Using a qualitative approach, the study proposes a theoretical-reflective analysis about the basic authors who have studied the alimentation history in Brazil as well as a walkthrough of the formation of the national pastry and its development. This effort culminates in a deep understanding of yokel pastry, with its roots no longer found in São Paulo city. Finally, using a quantitative and qualitative approach, this research has focused in five cookbooks published during this period, as a source of alimentation studies with the goal of understanding the typical desserts in São Paulo in the early twentieth century. / Esta pesquisa discute a mudança de hábitos alimentares voltados ao consumo de doces no processo de urbanização da cidade de São Paulo entre o final do século XIX e o início do século XX. Através de uma abordagem qualitativa, o estudo faz um levantamento bibliográfico teórico-reflexivo tanto dos autores basilares sobre a alimentação no Brasil, bem como acompanha historicamente a formação da doçaria nacional e seu desenvolvimento. Esse esforço culmina com um aprofundamento sobre a doçaria caipira com suas raízes já não mais comuns na cidade de São Paulo. Por fim, através de uma abordagem quantitativa e também qualitativa, foram focalizados cinco livros de receitas publicados durante o período referido, como fonte para os estudos da alimentação com o objetivo de compreender a doçaria paulista no início do século XX.

Sherlock Holmes et la France: marginalité, imaginaire et identités nationales paradoxales

Le rayonnement de Sherlock Holmes dépasse de loin celui de son créateur (Arthur Conan Doyle) ou du roman qui l’a vu naître (Une étude en rouge, 1887) : ce personnage avalisé par ce que Cornelius Castoriadis appelle le « collectif anonyme » est ainsi devenu un mythe moderne. L’imaginaire collectif en fait l’incarnation même du détective et de l’Anglais : il habite Londres, voyage en hansom cab, prend le thé et porte son fameux deerstalker sur la tête. Son appartenance à l’identité nationale britannique est toutefois plus problématique qu’on ne serait spontanément porté à le croire. Effectivement, Conan Doyle s’est inspiré de deux personnages à la fois marginaux et représentatifs de l’identité nationale française pour imaginer son héros tout aussi marginal et représentatif de sa propre identité nationale : le chevalier Dupin d’Edgar Allan Poe (« Double Assassinat dans la rue Morgue », 1841) et monsieur Lecoq d’Émile Gaboriau (L’Affaire Lerouge, 1863). Mais il y a plus. Sherlock Holmes est non seulement né grâce à la France, mais a à son tour donné naissance à des personnages français, dont le gentleman cambrioleur de Maurice Leblanc, Arsène Lupin (« L’Arrestation d’Arsène Lupin », 1905), et le journaliste de Gaston Leroux, Joseph Rouletabille (Le Mystère de la chambre jaune, 1907). Tout se passe ici comme si la création de personnages incarnant l’identité nationale devait d’abord passer par la recherche de modèles paradoxaux liés à l’autre puissance nationale. Ancrés dans une période où chaque nation tente de définir son identité, les personnages du corpus incarnent le discours social de l’époque, tout en ayant été créés, paradoxalement, grâce à des personnages issus de la nation voisine. Balisée par le Second Empire et la Belle Époque, la présente thèse se divise en quatre chapitres, portant chacun sur un personnage français. La première partie, intitulée « En amont », se concentre sur Dupin et Lecoq, les deux figures françaises ayant mené Conan Doyle à créer son héros, alors que la seconde partie, « En aval », explore les personnages nés de l’influence de Sherlock Holmes, soit Lupin et Rouletabille. En adoptant une approche entre la socio et la mythocritique et en se basant sur l’herméneutique de la question et de la réponse proposée par Hans Robert Jauss, cette thèse cherche à objectiver les questionnements auxquels la société aurait trouvé des réponses au travers les corpus étudiés, permettant ainsi l’enracinement de Sherlock Holmes et d’Arsène Lupin dans l’imaginaire social et leur survie dans l’imaginaire collectif, et expliquant l’effacement progressif, voire l’oubli, des autres personnages.

Republicana, moderna e cosmopolita: a música de concerto no Rio de Janeiro entre 1889 e 1914 / -

A presente tese analisa a emergência da modernidade musical brasileira entre os anos 1889 e 1914. Analisa os discursos que a historiografia panorâmica tradicional brasileira construiu sobre a música de concerto daquele período, e analisa os discursos produzidos na própria época. Verifica que as iniciativas de atualização técnica e estilística da música de concerto respondiam a uma política oficial de modernização das artes, que tinha a Europa como modelo de civilização. Verifica também que a cultura das elites republicanas utilizava a prática da música de concerto como um mecanismo de distinção social. Conclui que as interações entre as concepções elitistas sobre música, as teorias raciais, o evolucionismo, e o cosmopolitismo legitimavam práticas culturais excludentes, reafirmando hierarquias sociais. Tais interações resultaram no aprofundamento do abismo entre a música de concerto e o público, na afirmação de hierarquias entre gêneros musicais, na valorização da noção de autonomia da obra musical e na manutenção dos vínculos com a música europeia, impedindo o surgimento de movimentos de vanguarda musical contra hegemônicos no Brasil no início do século XX. / This thesis analyzes the emergence of Brazilian musical modernity between the years 1889 and 1914. It analyzes the discourses that the Brazilian traditional panoramic historiography has elaborated about art music of that period, and analyzes the discourses produced at the time. It notes that the initiatives for the technical and stylistic art music\'s updating have risen in response to an official politics of modernization of fine arts, which had Europe as a model of civilization. It also notes that the culture of the Republican elites has used the practice of art music as a mechanism of social distinction. It concludes that the interactions between elitist conceptions about music, racial theories, evolutionism, and cosmopolitanism have legitimized exclusionary cultural practices, reaffirming social hierarchies. These interactions have resulted in a deepening gap between art music and the public, in the affirmation of hierarchies between musical genres, in the valorization of autonomy\'s notion of the musical work and in the maintenance of links with European music, preventing the emergence of vanguard movements counter-hegemonic in Brazil in the early twentieth Century.

A presente tese analisa os aspectos econômicos do financiamento e gestão da cultura brasileira no período 1890 a 1922 nas cidades do Rio de Janeiro e São Paulo. A argumentação baseia-se em amplo levantamento de dados quantitativos extraídos de fontes documentais primárias custodiadas por arquivos históricos brasileiros e internacionais, relativas à dinâmica de iniciativas, espaços e instituições de distintos suportes artísticos música, teatro, cinema e artes plásticas. Mais do que um simples arrolamento de dados, empreende-se aqui um esforço sintético, centrando atenções na identificação de macrofuncionalidades econômicas no universo da cultura em suas mais diferentes manifestações. Em diálogo com grandes nomes da teoria cultural internacional como Pierre Bourdieu e Theodor Adorno, o foco da pesquisa é a identificação e compreensão da ação de duas forças sociais estruturantes: a massificação e a distinção. Coligados, antagônicos e mutuamente influentes, serão esses os dois vieses centrais para a estruturação dos circuitos culturais brasileiros. As duas forças se farão presentes nas mais diversas atividades culturais do período. A resultante dessa complexa interação é um mosaico socioeconômico onde triunfa a distinção, o elitismo e a instrumentalização da cultura para finalidades excludentes. / This thesis analyzes the economic aspects of the financing and management of the Brazilian culture in the period 1890-1922 in the cities of Rio de Janeiro and São Paulo. The argument is based on extensive survey of quantitative data extracted from primary sources from both Brazilian and international historical archives connected to the dynamics of initiatives, spaces and institutions of distinct artistic media music, theater, cinema and plastic arts. More than a simple gathering of data, the project here is to undertake a synthetic effort, focusing on the identification of economic macrofunctionalities in the world of culture in its different manifestations. In dialogue with the great names of the international cultural theory such as Pierre Bourdieu and Theodor Adorno, the research centers attentions in the identification and understanding of the action of two structuring social forces: massification and distinction. Related, diverging and mutually influential, these are the two central biases for the structuring of the Brazilian cultural circuits. The two forces will be present in various cultural activities of the period. The result of this complex interaction is a mosaic where socioeconomic distinction, elitism and the instrumentalization of culture for exclusionary purposes triumphs.

Cette étude aborde la manière dont l’Orient-Express a été décrit, perçu et imaginé, et s’efforce de mesurer l’écart entre les représentations communes et ce qui se dégage d’un corpus de textes très divers à travers trois grands axes de réflexion : les évocations des itinéraires de l’Orient-Express, les discours tenus sur le train et ses voyageurs, les thématisations et récupérations littéraires dont il a fait l’objet. L’idée directrice du propos est de montrer comment l’Orient-Express, rêve programmé par de très efficaces campagnes publicitaires et suscité par un imaginaire géographique, historique et littéraire puissant, n’a pu pleinement convaincre les voyageurs, mais aussi les écrivains et les lecteurs qui, semble-t-il, ne cessent de déplorer la disparition d’un train et d’un voyage qui n’ont peut-être jamais existé ou qui ne sont jamais vraiment ceux qu’ils imaginaient. / The purpose of this study is to see how the Orient Express was perceived, described and fantasized, and to measure the gap between common representations and what appears in quite different texts through three major lines : the evocations of the routes of the Orient Express, the discourses on the train and its passengers, the thematizations and literary recuperations. It aims at showing how the Orient Express, a dream programmed by very effective advertising campaigns and sustained by powerful geographical, historical and literary images, could not fully convince travelers, but also writers and readers who, apparently, do not cease to mourn the disappearance of a train and a travel that have perhaps never existed or that are never actually those they dreamt of.

La chambre de Pandore : féminité et hybridité de l'espace chez Gaston Leroux

Le motif de la « chambre close », considéré comme emblématique du roman policier, a été exploité par de nombreux écrivains depuis le XIXe siècle. Chez les pères fondateurs du genre, tels Edgar Allan Poe et Arthur Conan Doyle, il s’est d’abord incarné sous une forme simple, celle d’un mécanisme permettant la mise en scène d’un « défi à la raison » (Christiane Cadet, 2008), avant de se complexifier à la Belle Époque. Sous la plume de Gaston Leroux, la simplicité cède la place à l’hybridité alors que la « chambre close », en s’emplissant d’un étonnant parfum de femme, devient le lieu où se croisent le crime et la passion, le privé et le public, la raison et la superstition. Dans Le Mystère de la chambre jaune (1907) et Le Fantôme de l’Opéra (1910), le romancier articule ses intrigues autour d’espaces atypiques, destinés à bouleverser les codes du genre policier. Ce mémoire s’attache ainsi à la manière dont un roman populaire, malgré son recours à un motif largement exploité, peut déplacer et transgresser l’horizon d’attente auquel il est associé. Plutôt que d’être figée à la manière d’un cliché photographique, la « chambre close » évolue sans cesse dans les récits à l’étude. Influencée par le phénomène d’hybridité générique qui sous-tend les romans, elle se dote de nouvelles significations qui la singularisent par rapport à l’emploi qu’en ont fait les prédécesseurs. En s’intéressant, dans un premier temps, à la trajectoire empruntée par les corps féminins et à leur influence sur les décors et, dans un deuxième temps, à la manière dont l’espace canalise un certain imaginaire propre à la littérature du XIXe siècle, il s’agira de voir comment Leroux parvient à faire éclater les murs d’un lieu qui, jusqu’alors, était clos « comme un coffre-fort » (Gaston Leroux, 1925). / The "locked room" concept, generally considered symbolic of detective fiction, has been used by many writers since the 19th century. Amongst the authors of the genre, it was integrated as a simple mechanism to generate a mental challenge for the reader (Thomas Narcejac, 1975). The concept became more complex with the advent of the Belle Époque. The "locked room", under Gaston Leroux’s influence, became the central place where crime and passion, public and private, reason and superstition meet, when filled with the perfume of a woman. In The Mystery of the Yellow Room (1907) and The Phantom of the Opera (1910), Gaston Leroux built his intrigues around atypical "locked rooms" with the intent of upending the codes of detective fiction. This research focuses on the elements through which a popular novel can break its commonly associated expectations, despite the use of a widely exploited pattern. Instead of being frozen in time, the "locked room" is always evolving ; influenced by the novels’ underlying generic hybridity, it acquires new meanings that distinguish it from its predecessors. By first focusing on the path of female bodies and their influence on the decor, and then on the way the "locked room" reuses components associated with literature from the 19th century, we will see how Leroux manages to break the walls of a place that has been considered as closed as a safe (Gaston Leroux, 1925).

This work aimed at to contribute for the improvement of the quality of life of the Brazilian people. Afrânio Peixoto participated of the sanitarist movement, which looked for to present ways to cure a country that until then would be seen as a great hospital. The studies of the sanitarists approached questions as, epidemics, architecture and urban cleanness among others. This work are focused on the controversies relations between fashion and Hygiene, commented in the related workmanship of the illustrious doctor, writer and Brazilian politician of the beginning of century XX. For in such a way, the selected primary sources include, beyond the workmanship Elements of hijiene, images, articles and announcements published at Fon Fon! Magazine between the years of 1912 and 1913, which, at that time, dictated and spread out the rules of the fashion and the behavior of the Brazilian elite / O presente estudo focaliza o pensamento de Afrânio Peixoto (1876 - 1947) com enfoque em sua obra Elementos de hijiene, publicada em 1913 e reeditada em 1914 com o nome de Noções de hygiene, voltada ao ensino nas escolas primárias. Essa obra visava contribuir para a melhoria da qualidade de vida do brasileiro. Afrânio Peixoto participava do movimento sanitarista, o qual procurava apresentar meios para curar um país que seria até então visto como um grande hospital. Os estudos dos sanitaristas abordavam questões como eugenia, epidemiologia, arquitetura e limpeza urbana entre outras. Neste trabalho são focalizadas as polêmicas relações entre moda e Higiene, comentadas na referida obra do ilustre médico, literato e político brasileiro do início do século XX. Para tanto, as fontes primárias selecionadas incluem, além da obra Elementos de hijiene, imagens, artigos e anúncios publicados na Revista Fon Fon! entre os anos de 1912 e 1913, a qual, naquela época, ditava e difundia os preceitos da moda e do comportamento da elite brasileira

Langue et discours dans la littérature régionaliste au début du XXe siècle au Pays de Caux: les Terreux de Gaston Demongé

En France, le XIXe siècle est témoin d’un renouveau de la littérature orale. Alors que les dialectologues accomplissent un important travail de documentation et de préservation des sources orales au XIXe siècle, les littéraires mettent en scène les patois. Les contes populaires de Gaston Demongé, auteur normand (Aux gars de Normandie, 1917 ; Les Terreux, 1925 et 1955) ont marqué l’imaginaire de son époque. Auteur engagé dans le débat sociopolitique sous la Troisième République, Gaston Demongé opte par son choix de retranscription du patois de rester fidèle à ses convictions profondément régionalistes. L’œuvre de l’auteur normand offre une disparité dans sa façon d’aborder le patois cauchois et le discours social qu’il transmet sur le paysan entre le début du XXe siècle et la période de l’après guerre. De fait, il manifeste dans son écriture, dès 1925, son désaccord avec le discours imposé sur le paysan et son langage.
