"Estimativa da ingestão de sulfitos por escolares pela análise qualitativa da dieta" / "Estimate of the ingestion of sulphites for students by the qualitative analysis of diet"

Os sulfitos, representados pelo SO2, fazem parte de um importante grupo de aditivos utilizados, há séculos, como conservantes em frutas secas, sucos de frutas, vinhos. No Brasil não existem dados sobre sua utilização pelas indústrias de alimentos e pesquisas sobre o seu consumo pela população. Assim, o objetivo desta pesquisa foi estimar a ingestão de sulfitos em dois grupos de alunos do ensino médio, respectivamente de escola particular e pública. Os dados foram coletados por meio de R24, que permitiu relacionar as fontes de sulfitos presentes na dieta. Para o cálculo do consumo deste aditivo foi utilizado o MPL, definido pela legislação brasileira para cada uma das fontes. Nenhum dos escolares ultrapassou a IDA de 0,70 mg SO2/kg pc/dia, com média de consumo de 0,07 mg SO2/kg pc/dia (p<0,001), sem diferença estatisticamente significante (p = 0,643) entre as escolas particular e pública. Os grandes consumidores (consumo de mais de 50% da IDA, ou seja, 0,35 mg SO2/kg pc/dia, até o limite 0,52 mg SO2/kg pc/dia) representaram 4,5% da amostra pesquisada e alcançaram estes níveis de ingestão devido ao consumo acima de 500 mL/dia de sucos industrializados e similares, e, na escola particular, por associar ao seu consumo bebidas alcoólicas, como cerveja e vinho. / The sulphites, represented for the SO2, are part of an important group of additives, have used for centuries as preservatives in dry fruits, fruit juices, wines. In Brazil there are no data on use of sulphites by the food industry and research on their consumption by population. Thus, the objective of this research was to estimate the ingestion of sulphites in two groups of high school students, one of privative school and another of public school. The data were collected through 24-hour dietary recall, that allowed to relate the sources of sulphites in the diet. For calculation of the consumption of this additive the MPL, stabilished by the Brazilian legislation was used for each sources. None of students exceeded the ADI of 0.70 mg SO2/kg bw/day, with average of consumption of 0.07 mg SO2/kg bw/day (p < 0.001), without statistical difference (p = 0.643) between privative and public school. Heavy consumers (consumption of more than 50% of the ADI, or either, 0.35 mg SO2/kg bw/day, until 0.52 mg SO2/kg bw/dia) represented 4.5% of the searched sample and reached these levels of ingestion due to the consumption above 500 mL/day of fruit industrialized juices, and, in privative school, for associating with its consumption alcoholic beverages, as beer and wine.

本論文以台灣戰後五十年來中國時報上與飲食活動相關的廣告,從廣告的觀點,去探索台灣社會變遷如何對民眾飲食習慣造成影響。   本研究採用歷史研究法,蒐集1950年至2000年在中國時報刊登所有飲食活動相關的廣告,整理歸納出台灣民眾飲食習慣的變化。並使用文獻分析法,分析影響台灣社會變遷之政治經濟文化等相關論述及官方統計資料、期刊論文。   研究結果發現,社會變遷使得台灣民眾飲食習慣從重視「吃的功能」走向「吃的價值」;經濟發展帶動飲食習慣由重「量」轉而重「質」的發展;戰後五十年受到外來文化的影響使得台灣飲食習慣走向西方化、速食化;女性角色轉變因而帶動更直效的飲食習慣;飲食產業也隨著飲食趨勢提供不同需求的商品及服務。 / In this paper is from an advertising point of view to explore how social changes in the fifty years after the war activities affected the diet habits of Taiwanese. This study uses Historical Research to collect all published in the China times from 1950 to 2000 the diet activity-related advertising. And use the Content Analysis to analysis of Taiwan social changes of the political, economic, cultural and other relevant official statistical data, and the journal articles. The research results showed the social change makes the diet habits of the Taiwanese from the emphasis on “food’s functional” to “food’s value”. Economic development led diet habits by attention “quantity “towards "quality". Outside culture influences to make Taiwan diet habits Western oriented and fast-food oriented. The changing role of women and thus bring more direct eating habits. The diet industries provide goods and services with different needs dietary trends.

Reducing meat consumption : a mixed methods study investigating attitudes of young adult omnivores

Background Meat is one of the most nourishing and highly consumed foods, but the controversy around theconsumption of meat products, and the negative effects around the consumption of meatproducts led to increased scholarly attention on the user willingness to alter their meatconsumption. In Sweden, a guideline by the Livsmedelsverket (The Swedish National Food Agency) in 2015 encouraged people to consume less red and processed meat. This was because 72 per cent of men and 42 per cent of women in Sweden have individual consumption levels that exceed the 500 grams per week of red and processed meats as recommended by the World Cancer Research Fund. Objective This planned mixed-methods study inquires about the attitudes of young adult omnivorestowards the reduction of meat intake, their expected liking of changing dietary habits, andmotivation towards the reduction of meat consumption in Sweden. Changing dietary habits inthe current context refers to the participant’s willingness to favour meat alternatives. Methods The current study is a convergent mixed method design using both a quantitative survey andqualitative interviews to collect primary data. Results and conclusion The participants from both the qualitative and quantitative study are broadly worried about thehealth problems associated with high meat consumption and motivation for reducing meatconsumption was based on health as well as ethical issues. Being opposed to reducing meatconsumption is a common position for young adult omnivores. / Bakgrund Kött är ett av de mest näringsrika och mest konsumerade livsmedlena. Med anledning av attman funnit negativa effekter av en hög konsumtion av kött har man vetenskapligt alltmer börjatintressera sig för konsumentens vilja att ändra sin köttkonsumtion.I Sverige uppmanade Livsmedelsverket Sveriges befolkning att konsumera mindre rött kött ochbearbetade köttprodukter. Bakgrunden till detta var att 72 % av männen och 42 % av kvinnornai Sverige har individuella konsumtionsnivåer som överstiger 500 gram av rött kött ochbearbetade köttprodukter per vecka, vilket är en maxrekommendation från Världscancerforskningsfonden. Mål Denna bland metodstudie undersöker attityden för att minska köttkonsumtionen hos unga vuxna allätare i Sverige, deras förväntade åsikter kring förändrade kostvanor samt deras motivation att minska sin köttkonsumtion Metoder I den aktuella studien ingår en metoddesign som innefattar både en kvantitativ undersökning och kvalitativa intervjuer för att samla in primära data. Resultat och slutsats Deltagarna från både den kvalitativa och den kvantitativa undersökningen är i stort sett överensstämmande och visar att försökspersonerna är oroliga för de hälsoproblem som är förknippade med hög köttkonsumtion och deras motivation för att minska köttkonsumtionen baserades på frågor kring hälsa och etik. Det var vanligt förekommande bland försökspersonerna att vara bunden till köttkonsumtion.
