This bachelor thesis is a project of new five-storey, semi basement guesthouse in Opava. This guesthouse will be used for accommodation, catering and recreation. Accommodation capacity is 21 people. In the basement is a technical background. The first floor is designed for the overall run of the guesthouse, staff, catering and sports. In the second and third floor are rooms for guests. Almost every room has a balcony. In the fourth floor is a common room with adjoining terrace. The building is brick. The vertical structures are made of ceramic blocks. Outer walls are insulated by outer contact system. The ceilings are mostly ceramic-concrete and a smaller part of the reinforced concrete. The guesthouse is roofed by single-flat roof.

This diploma thesis deals with the issue of enhancing quality of services provided in the Myslivna Hotel. It is necessary to increase the level of current services by a number of measures. When working on my thesis, I based on real economic, operational and technical data carried out within full operation of the Myslivna Hotel. In the innovation section I present measures that can lead to an increasing trend of occupancy and the quality ot the services provided there. There is a need to spend a considerable amount of money on the realization of all the proposals, but their return shoud definitely have a very positive effect on the function and prospertiy of the Myslivna Hotel.

Aplicación de Herramientas Lean en producción y Sistema DDMRP en abastecimiento en una empresa plástica peruana / Application of Lean Tools in production and DDMRP system in sourcing in a Peruvian plastic company

La industria del plástico ha presentado un crecimiento continuo desde su creación en los años 50. En el Perú, esta industria ha mostrado un crecimiento de su producción de 4.5% en el 2018, superando a países como Chile y México. Sin embargo, este sector presenta un déficit comercial, debido a que la demanda nacional ha superado la oferta de las empresas, quienes presentan tiempos improductivos causados por tiempos de configuración y desabastecimiento de materia prima. El objetivo del proyecto fue incrementar la utilización de la capacidad de la planta en estudio, pues su nivel de utilización de la capacidad se encontraba 8.5% por debajo del nivel promedio del sector, ocasionando pérdidas equivalentes al 6.43% de las ventas totales del año 2019, asignadas a gastos logísticos, penalizaciones y anulaciones. Por esta razón, se diseñó un modelo de gestión de la producción basado en SMED Integrado (SMED Convencional + 5´S) y sistema DDMRP bajo un enfoque Kaizen, que se validó mediante una simulación en el software Arena. Como resultado del proceso de validación se logró incrementar el nivel de utilización de la capacidad de la planta en un 4.31%, alcanzando un nivel final de 84.86%, debido a la reducción de un 60% de tiempo de setup y un 90.05% de pardas por desabastecimiento. Finalmente, este nuevo modelo que vincula las herramientas mencionadas puede ser replicado en otras empresas del sector manufacturero que presenten el mismo problema. / The plastics industry has shown continuous growth since its creation in the 1950s. In Perú, this industry has shown a growth of its production of 4.5% in 2018, surpassing countries such as Chile and Mexico. However, this sector has a trade deficit due to national demand has exceeded the supply of companies, which have unproductive times caused by set-up times and shortages of raw materials. The project´s objective was to increase the capacity utilization of the plant under study because the current level of utilization of the company's capacity was below 8.5% of the average level of the sector, causing losses equivalent to 6.43% of total sales for the year 2019, assigned to logistics expenses, penalties and cancellations. For this reason, we designed a production control model based on the integrated SMED (Conventional SMED + 5´S) and DDMRP system under a Kaizen approach, which was validated through a simulation in Arena´s software. As a result of the validation process, it was possible to increase the level of plant capacity utilization by 4.31%, reaching a final level of 84.86%, due to a 60% reduction in setup time and a 90% reduction in the stops due to shortages. Finally, this new model that links the mentioned tools can be replicated in other companies in the manufacturing sector that present the same problem. / Trabajo de investigación

El proyecto planteado en esta tesis propone la renovación del Mercado de Baratillo en el distrito del Rímac y su transformación hacia un conjunto de espacios públicos que aboquen el antiguo movimiento de las plazas de mercado limeñas y promuevan de manera dinámica la gastronomía del Perú. El proyecto se estructurará a partir del mercado y será complementado una serie de programa de interés turístico como talleres de cocina y la Casa de la Gastronomía Peruana (actualmente ubicada en la Casa de Correos y Telégrafos en el Cercado de Lima). El papel de la historia es muy importante ya que esta tesis busca encontrar un contraste armónico entre la arquitectura existente y la nueva intervención, además de la reinterpretación de la tipología de mercado en épocas de la colonia. Finalmente, el proyecto busca regenerar esta zona del Rímac por medio de espacios públicos de calidad para los vecinos y la integración del edificio al eje cultural del centro de Lima y los circuitos turísticos del Rímac. / This thesis proposes the renovation and reinterpretation of Baratillo Market in Rímac district by generating public spaces that address the old dynamic of the market plazas during colonial times. The project is structured with the market in its core and will be complemented by a program of turistical interest such as cooking workshops and the Peruvian Museum of Gastronomy. The objective of this complex is to promote dynamically peruvian gastronomy and to give a new life to this ancient building, by creating a harmonic contrast between the existing architecture and the new intervention. Finally, the project seeks to generate value in this area of Rímac district through quality public spaces for the residents, and also by the integration of the building into the cultural circuits of downtown Lima. / Tesis

Tener un acertado pronóstico de ventas es un tema indispensable en empresas productoras y distribuidoras, ya que impacta positivamente en la toma de decisiones relacionadas a la demanda, gestión de inventario, abastecimiento, distribución y surtido de productos, así como otras áreas del negocio como finanzas, marketing, operaciones y servicio al cliente. Sin embargo, actualmente, en la mayoría de los casos, las predicciones de las ventas se basan en análisis individuales de los productos, mas no en técnicas de clustering, las cuales permitirían reducir el error y ser más acertados en sus pronósticos. Por ello, el presente trabajo propone evaluar y comparar el impacto de la precisión de los pronósticos de ventas del método tradicional, regresión lineal simple con series de tiempo, con los métodos de clustering k-means y Ward. El alcance de la investigación será a los cinco principales productos de una importante empresa productora y distribuidora de alimentos procesados en el Perú. Los indicadores que se utilizarán para identificar el método más preciso serán los errores medios absolutos (MAD) y errores cuadráticos medios (MSE) resultantes. / Having a successful sales forecast is an essential issue in manufacturing and distributing companies, since this impacts the decision-making related to demand, inventory management, supply, distribution and product assortment, as well as other areas of the business such as finance, marketing, operations and customer service. However, currently, in most cases, sales forecast are based on individual product analyzes, but not on clustering techniques, which would reduce error and be more accurate in their forecasts. Therefore, the present work proposes to evaluate and compare the impact of the precision of the sales forecasts between the traditional method, simple linear regression with time series, and the clustering methods such as k-means and Ward. The investigation scope will be the five main products of an important manufacturer and distributor of processed foods in Peru. Propuesta de gestión de inventarios para mejorar el proceso de abastecimiento, mediante desarrollo de pronósticos y el sistema de revisión periódica en una empresa comercializadora de lubricantes

En el mercado actual, existe una gran cantidad de pymes comerciales que presentan un amplio margen de pérdidas económicas por quiebres de stock, debido al ineficiente proceso de abastecimiento. En otras palabras, las ventas perdidas y los costos adicionales generados al no tener sus productos disponibles en sus almacenes es un escenario crítico en empresas distribuidoras, cuyo valor agregado radica en maximizar su nivel de servicio al cliente. Para resolver este problema, proponemos un sistema que integra el desarrollo de pronósticos y el modelo de inventarios de revisión periódica, ambas herramientas basadas en el marco de trabajo que se plantea teniendo en cuenta modelos de gestión del conocimiento. Los pronósticos realizados, luego de analizar la demanda, sus patrones y elegir el mejor método a utilizar, son antecedentes para desarrollar la gestión de inventarios y sus políticas. Asimismo, la gestión del conocimiento actuará como soporte del sistema integrado al asegurar que el conocimiento adquirido sea sostenible y se mantenga en el tiempo hasta ser renovado. A través de la simulación realizada para nuestro caso de estudio GP Maquinarias S.A.C., una pyme distribuidora de lubricantes, se obtuvieron resultados que indican una reducción del 93% en las pérdidas por desabastecimientos y un aumento del nivel de servicio que pasa de 79% a 91%. Esta propuesta constituye un sistema integrado interesante para ser aplicado como solución para pymes que presentan altos índices de desabastecimiento y carezcan de este tipo de herramientas. / In the current market, there is a large number of SMEs that have a large margin of economic losses due to lack of stocks, due to the supply process. In other words, the lost sales and the costs of the services generated by not having their products available in their warehouses is a critical scenario in the distribution companies, whose added value lies in maximizing their level of customer service. To solve this problem, we propose a system that integrates the development of the attention and the model of the inventories of the periodic review, the bases based on the framework of the work. The results, after analyzing the demand, their patterns and choosing the best method to use, are antecedents to develop the management of inventories and their policies. Likewise, knowledge management will act as an integrated support. Through the simulation carried out for our study case GP Maquinarias S.A.C., a SMEs distributor of lubricants, results were obtained that indicate a reduction of 93% in losses due to stock-outs and an increase in the service level that goes from 79% to 91%. Thesis (M.Tech.: Office Management and Technology)-Durban University of Technology, 2005 xv, 129 leaves / The Constitution contains the Bill of Rights, one that is regarded as the corner-stone of democracy, as it enshrines the rights of all people and affirms the democratic values of human dignity, equality and freedom. Section 9(1) provides for the promotion of a society in which diversity of identity is respected and protected. The Employment Equity Act 55 of 1998, stipulates that designated employers implement affirmative action, thereby compelling organizations to eradicate all forms of discrimination in organizational processes and procedures. With such legal measures put in place (Promotion of the Equality Act) acceptance and change within organisations has to be accelerated. The purpose of this study is to explore workplace discrimination against trainees within the Hotel and Catering industries. Workplace discrimination is against human rights and can become a legal violation of Labour laws. Although preventative policies are in place, this study would illuminate the extent to which discrimination occurs, how it has manifested itself, and how students would be affected by this discrimination.
