha de beneficiamento, sendo os tratamentos denominados: colheita, secagem, fungicida e giberelina, cera e embalagem. Na etapa 2, os frutos foram coletados diretamente das plantas e submetidos a impactos visando simular aqueles da linha de beneficiamento. Foram realizadas análises físico-químicas de rendimento do suco, acidez titulável, sólidos solúveis, ácido ascórbico, clorofila total, perda de massa, coloração da casca (colorímetro e escala de cor), incidência e severidade de oleocelose, e avaliação visual (podridões, murchamento, danos físicos, coloração e perda do cálice). Também foram realizados experimentos sensoriais considerando frutos coletados na linha e com os impactos simulados em laboratório, cada qual em duas condições de armazenamento (refrigerado e ambiente). O beneficiamento contribui para a manutenção de características físico-químicas importantes para a lima ácida \'Tahiti\', todavia, os resultados obtidos nestes trabalhos apontam que as condições da linha e os impactos a que os frutos são submetidos durante o beneficiamento influem negativamente na qualidade. Na etapa 1, constatou-se com o beneficiamento redução no conteúdo de sólidos solúveis no último dia de armazenamento, queda dos cálices e, maior incidência e severidade de oleocelose. Além disto, o beneficiamento completo acarretou numa maior porcentagem de murchamento e perda da coloração verde da casca dos frutos, sobrepujando os efeitos positivos da giberelina e da cera. Na etapa 2, ao realizar a caracterização da linha, constatou-se magnitude total de 1788,6 G, variando de 23,9 G à 147,4 G dependendo do ponto de transferência. Nos frutos com impactos simulados houve perda da cor verde da casca, de sólidos solúveis, e de acidez titulável e, maior teor de ácido ascórbico, perda de massa, murchamento, queda do cálice e, incidência e severidade de oleocelose. Além disto, a análise sensorial apontou que a preferência dos provadores está alinhada aos níveis de impactos, com os frutos injuriados obtendo menor aceitabilidade para a aparência e, maiores intensidades de amargor e gosto de sobremaduro do suco. Os principais motivos que influenciam na tomada de decisão para o atributo aparência do fruto são incidência de distúrbios, turgidez e coloração da casca. A redução dos impactos na linha de beneficiamento pelo controle das alturas de quedas e do uso de tecnologias, como materiais amortecedores, contribui para a conservação de atributos importantes para a comercialização de lima ácida \'Tahiti\', reduzindo suas perdas pós-colheita e, gerando maiores lucros aos envolvidos na cadeia de produção. / Brazil is the largest producer of \'Tahiti\' acid lime (Citrus latifolia Tanaka), a fruit of tropical origin belonging to the Rutaceae family. The postharvest handling of this fruit aims to preserve the quality obtained in the field, however, mechanical injuries increases quality loss, reducing the fruit useful life and commercial value. This work was divided into two stages, which gave rise to two articles that objectified:: (1) To evaluate the influence of harvest and postharvest handling on the quality and conservation of \'Tahiti\' acid lime; (2) Identify the critical impact points of the \'Tahiti\' acid lime handling line, and to evaluate the influence of these points on quality and postharvest conservation. In step 1, the fruits were collected in the plant and in the handling line, being the treatments denominated: harvest, drying, fungicide and gibberellin, wax and packaging. In step 2, fruit were collected from the plants, being the same submitted to impacts aiming to simulate those of the handling line. Physicochemical analysis of the juice yield, titratable acidity, soluble solids, ascorbic acid, chlorophyll, weight loss, peel color (colorimeter and color scale), the incidence and severity oleocellose and visual evaluation (rotting, wilting, physical damage, coloring and loss of the calyx) were performed. Sensory experiments were also performed considering fruits collected in the line and with simulated impacts in the laboratory, each one under two storage conditions (refrigerated and ambient). The handling contributes to the maintenance of important physical and chemical characteristics for the \'Tahiti\' acid lime, however, the results obtained in these studies indicate that the conditions of the line and the impacts to which the fruits are submitted during the handling affect negatively the quality. In step 1, it was verified with the handling the reduction was observed in the content of soluble solids on the last day of storage, drop in the calyces and, greater incidence and severity of oleocellose. In addition, the complete handling resulted in a higher percentage of wilting and loss of the green color of the fruit peel, overcoming the positive effects of gibberellin and wax. In step 2, when performing the line characterization, a magnitude of 1788.6 G was found, varying from 23.9 G to 147.4 G depending on the transfer point. In fruits with simulated impacts there was loss of the green color of the peel, soluble solids, and titratable acidity and higher ascorbic acid content, weight loss, wilting, and drop the calyx, oleocelose incidence and severity. In addition, the sensorial analysis showed that the preference of the tasters agrees with the impact magnitude levels, with the injured fruits obtaining less acceptability for the appearance, higher intensities of bitterness and taste overriper of juice. The main reasons that influence in the decision making for the attribute appearance are incidence of disorders, turgidity and coloration of peel. Reducing impacts on the handling line for control of falls and the use of technologies such as bumpers materials, contributes to the conservation of important attributes for the marketing of \'Tahiti\' acid lime, reducing its postharvest losses and generating higher profits to those involved in the production chain.

O mercado de balcão brasileiro: um estudo sobre as características e a regulamentação / The Brazilian over-the-counter market: a study of its characteristics and regulations

O presente estudo tem por objetivo analisar e discutir a regulamentação e as principais características do mercado de balcão brasileiro como um todo, a fim de propor algumas modificações que o tornem mais seguro. Dentro do mercado de balcão, os negócios são realizados e estruturados de acordo com a vontade e as necessidades de ambas as partes, logo os contratos não são padronizados, também não existe um local determinado para as negociações acontecerem, sendo que estas podem ser realizadas por telefone ou via sistema eletrônico. No Brasil tal mercado é dividido em dois segmentos: o organizado, onde os contratos são pelo menos realizados ou registrados em órgãos que estão sob a supervisão da Comissão de Valores Mobiliários (CVM) e o não organizado, em que os contratos são firmados ou registrados em órgãos que não são fiscalizados pela CVM, logo esta parte do mercado de balcão esta menos sujeita à regulações. É dentro deste último segmento que são negociados os contratos de soja verde, de troca de insumo por produto, de CPR de gaveta, dentre outros, que servem como financiamento da produção agropecuária brasileira. Estes contratos incorrem em muitos riscos já que são firmados entre as partes e não possuem qualquer tipo de garantia oferecida por órgãos regulatórios, no que tange à sua liquidação, ou seja, não contam em seu ambiente de negociação com um sistema de clearing house. Logo, este trabalho buscou por meio de documentação de fontes primárias e secundárias e entrevistas não estruturadas, realizadas com profissionais que trabalham diretamente com o mercado de balcão, elaborar uma agenda de sugestões para tornar o ambiente de balcão não organizado mais regulamentado. Concluiu-se que existem medidas que podem ser implantadas no segmento aqui em questão, como a padronização de alguns itens dos contratos negociados, tais como as unidades de negociação e os meses de vencimento e também a conscientização dos agentes de mercado da importância de registrar suas operações, que podem tornar o mercado de balcão não organizado mais transparente e seguro. / This study aims to analyze and discuss regulations and main characteristics of the Brazilian over-the-counter (OTC) market as a whole and propose some changes to make it safer. Within the OTC, business is conducted and structured according to wishes and needs of both parties, therefore contracts are not standardized, and there is no physical place to conduct negotiations, which can be made by phone or through an electronic system. In Brazil, this market is divided into two segments: the organized one, where contracts are at least made or registered in organs under the supervision of the Comissão de Valores Mobiliários (CVM) and not organized, in which contracts are not made or registered nor inspected by CVM, thus, this type of OTC trade is less subject to regulation. Within this segment, contracts of soja verde (green soybean), exchange input product, off-the-record CPR, and others that serve for financing Brazilian agricultural production. These contracts are subjected to many risks as they are signed by the parties and do not have any warranty offered by regulators regarding liquidation, in others words, they do not make use of the clearing house. Therefore, this study aims to elaborate suggestions to provide regulation to the over-the-counter market through unstructured interviews conducted with professionals who work directly with the OTC market and documentation of primary and secondary sources. It can be concluded that there are measures to be implemented in the segment at issue here, such as the standardization of some items traded by contracts, such as bargaining units and the months of expiration and also raise awareness of the importance of market agents to register their operations, which can make the not organized OTC market more transparent and secure.

The material and construction methods of the structure remain simple and unchanged, whereas the non-structural elements offer an enormous variety of choices in materials and components as a result of the improvements in technology . In Chapter 2, a case study of the U.S. system suggests that the stick-built house has a great potential for self-help construction, with least subcontracting, rental of some special tools and equipment and the use of prefabricated materials. A comparison of the U.S. and Japanese systems shows that the Japanese system offers lesser potential for self-help . On the average, higher skills would be required in on-site assembly. Difficulties would occur in using members of different sizes and joining methods. Also, there would be less flexibility in future change of housing design. Coordenação de Aperfeiçoamento de Pessoal de Nível Superior / Esta dissertação é um estudo comparativo do legado vitoriano deixado para as escritoras do século XX, Virginia Woolf e Sylvia Plath. Primeiro discutem-se as agências controladoras do corpo feminino na era vitoriana e a formação de um ideal de feminilidade que chamamos de Anjo do Lar. Em seguida, discute-se como Virginia Woolf apreende essa imagem e a subverte, criando seu duplo, que chamamos de Demônio do Lar. Por fim, promovemos o diálogo entre Sylvia Plath e Virginia Woolf. Plath parece escrever aos moldes de Woolf, criando uma literatura de morte, feita para assassinar o Anjo do Lar. Usamos para tal estudo o conceito de écriture féminine, criado pelas francófonas Hélène Cixous, Luce Irigaray, e Julia Kristeva, entre outras, para traçar os paralelos entre um lugar para o feminino na escrita e a busca de uma tradição por Woolf. A abjeção de Kristeva, a dinâmica de poder entre alma e corpo de Foucault e o conceito de duplo de Otto Rank nos ajudarão, por fim, a entender como se dá a morte do Anjo na literatura, especificamente no romance A redoma de vidro (1963) de Sylvia Plath / This dissertation is a comparative study of the legacy left behind by the Victorians to the twentieth-century woman writers Virginia Woolf and Sylvia Plath. Firstly, we shall discuss the controlling agencies governing the female body in the Victorian Era and the rise of an ideal, the Angel in the House. Secondly, we expose how Virginia Woolf apprehends and subverts this Victorian ideal, duplicating it into what we call the Demon in the House. At last we encourage the dialogue between Sylvia Plath and Virginia Woolf. Plath seems to write in accordance with Woolfs parameters, creating a literature of death, a literature that is the killer of the Angel. We use the concept of écriture féminine promoted by the French critics Hélène Cixous, Luce Irigaray, and Julia Kristeva, among others, to parallel a feminine space for writing to Woolfs search for a feminine literary tradition. Kristevas abjection, Foucaults power dynamics between the soul and the body, and Otto Ranks work on the double, shall foster our discussion on the death of the Angel in literature, especially in Sylvia Plaths The Bell Jar (1963)

Esta dissertação de mestrado versa sobre as diferentes formas com que a série televisiva americana House of Cards (Netflix, Beau Willimon, 2013-) interage e se comunica com seu público e sua época. Tendo como tema um inescrupuloso casal de políticos que escala os degraus do poder na capital dos Estados Unidos, a série trabalha na intersecção entre modalidades de manter a atenção do espectador, a produção de comentário político, e os imperativos comerciais da distribuição televisiva. Sendo o primeiro exemplar de um seriado distribuído por uma plataforma online de streaming, incentiva também questões quanto a inovação trazida pelo modo de exibição ao formato seriado. Dessa forma, o trabalho se inicia analisando o uso particular de apartes dramáticos pelo protagonista, que ao se dirigir diretamente aos espectadores os fisga para dentro da diegese e os estimula a continuar assistindo à série, enquanto co-conspiradores de suas tramas. O texto passa em seguida para uma interpretação do comentário político promovido pelo programa a partir de mecanismos melodramáticos, comentário que para ser efetivo necessita trazer para a diegese elementos extradiegéticos que assemelham a ficção ao mundo real e a familiarizam ao espectador. Ao mesmo tempo, internautas e jornalistas se apropriam dessa ficção para o comentário de sua época, demonstrando a reciprocidade entre mundos ficcionais e a realidade da qual comentam e aonde participam. Finalmente, é analisado a relação entre o formato seriado que estrutura o programa e a plataforma online de streaming que o distribui, indagando o quanto que modos de exibição que estimulam a fruição concentrada de produtos seriados inovam o conhecido formato, enquanto que o mesmo auxilia na promoção de novas formas de distribuição e exibição. / This Master\'s dissertation delves into the different ways with which the television series House of Cards (Netflix, Beau Willimon, 2013-) interacts and communicates with its audience and time. Having as theme an unscrupulous couple of politicians that climb the steps of power in the United States capital, the series works in the intersection between methods of keeping the spectator\'s attention, the production of a political commentary, and the commercial imperatives of television distribution. Being the first example of a series distributed by an online streaming platform, it also stimulates questions regarding the innovation brought to the serial form by this mode of exhibition. This way, this study starts by analyzing the particular use of dramatic asides by the protagonist, in which as he addresses directly to his audience he hooks them into the diegesis and stimulates them to continue watching the show, as co-conspirators to its schemes. It then moves on to an interpretation of the political commentary promoted by the show through melodramatic mechanisms, commentary that to be effective needs to bring into the story extradiegetic elements that resemble the fiction with the real world and familiarize the audience. At the same time, internet users and journalists appropriate this same fiction to comment on their own conjuncture, showing the reciprocity between fictional worlds and the reality that they comment on and which they participate in. Finally, it is analyzed the relationship between the serial form that structures the show and the online streaming platform that distributes it, inquiring on how much modes of exhibition that stimulate concentrated viewing of serial products innovate this known format, inasmuch as this format helps the promotion of new modes of distribution and exhibition.

The main aim of this diploma thesis is a detailed analysis of the whole process of in-house public procurement in general and also an in-depth analysis of both its forms - vertical cooperation and utilities in-house model. Information used for the topic of this diploma thesis was obtained mainly from the legal regulation of the Czech Republic and also the EU regulation, the expert publications and articles dealing with the legal regulation of public procurement and the in-house procurement itself, internet sources and the case law of the Court of Justice of the European Union and of the Office for the Protection of Competition. To complete this diploma thesis descriptive analytic approach was used as well as a linguistic, comparative and teleological methods of interpretation. This diploma thesis is divided into four main chapters, while the short opening chapter contains a description of the general meaning and definition of both forms of in- house procurement. The first main chapter examines the beginnings and development of the in-house procurement in European Union law and in relevant case law of the Court of Justice of the European Union. An analysis of technology applications in the restaurant industry

The purpose of this study was to examine the utilization of Front of House and Back of House technology applications by U.S. restaurants across different types of restaurants along with their level of IT management style, and the importance of these technology applications to the restaurants' operations. This study used secondary data. The survey data collected from 500 randomly selected restaurant technology managers who are current subscribers of Hospitality Technology Magazine as of January 2013. Response rate was 27.2% and these sample groups represented 67,299 restaurant units. The data analysis was organized into 3 parts (descriptive, factor analysis and independent samples t-test). In the descriptive part of the data analysis, the information about respondents' job functions, company characteristics and companies' IT perspectives are evaluated. In the second part, factor analysis was used. Since the factor analysis is a data reduction technique, factor analysis is used to create correlated variable composites and to reduce variables for better interpretation. The third and final stage of the data analysis included testing hypotheses based on factor analysis outcomes by using an independent samples t-test. The main purpose of using an independent samples t-test is to determine whether position (IT versus Non-IT), types of restaurant (Chain versus Independent), business leadership and technology leadership (Innovator versus Follower) differ on the factor attributes.

Engaging with the past : structuring historic house museum visits for young children

Historic house museums have been the subject of very little structured research. As ideal learning environments for young children they have the potential to facilitate very special educational interactions, yet children's experiences in house museums remain relatively unexplored, with very little professional analysis of the nature, the value or the impact of school visits. As museums, historic houses are educational institutions, yet with limited professional expertise and restricted resources as commonplace, many house museums provide very little in the way of structured educational experiences for schools. This study aims to increase our understanding of educational encounters in house museums. Using Falk and Dierking's Interactive Experience Model this thesis explores the personal, physical and social contexts of young children's visits to house museums. It follows the progress of children aged 5-8 years, as they participate in class visits to two very different kinds of house museum. A structured, age-appropriate education program implemented at Calthorpes' House is compared to the approach taken at Blundells' Cottage, where a lack of resources and professional expertise has resulted in unstructured school visits, typical of amateur house museums throughout Australia. The study directly compares these structured and non-structured museum visits to determine the immediate and long term value of constructed learning experiences in historic houses. The thesis concludes that the structure of a school visit has a significant influence on the museum experience. Research revealed that structured education programs prepare children better for their visit, allow for more successful interactive experiences on site, encourage enjoyable social interactions and result in more detailed museum memories. Finally this thesis outlines implications for house museums as a result of this research and makes recommendations to assist under-resourced house museums provide more structured, more informed educational interactions for schools.
