Food choices of African Americans compared to other racial/ethnic U.S. populations using NHANES, 2003-2006, dietary survey data

Eating adequate amounts of fruits and vegetables, appropriate levels of dairy products, increasing whole grains, and switching to lean meat and fish all are associated with managing weight and reducing the risk of chronic diseases including cancer, diabetes, hypertension, and cardiovascular disease. Research has shown that food consumption rates vary across segments of the U.S. population depending on several socio-demographics including race/ethnicity, gender, and age. The purpose of this research was to examine consumption of various foods including fruits and vegetables, dairy products, selected types of grain and starchy vegetable foods, and meat and legume products based on race and ethnicity, age, and gender using 24-hour recall dietary data from survey years 2003-2006 of the National Health and Nutrition Examination Survey (NHANES) conducted by the Centers for Disease Control and the United States Department of Agriculture. The 2003-2006 NHANES 24-hour dietary recall data, known as What We Eat In America, were used for analysis of food consumption. Two non-consecutive days of 24-hour dietary recall and demographic information were analyzed to assess consumption patterns of participants who: 1) were at least two years of age, 2) had complete and satisfactory dietary recall data, and 3) were members of a selected racial/ethnic group. The sample size was 17, 885 males and females: 4,994 African Americans (non-Hispanic); 7,525 Whites (non- Hispanic); and 5,366 Hispanics (Mexican American and other Hispanics). Individual Foods Files (IFF), containing foods coded for each individual, were accessed via the NHANES website to use for the consumption comparison analysis. There were food files for each of the two recall days of each survey year, 2003-2004 and 2005-2006. These findings indicate that there are racial/ethnic, age, and gender differences in the consumption of various foods. Fruits, vegetables, and dairy products were only consumed by 70-80% of the sample populations. Only 18-42% of the respondents reported eating whole grain breads, legumes, nuts, and seeds. However, meat and meat product consumption was reported by more than 75% of the sample. African Americans consumed fewer fruits, vegetables, whole grains, and dairy products compared to Whites and Hispanics. African Americans had a tendency to consume culturally relevant items such as greens, sweet potatoes, grits, and chicken. Children consumed more French fries, frankfurters, peanut butter, macaroni and cheese, and hamburgers than adults. Consumption rates among males and females depended on race/ethnicity. However, within a racial/ethnic group, gender consumption differences were minimal. This research demonstrates that the types of foods eaten for all groups of food products vary by racial and ethnic population, and age or gender subgroups. African Americans' fruit and vegetable consumption trends are distinct in many cases. This research serves as a current baseline for future research exploring the relationship of dietary intake and race and ethnicity. Given that African Americans have higher incidences of chronic diseases, there is a need to continue to develop culturally sensitive dietary counseling and intervention programs. Furthermore, this study highlights areas of opportunities to expand research involving African Americans from a sensory, business and promotional perspective capitalizing on the diversity of food habits.

The impact of physical activity and resistant starch on gut fermentation

However, their combined effects on gut health are poorly understood. The purpose of this thesis was to investigate the combined effects of PA and RS via breath hydrogen production and blood glucose responses and directly learn about the research process. Methods: Twenty subjects with no reported symptoms of metabolic diseases participated in this thesis project. Subjects wore accelerometers to determine PA status, and were then stratified into two groups: less active or more active. Once enrolled and stratified into groups based on PA assessment, subjects came to the laboratory on two more occasions to eat a standardized energy dense test meal with a lemonade beverage. The beverage contained different doses (5 g or 25 g) of RS type 4. On each test day, breath hydrogen was collected at baseline through the sixth hour at hour intervals through the fourth hour. Between hours four and six, the breath samples were collected every 30 minutes. Blood glucose samples were collected at baseline before the meal and then 15, 30, 45, 60, 90, and 120 minutes after beginning to eat the meal. Results: The incremental areas under the curve for glucose were not different between PA groups or RS dose (p>0.05). The area under the curve values for breath hydrogen were not different (p>0.05) between groups or doses of PA and RS, respectively. Conclusion: These results indicate that acute assessments of gut fermentation in generally healthy participants, as assessed by postprandial breath hydrogen production, requires more than six hours of assessment to determine differences between treatments and levels of physical activity.

Effect of resistant starch type 4 on glycemia and insulin sensitivity in young adults

Haub / Objective: The objective was to compare the postprandial glycemic and insulinemic responses to nutrition bars containing either cross-linked RS type 4 (RS4[subscript]XL) or standard wheat starch in normoglycemic adults (n=13; age= 27±5 yr; BMI=25±3 kg/m²). Methods: Volunteers completed three trials during which they consumed a glucose beverage (GLU), a puffed wheat control bar (PWB), and a bar containing RS4[subscript]XL matched for available carbohydrate content. Serial blood samples were collected over two hours and glucose and insulin concentrations were determined and the incremental area under the curve (iAUC) was calculated. Results: The RS4[subscript]XL peak glucose and insulin concentrations were lower than the GLU and PWB (p<0.05). The iAUC for glucose and insulin were lower following ingestion of RS4[subscript]XL compared with the GLU and PWB trials. Conclusions: These data illustrate, for the first time, that directly substituting standard starch with RS4[subscript]XL, while matched for available carbohydrates, attenuated postprandial glucose and insulin levels in humans. It remains to be determined whether this response was due to the dietary fiber and/or resistant starch aspects of the RS4[subscript]XL bar. Parent and other adult practices to promote healthy eating and physical activity in children.

Dzewaltowski / Insufficient physical activity, excessive sedentary behavior and insufficient fruit and vegetable consumption may contribute to childhood obesity. Parents and other adults provide social and physical environments, and build children’s skills for these healthful behaviors. The purpose of this dissertation was to examine parent and adult practices that contribute to the prevention of obesity in children. Chapter one reviewed the literature examining the influence of parent and adult practices on the development of young children’s eating and activity self-regulation skills. Recently, studies have provided evidence that children who lack self-regulation skills are more likely to be overweight. However, there is a gap in the literature addressing practices necessary to foster young children’s self-regulation. Thus, a need exists to identify parent and adult practices that foster the development of children’s eating and activity self-regulation skills. Chapter two described the development, validity and reliability of a self-report measure of parenting practices that may foster children’s self-regulation skills. Parents of overweight/obese children use less parenting practices that foster self-reflection of screen time than parents of normal weight children. Chapter three described the development and evaluation of an intervention designed to develop children’s self-regulation skills to ask parents for healthful home environments. The 12-week intervention was delivered to children and their parents through training child care providers. Children’s self-regulation for asking for healthy foods and activities increased after intervention, as well as increases in child eating and physical activity behaviors. In addition to parents, other adults can impact children’s environments to increase energy expenditure. Chapter four examined the influence of adult leader participation compared to no leader participation among children participating in active games. Results showed no effect of leader participation on children’s physical activity. It may be that adult participation could not increase physical activity because the children were already exhibiting high levels of moderate-to-vigorous physical activity. This dissertation provides preliminary evidence that parent/adult practices play a key role in the development of healthy eating and physical activity in children. Future research is necessary to identify the most important parent/adult practices that can be targeted by interventions to provide healthful options and build children’s skills to promote healthful behavior to prevent obesity.

Omega-3 fatty acids and cognitive outcomes in soldiers deployed to combat areas.

Strategies to improve the psychological health and cognitive performance of those in the military are much needed. Recent advances in neuroscience suggest that omega-3 fatty acids may play an important role in the psychological well-being of those in the military. The purpose of this research was to explore the relationship between omega-3 status and psychological outcome variables among soldiers deploying to combat. Data collection was preceded by the development and reliability testing of a novel food frequency questionnaire (FFQ) designed to capture intake from contemporary sources of omega-3 fatty acids including functional foods and supplements. Based on the instrument assessment study (Chapter 2) conducted among university students (n = 165), this FFQ appears to be a comprehensive and reliable (n = 54, ρ = 0.86, p < 0.001) instrument for measuring docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) intakes in young adults. As described in Chapter 3, intake of EPA + DHA as estimated by the FFQ was positively correlated (r = 0.39, p < 0.001) with biomarker measurements of omega-3 status. Primary data were obtained from a volunteer sample of soldiers (n = 272) scheduled for deployment to Iraq. Preliminarily analyses revealed relationships between attention deficit hyperactivity disorder (ADHD) screening scores and psychological outcome variables (Chapter 4). Primary analyses (Chapter 5) indicated intake of EPA + DHA was not significantly correlated with mood, nor were omega-3 exposure variables correlated with cognitive performance based on the required p value (< 0.001) calculated using the Bonferroni correction for multiple tests. Among participants with EPA + DHA intakes at or below the median, omega-3 HUFA was related (p < 0.002) to happiness (β = -0.46), depression (β = 0.44), and fatigue (β = 0.43). Although exploratory in nature, the results of this study suggest a relationship between omega-3 fatty acids and mood. Given the current concerns regarding the psychological health of those in the military, additional research is warranted.

For these issues, it is very important to maintain this information in a database and generate reports accordingly. The aim of the project is to create a web interface for users to enter the program information regarding the various programs conducted by Family Nutrition Program. The various kinds of data include information about the budget for the program, information about the various collaborating agencies, various kinds of resources used, services provided, proposed equipment and travel funds etc. Users for this application are county agents who take the responsibility of conducting the program and managing their data. Creating a web interface provides a solution to facilitate the agents to manage their data more efficiently and to monitor their records on a day to day basis. It also aims for generating reports for Family Nutrition Program in order to keep a check over their advancements in the program. This project involves handling of various kinds of information such as FNP Proposals, Agent information, FNP Funds, Collaborating Agencies. Database maintenance is made simple thereby allowing the administrators to add as much as data possible and manage accordingly.

Linking cereal chemistry to nutrition: studies of wheat bran and resistant starch

Wheat bran and RS have different functional properties and may not have the same nutritional properties. This dissertation covers two areas of importance in cereal chemistry and human nutrition: wheat bran and RS. Wheat bran chemical and physical influence of nutritional components Wheat bran has become a hot topic due to positive nutritional correlations, and industrial /humanitarian needs for healthy ingredients. Evolving wheat bran into a demanded product would impact the industry in a positive way. The overall aim of this research was to understand chemical and structural composition, to provide avenues for wheat bran development as a healthy food ingredient. To achieve this goal, antioxidant properties in dry wheat milling fractions were examined, effects of wheat bran particle size on phytochemical extractability and properties were measured, and substrate fermentation was investigated. It was noted that mixed mill streams, such as mill feed, have antioxidant properties (0.78 mg FAE/g; 1.28 mg/g total antioxidant capacity; 75.21% DPPH inhibition; 278.97 [mu]mol FeSO[subscript]4/g) originating from the bran and germ fractions. Additionally, extraction of reduced particle size whole wheat bran increased measured values for several assays (185.96 [mu]g catechin/g; 36.6 [mu]g/g; 425 [mu]M TE), but did not increase volatile fatty acid production during in vitro rumen fermentation over unmilled bran. RS digestion, glycemic response and human fermentation In vitro action of enzymes on digestion of maize starches differing in amylose contents were studied. The objectives of this study were to investigate the exact role of [alpha]-amylase and amyloglucosidase in determining the digestibility of starch and to understand the mechanism of enzymatic actions on starch granules. Starch digestibility differed (30-60%) without combination of enzymes during in vitro assay. Further investigations utilized human glycemic response and fermentation with consumption of a type 3 RS without dietary fiber (AOAC method 991.43). Blood glucose response provided lower postprandial curves (glycemic index value of 21) and breath hydrogen curves displayed low incidences fermentation (40%) with consumption of the type 3 RS, due to the structure of starch and digestion by enzymatic action.

Analysis of refrigeration equipment in school nutrition programs in the USDA/FNS Southwest Region

Gould / Equipment to store foods at proper temperatures is critical to serving safe and nutritious meals in schools yet little is known about the amount or the adequacy of refrigerated storage in school nutrition programs. The purposes of this study were to identify the types and capacity of refrigeration equipment used in schools, determine the perceived adequacy of refrigerated storage capacity to meet new meal pattern requirements, and examine differences in adequacy and capacity. A modified Delphi technique, site observations, pilot study, and electronic survey were used for data collection. School nutrition directors in the USDA/FNS Southwest Region (N=2392) served as the population. Respondents provided an inventory of refrigeration equipment for one of the schools in their district and information about perceived adequacy of refrigerated storage, barriers to purchasing refrigeration equipment, resources used to develop specifications, and practices to compensate for inadequate refrigerated storage in their program. Data analysis included descriptive statistics, independent sample t-tests, regression, and ANOVA. Over a third of directors indicated that refrigerated equipment was inadequate to meet new meal pattern requirements. Directors with more experience rated adequacy higher than directors with less experience. Milk coolers (n=212, 88.3%) and walk-in freezers (n=180, 75.0%) were the types of refrigeration equipment found most often in schools. Walk-in freezers and refrigerators provided over 95% of refrigerated storage space. The mean average cubic feet of refrigerated storage per school was 1423±1152. School enrollment is a significant predictor of refrigerated storage capacity. Refrigerated storage is a concern for school nutrition directors who reported practices to compensate for inadequate storage including maintaining low inventory and decreasing the number of items purchased. School nutrition professionals may use the results of this study to implement practices to compensate for inadequate refrigerated storage. Results cannot be generalized due to the regional nature of the survey and low response rate and possible non-response bias.

Effects of duodenal amino acid infusion on small intestinal starch digestion in cattle

Titgemeyer / Previous data suggest that greater amounts of postruminal protein increase small intestinal starch digestion in cattle. Duodenally and ileally cannulated steers were used in 5 studies to measure responses in small intestinal starch digestion to amino acids (AA) or casein. Flows of starch to the ileum from the diet were small. Small intestinal starch digestibility was 34.0% when raw cornstarch was continuously infused into the duodenum. Infusion of casein linearly increased (P ≤ 0.05) small intestinal starch digestibility, and small intestinal starch digestion adapted to infusion of casein in 6 d. Ethanol-soluble starch and unpolymerized glucose flowing to the ileum increased linearly (P ≤ 0.05) with increasing infusion of casein. Plasma cholecystokinin was not affected by casein infusion, but circulating levels of glucose increased linearly (P ≤ 0.05). In another study, 5 steers were fed a low-starch diet and provided continuous duodenal infusion of raw cornstarch in combination with AA or casein in order to measure response of small intestinal starch digestion. Duodenal infusion of casein increased (P ≤ 0.05) small intestinal starch digestion. When a mixture of AA with a profile similar to casein (CASAA) was infused, small intestinal starch digestion was similar (P = 0.30) to casein infusion. Infusion of only non-essential AA tended to increase (P = 0.14) small intestinal starch digestion relative to control; however, infusion of essential AA alone did not affect (P = 0.84) small intestinal starch digestion. Additionally, infusion of casein or essential AA increased ileal flows of ethanol-soluble starch, but non-essential AA alone were not different than the negative control. Duodenal infusion of Glu increased (P ≤ 0.05) small intestinal starch digestion, whereas a mixture of Phe, Trp, and Met (PTM) did not. Neither Glu nor PTM increased ileal flow of ethanol-soluble starch, but Glu and PTM provided together tended (P = 0.07) to increase ileal flows of ethanol-soluble starch. Our data suggest that Glu alone can increase small intestinal starch digestion in cattle similar to casein, but increases in small intestinal starch digestion in response to Glu are not associated with an increase in ileal flows of ethanol-soluble starch.

Application of rumen-protected lysine to lower crude protein diets for lactating dairy cows

Brouk / The study objective was to evaluate the application of supplemental rumen-protected lysine (RP Lys) to maintain milk production when reducing the crude protein levels in a lactating dairy cow diet. Twelve lactating multiparous Holstein cows, averaging 129 DIM, 50.2 kg milk yield, 3.6% fat and 2.9% true protein were randomly assigned to one of four 3x3 Latin squares. Each 14-d period had 11 d for adaptation followed by 3 d of data collection. Cows were offered one of three experimental treatment rations formulated with CPM Dairy (v3.0); Positive control (PC) — formulated to meet all nutrient requirements; Test diet (Test) — negative control diet formulated to meet nutrient requirements, except deficient in metabolizable protein (MP) (approximately 200 g/d) and first limiting in metabolizable Lys (approximately 10 g/d); and Test+RPL — same basal diet as negative control + RP-Lys to provide 14.5 g/d of MP-Lys. For Test+RPL, 45g of RP-Lys (AminoShure-L®; Balchem Corp., New Hampton, NY, containing 23.4g Lys) was top-dressed on the TMR once daily. The PC diet resulted in lower dry matter intake (P = 0.03) as compared to either the Test or Test+RPL diet. PC, Test, and Test+RPL cows averaged 42.6, 42.9, 43.6 kg/d of milk and 27.3, 28.4, 28.8 kg/d of DMI, respectively. Crude protein intake for the PC, Test, and Test+RPL diets was 4.83, 4.67, and 4.74 kg/d respectively. MUN decreased (P < 0.01) for cows on Test and Test+RPL diets as compared to PC diet (12.5, 12.5 and 14.9 mg/dL, respectively). Milk yield, milk components, milk component yields, FCM, ECM, SCM and production efficiencies (milk, ECM, SCM and FCM) did not differ (P > 0.05) among treatments. A post-study CPM Dairy evaluation using final chemical composition analyses of the feedstuffs and average production data from the animals predicted that diets supported more than 47 kg of milk and Lys was not limiting. Cows on the study produced slightly less milk, however DMI was 5-8% more than predicted by initial formulations. Formulation accuracy of the MP and Lys deficient diet may have been improved if data had been available from an initial adjustment period measuring DMI, body weight, milk yield and milk composition. It is also possible that the bioavailability of the RP Lys was not as great as thought during the diet formulation process. However, given the fact that the post-trial CPM analysis did not indicate a deficiency of Lys, it is not very likely that this impacted the results of this trial.
