Dietary diversity and food access of deep-rural households of Idutywa, Eastern Cape

The objective of this research is to investigate the food security, food diversity and coping strategies used to access food in households in the Eastern Cape rural village of Timane in Idutywa, Eastern Cape, South Africa. A cross-sectional survey design was used in which a Coping Strategy Index questionnaire designed by Maxwell and Caldwell (2008) and a HDD questionnaire was used to gather data interviewing respondents. This study was conducted in the rural community of Timane which was divided into geographical groups from which household were randomly chosen. A total of 60 adults representing 60 selected households were interviewed to provide information on household dietary diversity. Data was collected on the socio-biographic and HHD parameters of households. Data was analyzed and presented as correlation, percentages, means and SDs. Up to 72% of household received state grants and the Spearman’s correlation between number of children and HDD score was r = 0.38 while that between number of adults in households and HDD score was r = -0.93. Food security in the Timane community largely depends on state grants and HDD increases moderately with the increase in children and decreases with the increase in adults per household. The majority of the households (72%) received state grants as a source of income within which old-age pensions constitute 28% and child grants 38%. The Spearman’s correlation coefficient between the number of children in households of respondents and CSI was 0.78 (P < 001) while that between the number of adults in households and CSIS was 0.2 (P < 001). The last eighty years have seen some dramatic changes occurring in the business community, particularly in the area of management leadership. Most significant in this regard is the increased emphasis upon human relations in management. The purpose of this paper is to examine the effects that this trend has had on methods of management currently practiced. This is done by means of a survey of supervisors and subordinates conducted in the Dallas metroplex area. The results of this survey suggest that a good supervisor is neither authoritarian nor permissive per se, but rather he is one who recognizes and responds to the variables which determine whether the human relations management approach or the more rigid scientific approach will best suit his particular leadership situation.

Impact of a training programme on food preparation knowledge and skills of food service workers at Sharpeville care of the aged

One need only read the national weekend papers and see all the ETD vacancies advertised to realise that ETD issues are being given increased coverage in this country. The reason for this increased focus on ETD is the need for skilled workers in organisations. Reports on our competitiveness in the world have consistently identified the lack of people development as a major stumbling block for the South African economy in competing in the global market. Objectives: The main objective of this study was to measure the impact of a training programme for the food service workers providing meals to 300 elderly people attending the Sharpeville Care of the Aged centre, in terms of a skills development programme, in order to contribute to increased productivity and provide nutritious meals to the elderly. Methods: A baseline survey was undertaken to determine the nutritional status, food consumption patterns and nutrient intake in a random sample of 300 elderly people attending the care centre five days a week. Socio-demographic and health questionnaires, as well as 24-hour recall questionnaires were completed with the assistance of trained fieldworkers. Anthropometric measurements included weight, height, and Mid-Upper Arm Circumference. Furthermore, the existing menus served to the elderly were theoretically analysed using FoodFinder® version 3 program to determine the energy, carbohydrate, protein and fat content. A developed and tested questionnaire was used to gather information from ten volunteer food service workers at the care centre to determine the training needs. The results of the baseline survey, the menu analysis and training needs assessment were used to develop a training programme that was implemented for a period of ten weeks. Learning was measured after the training programme by administering the same knowledge questionnaire, as well as by a portfolio of evidence and practical assessment. Data analyses: Data for the baseline survey was captured on an Excel spreadsheet. Data analysis was done using the Statistical package for Social Sciences (SPSS) for Windows version 10.0 program for all variables except dietary intake data. Dietary intake and food consumption data were analysed by a registered dietician using the FoodFinder® version 3 program, developed by the Medical Research Council (MRC). Daily nutrient intakes were reported as means and standard deviations and compared to RDAs. Paired t tests were done to determine correlations between knowledge of the food service workers before and after the implementation of the training programme. Results: The results indicated that the majority of the elderly had an income of between R500 and R1 000 per month and most of them reported an occasional lack of funds to meet basic household needs, confirming the presence of food insecurity. Daily dietary intakes (mean ±Standard Deviation [SD] were 5 041,2 ± 2 299,6 kilojoules (kJ) energy, 50,4 ± 28,2 gram (g) protein, 38,9 ± 28,2 g fat and 149,0 ± 76,6 g carbohydrates. The majority (29.5%) were overweight (body mass index [BMI] ~25) or obese (BMI ~30) whilst 33.5% had a mid-upper arm circumference (MUAC) of ~21.7 centimetres (em). Mean intakes of micronutrients were low in comparison with the reference standards. The volunteer food service workers were literate as the majority had higher than grade 10-12 training and 80% had previously received on-the-job training. The training programme was successfully implemented and the knowledge of the voluntary food service workers improved after the training programme was implemented. However, because of the small sample size no significance could be determined. Conclusions: The findings of this study confirmed that poverty, malnutrition, both under- and over-nutrition, as well as household food insecurity and poor health were the major problems observed in this elderly community. These findings correspond to other studies, however limited, conducted amongst the elderly in South Africa. The results indicated that, although the food service workers were literate and had received prior training, they still had a poor knowledge of appropriate food preparation method and practices, as well as nutrition, especially related to the elderly. On completion of the training programme, the knowledge of the food service workers improved. This study emphasises the importance of continued on-the-job training Recommendations: The recommendations of further research include: 1) A more detailed study to evaluate the influence of the training programme not only on knowledge and skills, but also on behaviour and attitude. 2) Periodically measuring such influence over a year to measure knowledge retention. 3) Implementation of a NEP for the elderly and its impact on nutrition knowledge and dietary intake behaviour tested. / National Research Foundation (NRF

Introdução. A hipertensão arterial é um importante problema de saúde pública e está diretamente associada à ingestão de sódio. As fontes de sódio na alimentação são diversas, como alimentos processados, sal adicionado durante o preparo das receitas, acrescido à mesa ou inerente aos alimentos. Em todo o mundo ocorrem iniciativas para reduzir o consumo de sal, e estas envolvem estratégias como a reformulação de produtos pela indústria de alimentos e também a elaboração de guias para os serviços de alimentação. Objetivo. Avaliar a contribuição de sódio das preparações para uma refeição e a percepção sensorial dos comensais em relação à quantidade de sal e aceitação de preparações em uma Unidade de Alimentação e Nutrição. Metodologia. Foram selecionadas 10 receitas representativas do padrão de cardápio de uma Unidade de Alimentação e Nutrição que são preparadas com frequência. Estas receitas tiveram seu preparo acompanhado para a elaboração de fichas técnicas e a quantidade de sódio foi calculada de maneira indireta, através de tabelas de composição de alimentos. Após a padronização das receitas estas foram servidas e avaliadas pelos comensais quanto à quantidade de sal na preparação e sua aceitação, por meio de uma escala mista e hedônica, respectivamente. Resultados. O cálculo da quantidade de sódio das preparações demostrou que uma refeição completa, composta por alguns dos pratos analisados, pode oferecer ate 3.287 mg de sódio, superando em 3,4 vezes a recomendação do PAT para grandes refeições e em 64% a recomendação da OMS para o consumo diário de sódio. Foram aplicados 1616 questionários válidos para identificar a percepção da quantidade de sal e aceitação de preparações. Em uma escala de 0 a 6 pontos, todas as preparações foram consideradas pelos avaliadores com quantidade moderada de sal e com aceitação superior a 4 pontos. Não apresentaram correlação entre a percepção do sal e a sua aceitação. Conclusão. Todas as preparações apresentaram grande quantidade de sódio que excede as recomendações. A quantidade de sal das preparações, para esse grupo, não está em excesso e dentro do padrão de aceitação. É importante que a unidade reavalie suas receitas a fim de diminuir a quantidade de sal utilizada e de ingredientes fonte de sódio. / Introduction. Hypertension is a major public health problem and is directly related to sodium intake. Sodium in food sources are diverse, such as processed foods, salt added during preparation of recipes, added to the table or inherent to food. Worldwide occur initiatives to reduce salt intake, and these involve strategies such as product reformulation by the food industry and also the preparation of guides to food services. Objective. Assess the collaboration of sodium in a meal and evaluate the sensory perception of the diners about the amount of salt and acceptance of preparations in a food service. Methodology. We selected 10 representative recipes of a standard menu of a food service that are prepared regularly. These recipes had their preparation followed for the preparation of technical files and the amount of sodium was calculated indirectly, through food composition tables. After the standardization of the recipes, they were served and evaluated by the consumers as the amount of salt in the preparation and their acceptance by a mixed and hedonic scale, respectively. Results. The calculation of the amount of sodium of the preparations demonstrated that a full meal composed of some of the dishes analyzed, can provide up to 3,287 mg of sodium, exceeding by 3.4 times the recommendation of the PAT for large meals and 64% the recommendation of OMS for daily sodium intake. 1616 valid questionnaires were applied to identify the perception of the amount of salt and acceptance preparations. On a scale of 0 to 6 points, all preparations were considered by evaluators with moderate amount of salt and with high acceptance of 4 points. No correlation between the perception of salt and its acceptance was presented. Conclusion. All preparations showed a great amount of sodium that unfeasible the consumption within the recommendations. The amount of salt added in the preparations for this group is not in excess and in the standard acceptance. It is important that the unit re-evaluate their recipes in order to reduce the amount of salt used and sodium source ingredients. Describers:

Avaliação de indicadores e identificação de estratégias de sucesso de segurança dos alimentos adotadas após à fusão de duas grandes empresas de serviço de alimentação

Na atualidade é cada vez mais comum o consumo de refeições fora de casa. No Brasil, além da opção dos restaurantes comerciais, em escolas, universidades e mesmo em hospitais, é muito comum a presença de serviços de alimentação dentro das empresas onde os funcionários realizam as refeições, durante o seu turno de trabalho. Em paralelo, a incidência de surtos de Doenças Transmitidas por Alimentos (DTA) ainda é uma realidade no Brasil e no mundo. Esses fatos têm intensificado a necessidade de implementação dos sistemas de gestão da segurança dos alimentos (SGSA) e seus controles no ramo de serviços de alimentação. Em meio a esse contexto, o presente estudo avaliou as estratégias de gestão da segurança dos alimentos adotadas após a fusão de duas grandes empresas do ramo de restaurantes industriais no Brasil, cada uma com mais de 30 anos desde a fundação, cuja união deu origem a uma empresa de aproximadamente 39 mil colaboradores e uma receita combinada de R$ 2 bilhões, servindo em média 1,8 milhões de refeições diariamente. Para isso, nesse estudo foram analisados crítica e estatisticamente os indicadores de gestão de segurança dos alimentos (taxa de ocorrências alimentares, auditorias internas e capacitações) dos 1 440 restaurantes distribuídos no Brasil, considerando um total de 4 488 dados ao longo de seis anos (2010 a 2015), contemplando o período anterior e posterior à fusão, e implantação do novo sistema de gestão. A análise qualitativa das práticas de gestão de segurança dos alimentos adotadas foi realizada através da Análise SWOT (strengths, weaknesses, opportunities, threats), que possibilitou identificar a base da escolha da nova estratégia de gestão de segurança dos alimentos adotada após a fusão. A análise estatística dos indicadores possibilitou identificar as oportunidades de melhoria, assim como as estratégias de sucesso na implantação do SGSA. Os resultados demonstraram uma correlação linear entre a conformidade dos itens críticos (IC) e técnica operacional (TO) da auditoria interna, com o menor número de ocorrências alimentares em unidades que apresentaram 100% de conformidade em IC. Ainda, restaurantes com um histórico de auditorias internas apresentaram melhores resultados, principalmente quando foram avaliados a cada quatro meses. Também foi observado que as unidades com líderes treinados apresentaram melhores resultados em auditoria interna para IC proporcionalmente à sua maior frequência de participação. Além disso, essas unidades também reportaram mais suspeitas de ocorrências alimentares do que as unidades cujos líderes não haviam recebido treinamento. Da mesma forma, as unidades com equipes operacionais treinadas no mínimo anualmente apresentaram melhores resultados de auditoria interna do que as não treinadas, sendo identificado que a frequência quadrimestral de treinamentos resultou nos melhores resultados de TO e IC. Esses resultados foram avaliados e discutidos, utilizando outros trabalhos de referência bibliográfica no tema, permitindo assim, a elaboração de uma proposta de modelo de SGSA para Serviços de Alimentação. / Currently, eating out is becoming increasingly usual. In Brazil, in addition to the option of commercial restaurants, schools, universities and even hospitals, it is very common the presence of food services within companies where employees eat meals during their work shift. On the other hand, the incidence of outbreaks of Foodborne Diseases (FD) is still a reality in Brazil and in the world. These facts have intensified the need to implement food safety management systems (FSMS) and their controls in the food services sector. Considering this context, the present study evaluated the food safety management strategies adopted after the merger of two large industrial restaurant companies in Brazil, each with more than 30 years since their foundation, whose union gave rise to a company of approximately 39 thousand employees and a combined revenue of R$ 2 billion, serving on average 1.8 million meals daily. Therefore, in this study, the indicators of food safety management (food event rate, internal audits and training) of the 1 440 restaurants distributed in Brazil were analyzed critically and statistically, considering a total data of 4 488 over six years (2010 to 2015), before and after the merger, and implementation of a new management system. The qualitative analysis of food safety management practices was carried out through the SWOT (strengths, weaknesses, opportunities, threats) analysis, which enabled to identify the basis for choosing the new food safety management strategy adopted after the merger. Statistical analysis of the indicators allowed the identification of opportunities for improvement, as well as successful strategies in the implementation of the FSMS. The results showed a linear correlation between the compliance of critical items (CI) and operational technique (OT) of the internal audit, with the lowest number of food occurrences in units that presented 100% compliance with CI. Moreover, restaurants with a history of internal audits performed better, especially when they were evaluated every four months. It was also observed that the units with trained leaders presented better results in internal audit for CI in proportion to their higher frequency of participation. In addition, these units also reported more suspicion of food occurrences than units whose leaders had not received training. Likewise, the units with operational teams trained at least annually presented better internal audit results than the non-trained ones, and the quarterly frequency of training resulted in the best results of OT and CI. These results were evaluated and discussed, through other academic articles in the theme, allowing the elaboration of a proposal of the FSMS model for Food Services.

Elaboração e aplicação de uma ferramenta de avaliação de estruturas físicas, leiaute e materiais de construção utilizados em cozinhas industriais com impacto na segurança de alimentos

Este estudo teve como objetivo o desenvolvimento de uma ferramenta para avaliar estruturas físicas, leiaute e materiais de construção de cozinhas industriais. Na primeira etapa do trabalho, diversas legislações sanitárias e documentos técnicos foram avaliados, a fim de identificar itens pertinentes à construção da ferramenta. Com base nisso, foram elaboradas 196 perguntas, divididas em 24 itens, as quais compuseram a ferramenta de avaliação de estruturas (check-list). O check-list foi encaminhado para especialistas da área de segurança de alimentos, para que estes verificassem a adequação das perguntas e conferissem pesos para cada uma delas, conforme a possibilidade na contaminação e o impacto na segurança dos alimentos. O peso 1 (um) foi atribuído aos itens da estrutura física das cozinhas, que poderiam causar impacto na segurança de alimentos, porém que dificilmente resultariam em contaminação dos alimentos ou causariam surtos alimentares, como, por exemplo, as áreas externas, portas externas e fechamento automático de portas de sanitários. O peso 2 (dois) foi atribuído às perguntas sobre a estrutura física da cozinha que poderiam causar contaminação indireta nos alimentos, exemplos: portas internas ajustadas aos pisos e batentes, caixas de gordura e de esgoto compatíveis ao volume de resíduos, entre outros. O peso 4 (quatro) foi atribuído às questões sobre a estrutura física das cozinhas que poderiam causar contaminação direta aos alimentos, como, por exemplo, estrutura dos telhados e tetos, áreas de produção com fluxo linear, entre outras Após a revisão do check-list, foram retiradas as perguntas que não foram consideradas pertinentes ao setor de alimentação e então foi calculado um peso médio para cada pergunta, tendo como base os pesos atribuídos por cada avaliador. A versão final do check-list resultou em 23 itens, compostos por 126 perguntas. Na segunda etapa do trabalho, foi realizada a utilização prática do check-list com o objetivo de testar a aplicação da ferramenta de avaliação e identificar os problemas mais frequentes na construção civil de cozinhas industriais. Para tanto, as cozinhas industriais existentes na região metropolitana de Porto Alegre/RS (RMPA) foram consideradas e identificadas como o universo da pesquisa, possibilitando a visita a um número significativo de cozinhas industriais. O número de cozinhas identificado na RMPA foi de 248 unidades, das quais 52 foram visitadas. Para avaliar cada unidade visitada com relação à adequação sanitária de suas instalações, foi elaborado o Índice Sanitário de Edificações (ISE). O ISE é uma média harmônica ponderada dos itens aplicáveis, a qual leva em consideração os pesos conferidos a cada pergunta e se o item foi conforme ou não. As respostas do check-list foram analisadas no Microsoft Excel 2010 e a análise estatística foi realizada no programa IBM® SPSS® STATISTICS versão 18.0, adotando o nível de significância de 5% As principais não conformidades observadas foram infiltrações, goteiras, tubulações sem capacidade para vazão adequada, pias e sifões entupidos, pouca quantidade de ralos, caimento dos pisos, caixa de gordura, pouca luminosidade, ventilação e conforto térmico. Do total de unidades avaliadas, 1 (2%) apresentou índice de adequação excelente, 14 (27%) índice de adequação bom, 32 (61%) índice de adequação médio e 5 (10%) índice de adequação ruim. Além do índice de adequação ao check-list, foi calculado um índice de adequação aos itens requeridos por legislação. O volume de empresas que apresentaram índices entre os níveis de adequação excelente e bom aumentou quando comparado ao índice de adequação ao chek-list, passando para 4 (8%) com índice excelente, 27 (51%) com índice bom, 20 (39%) com índice médio e 1 (2%) com índice ruim. Os resultados indicam que as cozinhas industriais apresentaram inadequações em suas instalações, já que em sua maioria apresentaram índices medianos ou inferiores de adequação aos itens da legislação e ao ISE. Cozinhas com estas falhas nas instalações podem ter prejudicadas suas condições higiênico- sanitárias do processo, trazendo riscos potenciais para a produção de alimentos. Com a identificação dos problemas nas edificações e leiutes, pôde- se indicar soluções para contribuir na gestão de segurança dos alimentos em serviços de alimentação, prevenindo a contaminação de alimentos. / This study aimed to develop a tool to evaluate physical structures, layout and materials of industrial kitchens. In the first stage of the work, several sanitary legislations and technical documents were evaluated in order to identify items pertinent to the construction of the tool. Based on this, check-list tool were elaborated containing196 questions, divided into 24 items. The checklist was assessed to food safety experts to verify the appropriateness of the questions and to check weights for each one, depending on the possibility of contamination and impact on food safety. Weight 1 (one) was attributed to the items in the kitchen's physical structure, which could impact on food safety, but would hardly result in contamination of food or food outbreaks, such as external areas, external doors and automatic door closing of toilets. Weight 2 (two) was attributed to the questions about the physical structure of the kitchen that could cause indirect contamination in the food, some examples: internal doors adjusted to the floors and stops, fat and sewage boxes compatible with the volume of waste. Weight 4 (four) was attributed to questions about the physical structure of the kitchen that could cause direct contamination of food, such as the structure of roofs and ceilings, production areas with linear flow. After reviewing the checklist, the questions that were not considered pertinent to the food sector were removed, and then an average weight was calculated for each question, based on the weights assigned by each evaluator The final version of the checklist resulted in 23 items consisting of 126 questions. In the second stage of the work, the practical check-list was used, with the objective of testing the application of the evaluation tool and identifying the most frequent problems in the civil construction of industrial kitchens. To this end, the industrial kitchens in the metropolitan area of Porto Alegre / RS (RMPA) were considered and identified as the research universe, allowing the visit of a significant number of industrial kitchens. The number of kitchens identified in the RMPA was 248 units, of which 52 were visited. To evaluate each unit visited in relation to the sanitary adequacy of its facilities, the Sanitary Building Index (ISE) was elaborated. The ISE is a weighted harmonic mean of the applicable items, which takes into account the weights given to each question and whether or not the item was compliant. The checklist responses were analyzed in Microsoft Excel 2010 and statistical analyzes were performed using the IBM® SPSS® STATISTICS version 18.0 program, adopting the 5% significance level. The main nonconformities observed were infiltrations, gutters, pipes with no adequate flow capacity, clogged sinks and siphons, few drains, floor trim, grease box, low luminosity, ventilation and thermal comfort Of the total number of units evaluated, 1 (2%) presented an excellent suitability index, 14 (27%) were adequately matched, 32 (61%) were adequately matched, and 5 were considered adequately matched. In addition to the index of adequacy to the checklist, an index of adequacy to the items required by legislation was calculated. The volume of companies that presented excellent and good levels of adequacy increased when compared to the index of adequacy to the former chek-list, passing to 4 (8%) with excellent index, 27 (51%) with good index, 20 (39 %) with average index and 1 (2%) with poor index. The results indicate that the industrial kitchens presented inadequacies in their facilities, since in their majority they presented medium or inferior indexes of adequacy to the items of the legislation and the ISE. Kitchens with these facility failures may have impaired their hygienic-sanitary conditions of the process, bringing potential risks to food production. With the identification of problems in buildings and law, it was possible to indicate solutions to contribute to the management of food safety in food services, preventing the contamination of food.

Em meio a esse contexto, o presente estudo avaliou as estratégias de gestão da segurança dos alimentos adotadas após a fusão de duas grandes empresas do ramo de restaurantes industriais no Brasil, cada uma com mais de 30 anos desde a fundação, cuja união deu origem a uma empresa de aproximadamente 39 mil colaboradores e uma receita combinada de R$ 2 bilhões, servindo em média 1,8 milhões de refeições diariamente. Para isso, nesse estudo foram analisados crítica e estatisticamente os indicadores de gestão de segurança dos alimentos (taxa de ocorrências alimentares, auditorias internas e capacitações) dos 1 440 restaurantes distribuídos no Brasil, considerando um total de 4 488 dados ao longo de seis anos (2010 a 2015), contemplando o período anterior e posterior à fusão, e implantação do novo sistema de gestão. A análise qualitativa das práticas de gestão de segurança dos alimentos adotadas foi realizada através da Análise SWOT (strengths, weaknesses, opportunities, threats), que possibilitou identificar a base da escolha da nova estratégia de gestão de segurança dos alimentos adotada após a fusão. A análise estatística dos indicadores possibilitou identificar as oportunidades de melhoria, assim como as estratégias de sucesso na implantação do SGSA. Os resultados demonstraram uma correlação linear entre a conformidade dos itens críticos (IC) e técnica operacional (TO) da auditoria interna, com o menor número de ocorrências alimentares em unidades que apresentaram 100% de conformidade em IC. Ainda, restaurantes com um histórico de auditorias internas apresentaram melhores resultados, principalmente quando foram avaliados a cada quatro meses. Também foi observado que as unidades com líderes treinados apresentaram melhores resultados em auditoria interna para IC proporcionalmente à sua maior frequência de participação. Além disso, essas unidades também reportaram mais suspeitas de ocorrências alimentares do que as unidades cujos líderes não haviam recebido treinamento. Da mesma forma, as unidades com equipes operacionais treinadas no mínimo anualmente apresentaram melhores resultados de auditoria interna do que as não treinadas, sendo identificado que a frequência quadrimestral de treinamentos resultou nos melhores resultados de TO e IC. Esses resultados foram avaliados e discutidos, utilizando outros trabalhos de referência bibliográfica no tema, permitindo assim, a elaboração de uma proposta de modelo de SGSA para Serviços de Alimentação. / Currently, eating out is becoming increasingly usual. In Brazil, in addition to the option of commercial restaurants, schools, universities and even hospitals, it is very common the presence of food services within companies where employees eat meals during their work shift. On the other hand, the incidence of outbreaks of Foodborne Diseases (FD) is still a reality in Brazil and in the world. These facts have intensified the need to implement food safety management systems (FSMS) and their controls in the food services sector. Considering this context, the present study evaluated the food safety management strategies adopted after the merger of two large industrial restaurant companies in Brazil, each with more than 30 years since their foundation, whose union gave rise to a company of approximately 39 thousand employees and a combined revenue of R$ 2 billion, serving on average 1.8 million meals daily. Therefore, in this study, the indicators of food safety management (food event rate, internal audits and training) of the 1 440 restaurants distributed in Brazil were analyzed critically and statistically, considering a total data of 4 488 over six years (2010 to 2015), before and after the merger, and implementation of a new management system. The qualitative analysis of food safety management practices was carried out through the SWOT (strengths, weaknesses, opportunities, threats) analysis, which enabled to identify the basis for choosing the new food safety management strategy adopted after the merger. Statistical analysis of the indicators allowed the identification of opportunities for improvement, as well as successful strategies in the implementation of the FSMS. The results showed a linear correlation between the compliance of critical items (CI) and operational technique (OT) of the internal audit, with the lowest number of food occurrences in units that presented 100% compliance with CI. Moreover, restaurants with a history of internal audits performed better, especially when they were evaluated every four months. It was also observed that the units with trained leaders presented better results in internal audit for CI in proportion to their higher frequency of participation. In addition, these units also reported more suspicion of food occurrences than units whose leaders had not received training. Likewise, the units with operational teams trained at least annually presented better internal audit results than the non-trained ones, and the quarterly frequency of training resulted in the best results of OT and CI. These results were evaluated and discussed, through other academic articles in the theme, allowing the elaboration of a proposal of the FSMS model for Food Services.

Identifying expansive learning opportunities to foster a more sustainable food economy: a case study of Rhodes University dining halls

This is a one year half thesis. This research was conducted within the context of the food services sector of Higher Education Institution dining halls and in the midst of the rising global call for food resource management and food waste reduction. The main aim of this research therefore was to identify opportunities for learning and change for a more sustainable food economy, contributing to Education for Sustainable Production and Consumption, and by further implication, Education for Sustainable Development. To achieve this aim, I used Cultural Historical Activity Theory as theoretical and methodological framework; drawing on the second and the third generations of this theory. Implicated in the above research approach is the identification of expansive learning opportunities from the surfacing of ‘tensions’ and ‘contradictions’. In this case study of the Rhodes University Campus Food Services, such tensions and contradictions inhibiting a more sustainable food economy, involving food waste production were identified. To narrow the scope of the study, one dining hall formed the focus of the case, with a two phased research approach whereby one research question and three goals were developed for each phase. The former being the exploration phase and the latter being the initial stages of the expansive phase. Methods used in line with the methodological framework included ten individual interviews with food producers (staff members), nine focus group discussions with food consumers (students), observations of the dining hall activities which lasted for over a month and two ‘Change Laboratory Workshops’. Some of the findings of this research are that food wastage cannot be addressed and appropriately curtailed without an intensive consideration of all the stages of food economy. Multiple contradictions and sources of tensions embedded in the Food Services Sector constituted major causes of food waste. Additionally, the lack of substantial food waste related teaching and learning activities, the presence of disputed rules, institutional structure and traditional practices within the Food Services all exacerbated the tensions and contradictions. More so, prioritizing some of this identified contradictions and tensions hindering a more sustainable food economy and relegating some as unimportant or nonurgent is unproductive. Finally, the non-existence of facilitated deliberation, consultation, dialogue, collaboration between food producers and food consumers has been identified as an obstacle to learning and institutional change. Recommendations abound in re-orienting, re-educating, and re-informing the constituents of the food economy. Re-visiting and revising of rules and regulations guiding conduct of students and kitchen staff members in the RU dining halls, as well as revision of existing learning support materials and mediating tools in use is needed. Recognition and consideration of the concerns and interests of students and kitchen staff members are also needed. Finally, there is a need to continue to address the tensions and contradictions identified in this case study, to further the Expansive Learning Process if a more sustainable food economy at Rhodes University is to be established.
