本論文的研究主題在於補足對於近代早期英格蘭咖啡館「禮儀文化」研究的不足。藉由德國社會學家埃利亞斯的「文明進程」理論，我們不僅得以宏觀地理解長時段的「禮儀」發展脈絡，亦得以明瞭所謂的「禮儀」即是一種個體於人際互動中所展現的社會行為，而此行為講究的是對個體的各種言行舉止與心理情緒的控制、約束與調整。以「文明進程」理論為基礎，本文的目標在於從近代早期英格蘭「禮儀文化」的脈絡切入，以相對微觀的角度，藉助「區隔性」與「普遍性」、「真實性」與「虛偽性」兩組對立情勢考察咖啡館「禮儀文化」中「行為的呈現」與「內涵的詮釋」兩種層面的發展過程。 本文第一章的主題為「英格蘭咖啡館文化的建立與發展」。本章第一部份除了概述咖啡與咖啡館的東方起源與發展外，亦將描述英格蘭旅行家眼中的東方咖啡館樣貌。於第二部份，筆者則將談及在東方咖啡館文化的影響之下，牛津咖啡館與倫敦咖啡館的建立與發展。第三部份則敘述咖啡館的多元服務及其經營特色。藉由背景的鋪陳，本章試圖勾勒出英格蘭咖啡館逐漸成為重要社交聚會處的發展因素與過程。 本文第二章的主題為「英格蘭咖啡館的禮儀文化」。本章第一部份以「洛塔咖啡俱樂部」的建立作為咖啡館「禮儀文化」的具體萌芽基點，並試圖描繪「菁英群體」如何將英格蘭的「禮儀文化」帶進咖啡館，使其成為「有禮」且「有理」的談論場域。而在第二部份中，我們則將看到「菁英群體」與一般大眾如何在強調平等、包容與多元的咖啡館中，以「禮儀」的展現作為和諧相處的互動方式，並逐漸形塑一互敬互重、愉悅且平和的社交氛圍。於第三部份，筆者將考察於咖啡館中所建構的「禮儀文化」如何受到當代著名期刊《閒談者》與《旁觀者》的推崇與推廣。從1659年「洛塔咖啡俱樂部」的建立以至1714年《旁觀者》的停刊，從萌芽、建構以至推廣，本章重點即在於探究從復辟至18世紀初期，咖啡館文化與當代「禮儀文化」之間的緊密聯繫與相互影響的過程，一段從「禮儀在咖啡館」到「咖啡館的禮儀文化」之發展脈絡。 本文第三章主題為「英格蘭咖啡館的無禮文化」。於本章中，筆者將分別以四個部份，包括「時髦男子與紈褲子弟」、「八卦愛好者與造謠者」、「冒犯與衝突」及「咖啡館妓院」等各種違反「禮儀」規範的人群與言行舉止，談論咖啡館中的「無禮」現象。儘管每一種現象背後，均有其各自的發展脈絡，但它們所呈現出的樣貌，卻不約而同地對咖啡館「禮儀文化」的建構產生重大衝擊。然而，從當代對於這些「無禮」現象的嚴厲批判中，我們亦能反向印證咖啡館「禮儀文化」的影響性已深入人心。 綜觀上述，本文之核心論述脈絡即在於，以英格蘭咖啡館文化的發展作為基點，以「有禮」和「無禮」作為正面與反面的論證，考察英格蘭咖啡館「禮儀文化」的發展過程。

19世紀英格蘭社會，對於運動史研究來說是很重要的時期。本研究將從19世紀的英格蘭談起，藉由公學校在運動發展中的影響力，來討論與理解跑步運動在19世紀公學校內的發展脈絡以及現代化的過程為何？19世紀在有能力就讀公學校，還有劍橋、牛津大學等中上階級們的影響之下，促使了「現代運動」的形成。同時，這些在運動發展上握有權力的中上階級們，在運動發展的過程中，塑造出了「業餘精神」，藉此來強調運動的高尚和階級的優越性。本文將從19世紀初期討論到西元1908年倫敦奧運。從公學校早期具有娛樂和暴力性質的跑步運動談起，在19世紀中歷經校長改革和學生們投入後，跑步運動中娛樂與暴力性質越來越少，加入更多工業革命發展下所帶來的現代元素。19世紀後半葉，公學校內跑步運動發展逐漸成熟，討論規則制定的情況漸少，描述比賽舉辦情況漸多。在公學校外，許多田徑俱樂部和越野賽跑俱樂部在公學校或是大學校友們的支持下成立。1880年業餘田徑協會成立，統一各地俱樂部和規則紛亂的局面，負責掌管英格蘭地區有關田徑運動的一切事宜，這也是公學校內討論跑步運動規則情況減少的原因。1908年倫敦在畢業於公學校校友的牽線下舉辦奧運，並與美國在跑步賽場上因為「業餘精神」和規則發生了些紛爭。至此，我們可以看出19世紀英格蘭公學校跑步運動的發展狀況，以及了解公學校跑步運動發展與現代運動出現間，部份的互動關係和影響。 / The nineteenth cenry is an essential age for Sport history, especially in England. This research attempts to comprehend the revolutionary transformation of British sporting culture by studying running. During the Victorian era, running, as a sport category, includes hare and hounds, cross-country running, handicap, steeplechase and track events which is a little bit different from the modern Athletics. The research focuses on the public schools’ students, their relationship with athleticism, running sport and the society in the nineteenth-century England. As its main concern is the role of the public schools played in the the transformation of British sporting culture, the dissertation begins with the education system of the public schools and the running in the old times . Then, it turns to the transformation of athleticism and the renovation of running in the public schools by discussing what, why and how it happened? The third chapter moves to the modern running games held in the public schools, and the interaction between the public schools and the amateur clubs. The Amateur Athletic Association, established in 1880, played an important role in the history of running sports and had significant effects on Amateurism. Finally, the dissertation concludes with the 1908 London Summer Olympic to see the spread of public schools’ amateurism.

微型旅館產業是近年來因應旅遊市場需求成長而誕生的新興產業，係結合地方特色小規模發展的觀光住宿服務。早期自因風景區周遭開始出現，而後開始大幅擴展至今全台上千家的榮景，包括宜蘭、花東、南投清境及墾丁地區甚至離島等地數量相當龐大，進而形成許多微型旅館特色聚落。然而，隨著市場逐漸成熟也日趨競爭，加上現今對微型旅館經營的規範仍存在相當多模糊地帶，面臨法律跟不上市場的窘境，及造成市場上相關服務良莠不齊；另外微型旅館不可避免仍是觀光服務業的一環，仍需一定程度的投入、以企業專業經營並佈局更宏觀長遠的策略規劃才能永續發展。故本研究選取清境某系列民宿為研究標的加以分析整理，以商業經營模式圖將各項活動予以展開，並探討旗下三間不同風格微型旅館之定位設計並比較其異同，最終由個案結論衍伸至未來成長之願景發想。 / BNB industry, which also called Bed and Breakfast, is one of the most thriving industry in Taiwan recently. By combining with regional trait, BNB industry is growing faster as the demand of traveling market becomes mature. However, the more customers are willing to choose BNB , the more competitive market will be. In addition, there are still lots of grey zone about regulating the industry in the policy, and it makes disputes frequently. Although the average scale in the industry is small, it definitely needs certain level of investment and professional management to sustainable development. To discuss the main issue of BNB industry in Taiwan, this paper choose The Old England Manor and the other related BNBs as the objects of study. Through reorganizing and analyzing its business model, we present and compare the differences and finally discuss the possible prospect in the future.
