Oito amostras comerciais de néctares de uva (quatro tradicionais e suas respectivas versões ¿light¿) foram analisadas. Um teste de Aceitação utilizando a escala hedônica híbrida foi realizado com 114 consumidores. Quatorze termos descritivos foram avaliados por uma equipe sensorial e seis atributos físico-químicos foram medidos. As amostras de néctar de uva A e C foram as mais aceitas e as amostras CL e DL (¿light¿) foram as mais rejeitadas. Construiu-se um Mapa de Preferência Interno e em seguida uma Análise de ¿Cluster¿ foi realizada para o atributo Impressão Global. Dois grupos de consumidores foram encontrados. A principal diferença entre os grupos foi com relação à utilização de diferentes porções da escala pelos consumidores de cada grupo. A metodologia PLSR foi utilizada para relacionar a aceitação dos consumidores com os termos descritivos e atributos físico-químicos, fornecendo correlações entre eles. Os resultados mostraram que os atributos Sabor de Uva, Sabor Residual de Uva, Acidez Total Titulável, Aroma de Uva, Cor Vinho, °Brix, Viscosidade, Acidez, Turbidez, Adstringência, Fenóis Totais e Consistência nesta ordem de importância, estavam fortemente correlacionados com a Impressão Global dos consumidores sendo portanto os direcionadores de preferência encontrados / Abstract: This study depicts the PLS regression method used to help find drivers of liking of the grape nectar. Eight commercial brands (four traditional and four lights) were analyzed. An acceptance test using hybrid hedonic scale was performed with 114 consumers. Fourteen attributes were evaluated by a sensory team of fourteen members, and six physical-chemical attributes were measured. The most accepted samples were A and C, and the less accepted ones were CL and DL (lights). An Internal Preference Mapping followed by a Cluster Analysis was performed on the consumer grades to Global Impression. Two clusters of consumers were found. The mainly difference between clusters was the use of different portions of the scale by the consumers. The PLSR methodology was used to relate the acceptance with the sensory and physical-chemical attributes giving a correlation between them. The model showed the importance of each sensory or physicalchemical attribute for the model projection. The results showed that Grape Flavor; Residual Grape Flavor, Total Sourness Titration, Grape Aroma, Wine Color, °Brix, Viscosity, Sourness, Turbidity, Astringency, Total Phenols and Consistency were positive correlated with consumer grades to Global Impression, therefore they are called drivers of liking / Mestrado / Consumo e Qualidade de Alimentos / Mestre em Alimentos e Nutrição

Efeito do tempo de armazenamento do leite de cabra in natura sobre a qualidade e a estabilidade do leite de cabra em pó. / Effect of storage time of in natura goat milk on the quality and stability of goat milk powder.

Este trabalho avaliou os efeitos de diferentes períodos de armazenamento do leite de cabra in natura sobre a qualidade do produto em pó. Foram avaliadas as alterações microbiológicas, físico-químicas e bioquímicas do leite cru e a influência nas características microbiológicas, físicas, bioquímicas e sensoriais do leite em pó durante o armazenamento por 0, 60, 120 e 180 dias. Foram realizados 3 ensaios idênticos nos quais cerca de 105 L de leite de cabra recém-ordenhado foram igualmente divididos em 3 partes e armazenados a temperatura controlada de 4 ºC por até 5 dias. Nos dias 1, 3 e 5 após a coleta do leite in natura, uma alíquota de 500 mL foi coletada para a realização das análises. O restante da fração (aproximadamente 35L) foi submetido à pasteurização (65 ºC por 30 min), concentração sob vácuo (40% de sólidos totais) e secagem por atomização. Os lotes de leite de cabra em pó obtidos foram avaliados através de análises de composição (umidade, teores de proteína, gordura, lactose e cinzas), dispersibilidade, cor, atividade de água, índice de peróxidos, atividades proteolítica e lipolítica e análise sensorial por uma equipe de provadores treinados. Foram observados efeitos (P < 0,05) do período de armazenamento do leite in natura e/ou do leite em pó, ou mesmo interação destes efeitos sobre determinadas características durante o armazenamento do leite em pó, como: aumento linear das populações de micro-organismos mesófilos, psicrotróficos lipolíticos e psicrotróficos proteolíticos do leite in natura, aumento da intensidade da cor branca (L*) do leite em pó, da atividade lipolítica e da oxidação do leite em pó. Também foram observados efeitos (P < 0,05) em características sensoriais como: redução da coloração amarela do pó de do leite reconstituído, aumento do odor cáprico e dos sabores rançoso e amargo do leite reconstituído. Considerando-se a avaliação global das variáveis estudadas, recomenda-se que o período de armazenamento a 4 oC do leite de cabra in natura não ultrapasse 3 dias, para que ocorra a preservação da qualidade do leite de cabra em pó por até 180 dias. / This study evaluated the effects of different storage periods of raw goat milk on the quality of the powder product. Alterations in microbiological and physical-chemical properties of raw milk and their influence on the microbiological, physical, biochemical and sensory characteristics of milk powder during storage for 0, 60, 120 and 180 days were evaluated. There were 3 identical tests in which about 105 L of recently milked goat milk were divided into 3 parts and stored at controlled temperature of 4 ºC for up 5 days. On days 1, 3 and 5 after storage, an aliquot (500 mL) of raw milk was collected to perform microbiological, physico-chemical and biochemical analysis. The remaining fraction (about 35 L) was subjected to pasteurization (65 ºC for 30 min), vacuum concentration (40% of total solids) and spray drying. The powders produced were evaluated through analysis of composition (moisture, protein, fat, lactose and ash), dispersibility, color, water activity, granulometry, peroxide value, proteolytic and lipolytic activities and sensory analysis by a selected team of panelists. Effects of storage of raw milk or/and powdered milk or their interaction were observed (P <0.05) on certain characteristics during storage of milk powder, as the increasing of mesophilic, lipolytic psychrotrophic and proteolytic psychrotrophic microorganisms populations in raw milk, increasing of the white color (L*), the lipolytic activity and the peroxide value of milk powder. There were also observed effects (P < 0.05) on sensory characteristics such as decreasing of yellow color of milk powder and reconstituted milk, increasing of capric smell, rancid and bitter flavour of reconstituted milk. Considering the overall evaluation of studied variables, it\'s recommended that the raw goat milk storage at 4 oC does not exceed 3 days to preserve the quality of goat milk powder until 180 days.

Joinpoint regression analysis of the COVID-19 epidemic curve in Sweden : A descriptive trend analysis of the different regions in Sweden

Since the beginning of the global outbreak, the Swedish Public Health Agency has been closely monitoring the situation regarding COVID-19. Understanding and mapping the behaviour of the COVID-19 epidemic curve in Sweden is of great interest and conducting a descriptive analysis may yield additional important insights. This thesis focused on determining when a potential trend changes occurred by studying time series over the trend development of the COVID-19 incidence rates provided by the Swedish Public Health Agency. Joinpoint regression with grid search were used to analyse each individual region as well as the nation. Results from respective analyses were used to compare if a region notably differed from the national trend in regard to location and trend. The findings indicated that there are more potential changes in trends in the data than identified and that several regions appeared to differ from the nation, implying that more research is required.

Utilizing Multiple Data Sources In The Preparation Of A Vision Zero Plan For The City Of Alexandria: Investigating The Relationship Between Transportation Infrastructure, Socio- Economic Characteristics, And Crash Outcomes In The City

“Vision Zero,” first adopted by Sweden in 1997, is a road safety policy that aims to achieve a transportation system having zero fatalities or serious injuries for all modes of transportation. It takes a proactive approach to road safety system by identifying risk and taking steps to prevent injuries. Historically, traffic related crashes have disproportionately impacted vulnerable communities and system users including people of color, low income individuals, seniors, children, and pedestrians, bicyclists, and transit users (who typically walk to and from public transport). These inequities are addressed in the Vision Zero framework by prioritizing interventions in areas that need safety improvements the most. In 2016, the Alexandria City Council voted unanimously to develop a “Vision Zero” policy and program as a part of its updated transportation master plan. It required an initial equity analysis to assess the impact of traffic crashes on the traditionally underserved communities / groups (groups from at least one of these categories: low-income; minority; elderly; children; limited English proficiency; persons with disabilities; and/or pedestrians/ bicyclists/ transit users). This study combines three different methods to investigate the equity issues regarding traffic safety: 1) descriptive analysis of the spatial pattern of crashes and their relationship with the demographic profiles of neighborhoods at census block group level (for 2010-2014 period); 2) descriptive analysis of the crash trends in Alexandria; and 3) exploratory regression analyses for two different units of analysis (an aggregate regression analysis of crashes at census block group, and a disaggregate regression analysis of the individual level crash reports of traffic crashes). The analysis found that the elderly, school aged children, rail/subway users, and pedestrians had a higher risk of fatalities and severe injuries in traffic crashes. Higher job densities, alcohol impairment, and speeding were significantly related to higher KSI, whereas, smaller block sizes (higher number of street segments per sq. mile area of census block group), higher housing density, and use of safety equipment were related to lower KSI. / Master of Urban and Regional Planning

Inverkan av delmaterialensvariationer på betongensegenskaper / Effect of variations in the constituents on the properties of concrete

Vid betongframställning förekommer det spridningar i delmaterialens egenskaper som påverkar den färskaoch hårdnande betongen. Spridningarna i betongens delmaterial har studerats hos tre av Skanskas betongfabriker(Göteborg, Luleå och Norrköping), genom provuttag som analyserats hos Cementa Research.Provuttag har gjorts en gång per månad under ett års tid från fabrikerna. Delmaterialen som har analyseratsär ballast, cement, flytmedel och kalkfiller (endast hos Göteborg och Norrköping). Siktning av ballast0-8 mm har utförts med den traditionella siktningen. För kornstorlekar mindre än 0,25 mm, cement samtkalkfiller har lasersiktning använts.För att få en överskådlig bild över spridningarna hos delmaterialen har en analys utförts som illusteraravvikelserna med exakta siffror. Analysen har visat att den traditionella siktingen har mindre spridningjämfört med lasersiktning. Dessutom visar analysen att sättmåttet har större spridning jämfört med hållfastheten.För ballast 0-8 mm har minst spridning visats hos Luleå och störst hos Norrköping, däremot så har Luleåvisat störst spridning i ballast &lt; 0,25 mm, cement, kalkfiller flytmedel och hållfasthet samtidigt som Göteborgvisat minst spridning i dessa och istället störst spridning i sättmått.För att få en överskådlig bild över vilka egenskapsförändringar som förväntas i betongen om respektivedelmaterial förändrats åt något håll har deskriptiv analys tillämpats parallellt med teoretisk analys. Dendeskriptiva analysen har avgränsats genom att undersöka hur förändringar i delmaterialen ballast, cement,kalkfiller och flytmedel påverkar sättmåttet och hållfastheten.Resultaten från den deskriptiva analysen har visat att en utökad mängd grövre ballast 0-8 mm ger upphovtill större sättmått och en utökad mängd finare ballast 0-8 mm ger högre hållfasthet för majoriteten avproverna. För ballast 0-8 mm &lt; 0,25 mm har analysen visat att finare ballast &lt; 0,25 mm ger upphov tillstörre sättmått. Hos Göteborg visar dessutom majoriteten av proverna högre hållfasthet för finare ballast&lt; 0,25 mm.Prover från Göteborg har visat att grövre kalkfiller ger högre hållfasthet. Hos Norrköping visar dessutommajoriteten av proverna större sättmått för finare kalkfiller och högre hållfasthet för grövre kalkfiller.För cementet har analysen visat att majoriteten av proverna hos Luleå har gett upphov till större sättmåttför finare cement och högre hållfasthet för grövre cement. Hos Norrköping har analysen visat sammagällande hållfasthet, däremot tvärtom för sättmåttet, d.v.s. grövre cement har gett upphov till större sättmått.För flytmedel har majoriteten av proverna hos Luleå visat att högre torrhalt gett upphov till större sättmåttoch lägre torrhalt resulterat till högre hållfasthet. / During concrete production, property variations of the constituents occur that affect the fresh and hardenedconcrete. The variation in the constituents has been studied at three of Skanska’s concrete plants(Gothenburg, Luleå and Norrköping) through the samples analyzed at Cementa Research. Sampling atthese factories took place once per month over a one year period. The constituents that have been analyzedare aggregates, cement, superplasticizers and limestone filler (only in Gothenburg and Norrköping).Sieving of aggregates 0-8 mm has been conducted with traditional sieving. For grain sizes smaller than0.25 mm, cement and limestone filler laser sieving has been used.To get a clear picture of the variations in the constituents an analysis was performed that illustrated theexact figures of the discrepancies. Analyses show that the traditional sieving has less variation compared tolaser sighting. Moreover, the analysis shows that the slump has larger variations than the compressivestrength.Luleå showed the least variation for aggregates 0-8 mm while the largest variation was apparent at Norrkoping.However, Luleå has shown the largest variation in aggregates &lt; 0.25 mm, cement, limestone filler,superplasticizers and compressive strength. Gothenburg on the other hand showed least variationamongst these while showing the largest variation in the slump.To better understand the property changes that are expected in the concrete of the respective the constituentsin either direction, both descriptive and theoretical analysis are applied simultaneously. The descriptiveanalysis has been limited to explore how changes in aggregates, cement, limestone fillers andsuperplasticizers affect the slump and compressive strength.The results of the descriptive analysis has shown that an increased amount of coarse aggregates 0-8 mmgives rise to larger slump and an increased amount of finer aggregates 0-8 mm gives greater compressivestrength to the majority of the samples. For aggregates 0-8 mm &lt; 0.25 mm analysis has shown that fineraggregates &lt; 0.25 mm give rise to greater slump. Analysis in Gothenburg also shows that the majority ofthe samples have higher compressive strength for the finer aggregates &lt; 0.25 mm.Samples from Gothenburg have shown that coarser limestone filler provides higher compressive strength.Majority of the samples at Norrköping show greater slump for fine limestone filler and higher compressivestrength for coarse limestone filler.Analyses of cement have shown that the majority of the samples in Luleå have given rise to greater slumpfor finer cements and higher compressive strength for coarser cement. In Norrköping, the analysisdemonstrated the same compressive strength, however, to the contrary coarse cement has given rise togreater slump.Analysis of superplasticizers in Luleå show that the majority of the samples at higher dry content resultedin greater slump and at lower dry content resulted in higher compressive strength.

Pression sociale et participation électorale : lorsque l’on vote pour plaire aux autres

Problématique. Cette thèse examine comment la pression sociale — issue de la norme sociale que voter est un devoir civique — influence la décision d’aller voter ou non. La recherche sur la participation électorale est largement dominée par une vision de l’électeur comme étant un acteur individuel et rationnel. Ce faisant, trop peu d’attention a été portée spécifiquement au rôle du cercle social comme vecteur de pression sociale. De plus, une importante littérature en psychologie sociale démontre de la puissante influence des normes sociales et de la pression sociale qui s’en dégage sur les comportements. En science politique, les études expérimentales associées au projet Get-Out-The-Vote (GOTV) ont démontré l’effet causal de la pression sociale sur la participation électorale. Cependant, ces études ne nous aident pas à comprendre comment cette pression s’exerce dans la vie quotidienne, ni à en déterminer la fréquence, l’intensité, ou encore qui l’exerce et qui la subit. Quelques études observationnelles récentes traitent de certaines de ces questions et offrent de premiers éléments de réponse. Cette thèse s’inscrit dans cette littérature émergente, avec pour objectifs de mesurer, décrire et comprendre la pression sociale pour aller voter et son influence sur la participation électorale en dehors d’un contexte expérimental. Questions de recherche. Je cherche à répondre à quatre questions fondamentales sur la pression sociale pour aller voter : 1) Combien ? Quelle proportion de personnes rapportent de la pression sociale pour aller voter et combien de pression reçoivent-elles ? 2) Qui ? Qui émet la pression sociale pour aller voter et qui la subit ? 3) Comment ? Comment la pression sociale pour aller voter s’exerce-t-elle ? Par quel mécanisme influence-t-elle la décision de voter ou non ? 4) Quels effets ? Quel est l’effet de la pression sociale sur la participation électorale et comment est-ce que cet effet varie ? Méthodologie. La thèse se divise en trois chapitres empiriques sous forme d’articles scientifiques. Je présente dans le premier chapitre empirique un portrait descriptif et comparatif de la pression sociale à partir de données de 65 études électorales dans 11 pays, totalisant environ 287 000 répondants et plus de 872 000 mesures de pression sociale. Je me concentre dans les deux autres chapitres empiriques sur le rôle et l’influence des attentes de désapprobation de l’abstention sur la participation électorale. Je cherche dans le second chapitre empirique à comprendre les déterminants des attentes de désapprobation ainsi que l’intersection entre le devoir civique et la désapprobation. Pour ce faire, j’utilise les données d’un module de questions original administré dans l’Étude électorale autrichienne de 2019. Je m’intéresse dans le dernier article empirique au rôle de modération de la visibilité du comportement sur la désapprobation ; les gens devraient voter pour éviter la désapprobation des autres seulement s’ils pensent que les autres seront au courant de leur décision. Je mobilise pour ce chapitre les données d’un second module de questions original, administré cette fois dans l’Étude électorale canadienne de 2019. Résultats obtenus. Mes analyses confirment que la pression sociale pour aller voter est très présente dans la société. La pression sociale descriptive est plus fréquente que celle injonctive et ses effets sur la pression sociale sont plus stables. En fait, je trouve que la pression sociale injonctive influence la décision de voter dans la moitié des études. D’autre part, mes analyses montrent que la pression sociale est plus fréquente et plus forte lorsqu’elle provient de personnes plus proches dans notre réseau, comme la famille et le partenaire. Elle est également plus forte chez les personnes plus éduquées, plus riches, et plus âgées. Les personnes ayant un sens élevé du devoir civique rapportent également plus de pression sociale, mais ne semblent pas influencées par cette pression. Contrairement aux attentes théoriques, je ne trouve pas d’effet de modération de la visibilité du comportement sur l’influence de la désapprobation. Enfin, je trouve également que la pression sociale varie surtout sur le plan la mesure. Conclusions. Cette thèse confirme le rôle crucial de la pression sociale comme déterminant de la participation électorale. Elle contribue à notre compréhension générale des normes sociales, et de leur influence spécifique sur la participation. Ceci est important, car la participation électorale est l’un des piliers caractérisant un système démocratique en bonne santé. Mieux comprendre le mécanisme de pression sociale contribuera au développement d’outils de mobilisation efficaces, éthiques et non partisans pour pallier au déclin de la participation électorale au Canada et ailleurs dans le monde. Cette thèse a également des conséquences méthodologiques importantes pour la mesure de la pression sociale et avance de nouvelles théories pour comprendre la participation électorale et l’influence de la pression sociale. En somme, cette thèse pose de bases solides pour de futures recherches sur la pression sociale pour aller voter. / Background. This dissertation examines how social pressure — stemming from the social norm that voting is a civic duty — influences the decision to vote or not. Research on electoral participation is largely dominated by a view of the voter as an individual and a rational actor. Hence, too little attention has been paid specifically to the role of the social circle as a vector of social pressure. Moreover, a large body of literature in social psychology demonstrates the powerful influence of social norms and the social pressure they generate on behaviour. In political science, experimental studies associated with the Get-Out-The-Vote (GOTV) project have demonstrated the causal effect of social pressure on voter turnout. However, these studies do not help us to understand how social pressure is exerted in everyday life, to determine its frequency and intensity, or who exerts it and who receives it. Recent observational studies have sought to answer these questions and offer some initial answers. This thesis is part of this emerging literature, with the objectives of measuring, describing and understanding the social pressure to vote and its influence on electoral participation outside an experimental context. Research questions. I am seeking to answer four fundamental questions about the social pressure to vote: 1) How much? How many people report social pressure to vote, and how much pressure do they report? 2) Who? Who exerts social pressure to vote, and who experiences it? 3) How? How does the social pressure to vote mechanism work? How does it influence the decision to vote or not? 4) What effects? What are the effects of social pressure on voter turnout, and how do these effects vary? Methodology. The dissertation is divided into three empirical chapters in the form of scientific articles. In the first empirical chapter, I present a descriptive and comparative portrait of social pressure based on data from 65 electoral studies in 11 countries, totalling about 287,000 respondents and more than 872,000 measures of social pressure. In the other two empirical chapters, I focus on the role and influence of abstention disapproval expectations on electoral participation. In the second empirical chapter, I seek to understand the determinants of disapproval expectations and the intersection between civic duty and disapproval. To do so, I use data from an original question module administered in the 2019 Austrian Election Study. In the last empirical paper, I focus on the moderating role of behaviour visibility on disapproval; people should vote to avoid disapproval only if they believe that others will be aware of their decision to vote or not. For this chapter, I mobilize data from another original question module, this time administered in the 2019 Canadian Election Study. Results. My analyses confirm that social pressure to vote is quite prevalent in society. Descriptive social pressure is more frequent than injunctive pressure, and its effects on social pressure are more stable. In fact, I find that injunctive social pressure influences the decision to vote in about half the studies. My analyses also show that social pressure is more frequent and stronger from relationships in our social circle, such as family or the partner. Social pressure is stronger among people who are better educated, wealthier and older. Although people with a strong sense of civic duty also report more social pressure, they do not seem to be influenced by it. I find no moderating effect of behavioural visibility on the influence of disapproval contrary to theoretical expectations. At last, I also find that most of the variance in social pressure occurs at the measurement level. Conclusions. This dissertation confirms the crucial role of social pressure as a determinant of electoral participation. It contributes to our general understanding of social norms and their specific influence on voter turnout. This is important because electoral participation is one of the pillars of a healthy democratic system. A better understanding of the social pressure mechanism will help to develop effective, ethical and non-partisan mobilization tools to counter the decline in electoral participation in Canada and the world. This dissertation also has important methodological implications for measuring social pressure and suggests new theories for understanding voter turnout and the influences of social pressure. In sum, this thesis dissertation offers a solid foundation for future research on social pressure to vote.
